Best Container for Microwave Bread

I used one of these Anchor 2 cup microwave safe bowls to make the keto mug bread recipe in the microwave. You can even use a coffee mug if you have one that is deep enough.

The round shape is perfect for breakfast style sandwiches. If you prefer a square shape for grilled cheese and such, try using a square ramekin.

  1. Timothy says:

Thank you for sharing this 90 second bread recipe. I use to make this about 8 years ago, but I was doing something different and I’m not sure what it was because every time I made it the bread came out of the microwave about 2 1/2 ” thick. I remember using basically the same ingredients, but something is missing and I don’t remember what it was. I do remember using just (egg beaters ) egg whites in mine and I usually added shredded cheese to it. Yours is the closest I have found to what I use to make. So, Thank you again for putting this recipe online.

I really love making this bread. As a diabetic, it’s perfect for all meals and it helps to keep my blood sugar in check. I hope you have more recipes that can help me with my diabetes.

  3. Crystal Brown says:

I literally just made this. It is yummy and a great option for keto bread however, if thereโ€™s one thing I could change, I would use a lot less salt. Mine was very salty. And I did use unsalted butter. I think next time I will just add maybe half the salt and see how that goes. I made this in the microwave and then I toasted it and used it for a ham egg and cheese sandwich

  4. Cara says:

This was the first time I ever tried to make cloud bread and I used gluten-free Pillsbury flour and this was absolutely perfect. Thank you!!!

  5. Karen says:

This is awesome. The only change I would make next time is to use very minimal salt as I found they were way too salty. I highly recommend them. Thanks so much for the great flexible recipe.

  6. Carrie Barnard says:

I haven’t tested that yet so I’m not sure. If you try it out, please let me know how it turns out!

  7. Kimberly says:

Do you think that this would work with oat flour?

  8. Erin says:

I made this but wasn’t a big fan of the super eggy flavor/texture, but I put some keto-friendly maple syrup on it, some butter, and drizzled a little peanut butter over the top and it was really good.

Have made this with all kind of flour and it works. Bake it in the oven for golden brown. 15 minutes at 400 in convection oven. Great for sandwiches and a roll for dinner. Hubs gets fresh roll each day.

My diabetic spouse and my keto friends love these. Added cheese and bacon bits or just toast for peanut butter!

  22. Carrie Barnard says:

oh no! Try tapping the container on the countertop a few times to remove any air bubbles from the mixture before cooking it in the microwave.

  23. RJ says:

I was out of almond flour and used Bob’s Red Mill paleo flour instead. Outstanding recipe, thank you!

  24. Susan Newton says:

Just made this for breakfast. Last time I used a mug, this time a 4โ€ across dish. Next time Iโ€™ll use an even larger dish.
Very good; crumbly but tasty. I have only eaten it after toasting. It was a nice โ€œbreadโ€ to go with an egg.

  25. Catherine says:

Hi! This is a fabulous recipe. I make it multiple times a week. My favorite way to use it is to slice it thin and dry fry or toast it to make canopies. I have a small issue that I hope you can help with. I always have a misshapen loaf caused by bubbles. I have tried multiple strategies and always have bubbles. Any ideas how to fix this so my loaf is symmetrical?

  26. Carrie Barnard says:

I haven’t tested that yet but I think it would work great. Let me know if you try it out. Thanks!

  27. Carrie Barnard says:

Sorry but I haven’t tested this recipe in the oven yet so I’m not sure how long it would take. If you try it out, let me know how it works. Thanks!

  28. Gerri says:

I made some with egg replacement and the taste was good but they didnโ€™t puff up like when you cook it with a regular egg.
Iโ€™m so glad I found your recipe because I had been wanting bread and couldnโ€™t eat it. This really fill that gap!!Thank you so much.

I made the 90 second keto bread.
    This came out great!
Added chia seeds & chopped walnuts. Cut back on salt. Microwaved for 2 minutes (low watt micro)
Dipped in egg wash (egg, soy milk, cinnamon, nutmeg) for French toast.
    Pretty darn tasty!

Thank you! Iโ€™ll be making this often!

  33. FC Farwell says:

    5 stars
Itโ€™s very good. I thought no way, but it came out just right. Next time Iโ€™m going to try with oat flower.

  34. David B says:

    5 stars
I appreciate this recipe. I have been purchasing retail keto bread for the last couple of years. The place where I was buying this stopped carrying it, and I was uncertain what to do.
I tried a couple of substitutes and recipes, and this is the best so far. The other benefit is that it’s quick, and I don’t have to stock a bunch of bread in the refrigerator.
The resulting product is satisfying but a little too salty. I’m trying various amounts of salt, and I may eliminate it altogether.
    Thanks!

  35. Rosa Anchondo says:

    5 stars

  36. Lori says:

  37. Karyn says:

Iโ€™m allergic to almonds. Can I use hazelnut flour instead of almond flour?

  38. Douglas says:

I left out the salt except what the butter had as I find most of these to salty for my taste. Very good and easy to make. I am going to up the recipe and try for a mini loaf next.

  39. Alice says:

    5 stars
Absolutely delicious! Rightout of the microwave, this has the feel, texture ,and taste of a pop over almost. I had no problem with salt because I just didn’t add salt and used salted butter.

I’m on keto and had a craving for a tuna melt and this worked perfectly! Now I’m thinking of other ways I can use this delicious find. Maybe I’ll have a peanut butter sandwich for an afternoon snack ?

  40. Franc says:

That looks gooood ! I’m not a cook. But i eat healthy. Simple things. I don’t have a microwave. Any idea as to doing it in oven ? ( which i NEVER use ). I would make some kind of bread size. So i guess multiply the quantities by 7 or 8 ? But how long in oven, at what temperature ? Thanks,
    Bon appetit !

  41. Carrie Barnard says:

    I love that idea.

  42. Scott H says:

    5 stars
This is great. I am going to use these for hamburger Buns. Something I really miss on this Keto Diet.

  43. Bambi says:

    4 stars
Great texture. I wish I had read the comments prior to making as like everyone else, this is way too salty and I love salt! It was so salty that I struggled to finish it as I hate wasting food. Highly recommend not adding the salt or adding less. Next time I will omit the salt entirely. Great recipe otherwise.

  44. Carrie Barnard says:

    You can try baking it.

  45. Liz says:

Is there a way to make this without microwaving? I am not a fan of microwaving food.

  46. Carrie Barnard says:

No just a microwave safe bowl will work.

  47. Carrie Barnard says:

Yes you can freeze it. You can freeze it for up to 3 months. Or it will stay fresh up to 5 days in your refrigerator. Thank you

  48. Carrie Barnard says:

    Yes you can

  49. Trina says:

Can you toast this in a toaster after cutting in half?

    Thank you

  51. Enrico says:

I thought this recipe was easy and tasty, especially since you’re trying to not have bread, but I also tried something else everyone should know, I put a little butter on one and some real maple syrup And it tasted just like a pancake delicious So this is perfect if you have a little sweet tooth.

  52. Erica Lancaster says:

Works every time and easy to mix with like playing around with other protein flours or seed flours !!

  53. Megan says:

Does a glass bowl have to be used? I don’t have any and the closest thing I have to that size/ shape is a plastic bowl.

  54. Mary says:

Hey looking forward to trying 90 sec bread. It says it makes 2 servings. So just one half of the bread is represented in the nutrition section? Or is it for the full recipe?

  55. Anna says:

    5 stars
Love this! I omit the salt completely. I love salt, but with various spreads & cheeses, salt is just too much. I also subbed 1/2 T olive oil for the butter – and it works great : )

  56. Lori Varano says:

    5 stars
Love this. I added a Tbsp of flax seed,a tbsp of chia seeds and a tbsp of hemp heart to this and it i s great. Definitely helps when you are missing bread on keto

  57. Joan H says:

Accidentally used coconut flour (brand Elan). Made sure I nicely flattened it at the top and stopped it from puffing up in the middle while cooking in the microwave. Then I toasted it and it was one of best, easiest and closest to bread I tasted in all my keto years. Just added a pinch of salt. Even 1/8 of tea spoon in the almond flour recipe was too salty for me. Great recipe !

Easy and delicious. Tried it different ways but I prefer it as is and with unsalted butter. I sliced in thirds, toasted in the toaster and made a delicious bacon, avocado and tomato sandwich paired with a mug of soup. Fantastic!

  61. Joyce says:

I tried this recipe almost a year ago after “discovering” it here, and man, oh man, I have to say that I really, REALLY like it!!
I’m not fan of traditional breads for whatever reason–just don’t much enjoy yeast-raised products, I guess—but I sure do like this. I never make more than one because I don’t want to get tired of eating it/them, but if I do want more, it’s so easy to whip up another one. I especially like eating it split, toasted, and then one fried egg on top of each half. YUM!!

  62. Anna says:

    5 stars
    Amazing! Thank you!!!

  63. Donna says:

The best quick bread Iโ€™ve ever had I did go a little too far with the salt bc I make an egg and cheese breakfast!

  64. Ellen says:

    5 stars
Easy and tasty. We donโ€™t have a microwave so itโ€™s 10-minute bread for me. I use a โ€œmuffin topโ€ pan and divide the batter between 2.

  65. Karen says:

    5 stars
This was very tasty. I added 1/4 teaspoon of cinnamon and 2 teaspoons of allulose. I left out the salt. Fried the slices in a little butter and topped with keto maple syrup. Totally satisfied my French toast craving! I’m going to try a savory version of cheesy garlic bread. Thanks!

  66. Sandra says:

    5 stars
I just finished eating this as a sandwich. This was very yummy, no “eggy” taste at all. Only change I’ll have to make is not to use any additional salt.
What I did was nuke one egg ( poking the yolk first) & nuked that for 42 seconds in a slightly buttered dish the same size as the bowl for the bread.
I did have to nuke the bread for more than 90 seconds as the microwave is only 1,000 watts. The bread didn’t appear to be quite done was the other reason for adding to the cook time.
Thank You for posting this. It’s a winner. Can’t wait to try other foods with this. One of them will be a Keto “Sloppy Joe” mix.

  69. Kate says:

I love this recipe. Itโ€™s a daily breakfast staple. I eliminate the salt, add a tbsp of grated parmesan, and a couple tbsps of cream cheese and cook it about 10-12 seconds longer (I have a 1000 watt microwave). The cream cheese makes it a little smoother and I like the flavor of the additions. I often eat it with a little fresh spaghetti sauce, salsa or pico on top. Itโ€™s my favorite!

  70. Maureen says:

Trying to cut carbs so used this recipe to replace garlic toast. After cutting in half , I toasted with butter and garlic salt in an airfryer. I then added mozzarella cheese and put back in the airfryer to melt and brown the cheese. Will definitely be making this again

Really good recipe! ?? I omitted the salt because I hardly use it.
Question regarding the nutritional info on this. It says 2 servings and 142 calories. Is that for the whole piece or 142 cals for half? Thanks a bunch

Tasted like a pancake to us, but tasty. I apparently do not have the right size glass dish to make this in, yet we enjoyed it – did your suggestion to fry in skillet a tax with butter. Your photo looks like perfectly formed english muffins, no way did ours look this way. Iโ€™d suggest to most people to use a less salt!

Made this your way came out great. I used a frying pan as I do not have a toaster Then made one but added 1/4 tsp Dutch Trade Speculaas spice blend from Boston Spice and wow! Also tried adding some Little Italy Italian dry spice to the butter as I melted it to start the Italian flavors flowing and that one was great too. I used 1/4 tsp kosher salt instead of table salt. Table salt will be to salty in this recipe. Clearly a winning recipe. Thank you

  89. Wendy says:

    Hey!

Is the time to cook the same if you 3X the recipe? Thanks!

Made this awhile ago, came out great. However, way too salty. Will add a pinch the next time I make it.

  93. Jo Givin says:

This is a delicious alternative to bread. Very tasty toasted or used for a grilled cheese sandwich. I plan to use it for a breakfast sandwich with sausage and egg soon.

My question is how do you store this bread? Can it be frozen? Or is it just kept at room temperature in a container? This would be helpful to know if I would choose to make multiple pieces of bread at a time.

    For this amazing recipe!

This was my first keto bread attempt. I followed the other comments and reduced the salt by half and replaced the butter with ghee and it was perfect. Definitely a different texture but works great as a replacement for traditional bread. I toasted in a pan used it as a base for some scrambled eggs with spinach and goat cheese with a little guacamole and salsa on top. Delicious!

  106. Carrie Barnard says:

I do not have one, but it should work the same with regular flour.

  107. Joliene says:

Is there a recipe like this using just regular flour?

    Really good, dast and easy

It was a little too salty for me. Next time I will try 1/8 tsp & continue to reduce until I find the right amount for my taste.

I sliced & placed mine in the toaster. Ummm, so good & toasted perfectly!

Question: Would this be as once a day item on the KETO Menu? I’m now interested in learning the basics of a Keto lifestyle and need perspective. Thanks for sharing this recipe!

I was making this recipe for the first time today when I realized I didn’t have any baking powder, so I substituted apple cider vinegar and it turned out GREAT! Thank you for sharing this little gem.

Been eating Keto for only a couple of weeks, and for the most part I’m doing okay. Was getting tired of eggs for breakfast. Tried this recipe and am totally amazed. It toasted well and didn’t fall apart. Made a sandwich. Yummy. I miss bread. Can’t wait to try this for breakfast with peanut butter. cooked it in a round bowl and it came out like an English muffin. Loved it. Thank you.

  112. Jen S. says:

The bread is great! I did have to change the salt from 1/4 tsp to a pinch. Otherwise it was awesome and just the right texture for a breakfast sandwich or anything that calls for bread.

  113. Rosemaery says:

I love this recipe! It’s definitely a bit eggy. I made French toast with it the next time and it was like heaven. I’ll try grilled cheese next!

I love this recipe closest one to an English muffin that Iโ€™ve found. I add garlic salt or everything bagel seasoning to the mix.? when itโ€™s cooked I cut it in half, smash it flatter then brown each side . Today mine has one egg, sausage and a little mustard. Yummy.

  115. Aroha says:

Thankyou for sharing this recipe. This bread is super easy super quick and super yummy as is or fried. I sprinkled a bit of paprika on the top with a poached egg. Delicious! We are having bacon and vegetable soup tonight and we will be having this bread with it too. Yum!

This was great! Do not use salted butter

This was all I had on hand, but it will be too salty!

I topped mine with a poached egg and it was

    Delicious!

  117. Sharon D says:

Love it. Tried it this morning, simple, quick and before work fresh arvo and tomatoes sprinkled with thymeโ€ฆdelicious!

WOW.. I’m not even Keto.. just gave up wheat 4 yrs ago and came across this recipe on Pinterest.. OMG I LOVED THIS RECIPE! I had an egg sandwich for the first time in 4 yrs. First off I used less salt because of the reviews and I wish I used the amount suggested. This was soooo easy to make and frying it was perfect. I will definitely make this again when craving a sandwich of any kind; Heck I may even try it as a hamburger bun as well and add some garlic or onion powder to it. Thank you!!!

  119. Alesa says:

This is THE best treat! I also think it needs less salt, but this is exactly what I’ll enjoy with my herbal loose leaf tea. I’ll be following you on IG ? Wish I could share a photo!!

My 1st time it was dry, my fault, I left out the butter. I thought it was an option and since I was making garlic toast, I waited. After the butter had soaked in, it was great. I made it again this morning, much better and had it with cream cheese. I do only use a pinch of salt after reading other comments and I think it’s better that way. Thanks for the recipe!

  121. Helen says:

Oh my goodness! This was the first time I’ve enjoyed a 90 second bread!!! It was MAGIC!

  122. Sanette van der Merwe says:

Amazing, I’m going to eat this everyday, thank you.

  123. Denise tucker says:

I have made this several times and it was good but I wanted to make it and didnโ€™t have an egg, so I used flax seed as a egg substitute and it was great. I might start using it instead of an egg or when I run out from now on. This is the first time I have left a comment.

  124. Barbara says:

This is a keeper. I’ve had it toasted and untoasted. Toasted is way better. Will definitely make again.

  125. Carole says:

Lovely toasted with poached eggs on top.

  126. Toni says:

I’ve tried this bread several times now and it is good toasted with peanut butter or as a grilled cheese sandwich. I used regular salted butter and no additional salt and decreased the baking powder to 1/8 teaspoon. I’ve used both blanched and unblanched almond flour/meal. Even my husband (who does NOT jump onto diet bandwagons) rather grudgingly admits that it is really “quite good.”

  127. Gidget says:

The texture and taste came out great. If you are also low sodium, donโ€™t miss the not about decreasing the salt (like I did hahaha). Definitely a keeper. Great size for breakfast sandwich and toasts beautifully.

  128. Elizabeth Robertson says:

Best ever keto bread!!! Easy and very tasty! Thank you

  129. Jenn says:

Tried this for dinner tonight, found that we liked the texture, more like an English muffin, if you let the bowl sit for 90 seconds then nuke it, it will have little air pockets! Mmmm

  130. Tony says:

Great recipe…nutrition facts for one recipe or half(each slice). Thank you!

  131. Deb says:

I made this as is. Good texture but very salty. I will make again but reduce the salt and maybe add some stevia for breakfast or garlic powder for a dinner roll. The spread will be great for bacon egg and cheese sandwich, grilled cheese, there anything you choose an English muffin for.

  132. Deanne says:

This makes two perfect little chaffle/waffles! I liked it baked as a waffle better than cooking in the microwave! I’m thinking it would be great as a pancake mix! Yummy!
I also added a little Splenda and cinnamon and it’s delicious! No salt.

  133. Cynthia Ortiz says:

Thank you, thank you, thank you! This is the BEST Keto bread I’ve had. I’ve tried other 90-second breads and they were always very dry. This is nice and fluffy. I actually forgot it was Keto! Thank you again!

I rarely leave comments, but this one is worth commenting on. I had tried other recipes and the results were inedible cardboard box sponge slices. This recipe actually tastes like bread, and is not overpowered by egg like the others. Tastes a bit like a whole wheat grain bread with the almond flour. Excellent! Ps I toasted mine afterwards and would highly recommend.

  136. Gayle says:

Made it in a rectangle pan, cut in strips, dunked in eggs and milk. Made into french toast and topped with SF syrup and SF powdered sugar. Delicious!

This was so fast and easy, and delicious! I used the same pyrex bowl you did and it was the perfect size! Then I toasted it in a pan til golden and made a fried egg sandwich. I am going to prepackage the dry ingredients so I can just grab a pack and add the egg and butter. I’m finally going to have sandwiches again!

  139. Natalie Davy says:

This is such a great recipe, sending it to my daughter who was told to go on Keto diet for health and so wanted to forward this to her, thank you so much.

This is the BEST keto bread I have ever eaten! I made it in smaller containers (approximately the size of an English muffin). After microwaving, I sliced horizontally, topped with old cheddar and pan fried both sides. A perfect foundation for a delicious keto bacon and egg sandwich! The bread was actually DRY and appears โ€œtoastedโ€!!! Definitely a keeperโ€ฆ ? THANK YOU!!!

  141. Sandy F says:

All I can say is YUM. I added garlic powder and reduced the salt based on previous comments. I toasted it in a pan and It tasted like cornbread. I put some cheese on it and it was good!

  142. Valerie Caskanette says:

I always find this bread reminds me of French toast. So I added a tsp of monk fruit sweetener, 1/4 tsp cinnamon and after it was cooked I fried it in butter. Yep french toast y’all…Smothered in sugar free syrup and lots of raspberries…Mmmmmm! Delish

  144. Carrie Barnard says:

Sorry, I haven’t tested that yet so I’m not sure. I think that you would have to adjust the entire recipe as you can’t substitute coconut flour for almond flour 1:1 in recipes.

Yes I love toasting the bread

I found this recipe last night, and made it this morning. it is a keeper for sure, it was so good. made it as directed, split in half and toasted one side of each, then added shredded cheese in the middle, then toasted the other sides(as you would in making grilled cheese). so good, will be doing this again with many vaiations. thank you.

  148. Carrie Barnard says:

Sorry, this recipe is only for the microwave. I haven’t tested in an oven so I’m not sure on the cook time.

  149. Mimi says:

This was so easy to make and delish!! I toasted the bread and made open faced meatball sandwiches for dinner, my husband loved it. I added some onion powder and they tasted like an onion roll. I found a 4″ square glass covered dish and it was perfect. Looked like a real piece of bread. Thank you

So super easy and ingredients are super easy to get ahold of. I wanted to try this on a whim and it took no time at all. The texture and taste was surprisingly great. My picky husband could eat these without any issue (except for how salty they were, and a lot of salt doesn’t usually bother him). Only complaint is that they are SOOO SALTY. Will definitely be decreasing amount of salt in the future, but this will be my go to for quick keto bread.

  152. Anne Lemieux says:

Totally amazing! I’m very picky with textures. Reduced salt to 1/8 tsp, made as indicated. Toasted in pan with a little bit of unsalted butter. Had with ham, egg, and cheese. Delicious, can’t wait to try it with other toppings.

I did this exactly as stated – and it was WONDERFUL. I don’t like eggy taste or smell, and I almost thought I had failed as I smelled eggs when I opened the microwave. But the taste isn’t very eggy at all – in fact I couldn’t taste egg, my friend could barely taste it. WONDERFUL right out of the microwave with butter. I toasted mine in a toaster and it was still fluffy, but lovely and toasted where it was supposed to be. THANK YOU for this great recipe!

Tried this for lunch today and I’m impressed! Followed directions and ingredients exactly and wow! I used it as a ‘bun’ for my cheeseburger, it held up perfectly with my burger, with cheddar, 2 slices of tomato, a slice of sweet .onion, grainy mustard, pickle slices, and a leaf of lettuce!

This will keep me from craving bread for sure! Yum!

These are delicious! Only thing is that they were way too salty for me like a few others posted. That won’t stop me from giving this 5 stars since it’s overall great. I just wanted something quick and easy for my tuna egg salad and this was better than keto bread substitutes I’ve spent much more time on. I’ll definitely make this again with less salt and a little garlic powder for a savory bread.

This is great! I don’t add the salt but use salted butter instead. I made this with cinnamon (For breakfast) and another with garlic (for Bacon lettuce sandwich), both were outstanding! I am not a big fan of eggs, which has made keto difficult but this really doesn’t taste like eggs to me. Toddler approved too! Thank you for sharing this recipe ??

The most Indian people doing the keto diet miss pieces of bread that’s why this recipe is like a blessing for them. But I think this recipe can only be taken for a change not as a regular option.

Made this with LSA flour (linseed, sunflower seed and almond) in a very small rectangular casserole glass dish which gives it a lovely loaf shape – it was 100% yum! and I havenโ€™t tried it toasted yet!
    Next comes experimenting!!!
Thank you – first time Iโ€™ve had bread that is not like sawdust since starting keto cut it thick but could do thin too when cooled ?

I love this bread and I’ve shared it with all of my friends !!! My question is, can you quadruple this recipe and make it in a small glass loaf pan? If so, how would you adjust the ingredients if necessary? I am so impressed ( I just discovered you) with this bread that I am going to dive into all of your recipes for more delicious things to make !!! VERY GOOD JOB, CARRIE !!!

  185. Carrie says:

Thanks for sharing Kellie! I’m so glad you enjoy this recipe.

  186. Carrie says:

Carolyn – I haven’t had this issue before. It does sound like it’s overcooking in that area. I agree with reducing the cook time. You can also try covering the bowl with a damp paper towel and that might help absorb the excess heat and prevent the hard spots. If you try it out, please come back and let me know how it worked! Thank you.

  187. Carolyn Y Fox says:

Everytime I make this, one spot turns out hard and I have to cut it off. I tried using only 70 seconds and it helped a bit. Any suggestions to fix this?

Thank you sooooo much for posting this recipe. I have celiac and having this with my breakfast a few times a week has been wonderful. It is fast, easy and very tasty. I do toast it after cooking and changed the amount of salt to a pinchโ€ฆ.

3 weeks in and I miss bread SO much, I was on the edge of cheating. But I already enjoyed the initial water-weight loss and Iโ€™m determined. PLUS this recipe saved me. I fried it with butter after microwaving and it was SO good. Lol. I needed that. It really satisfied the craving I was feeling. Thank you! So easy and added reasonably to my carb count for the day.

  191. Lynn says:

I miss having bread to go with my over easy eggs, so I tried this. I barely passed the salt shaker over it, so it wasnโ€™t too salty. I recently broke both the small bowls that would have been perfect, so I used a cereal bowl and it worked fine but next time Iโ€™ll only use half of it and freeze half. Iโ€™m not a fan of the eggy taste, but itโ€™s better than no bread to eat with my eggs! Texture was perfect. Iโ€™m thinking Iโ€™ll try a sweet version with some monk fruit or stevia and cinnamon. Thank you for this recipe. I think it will help me stick to my diet, as breakfast will be more satisfying.

I did not read the blog before making this so did not see the note about using just a pinch of salt. I just jumped to the recipe and made it using the ยผ teaspoon salt as instructed. That is way too much salt (a pinch would be much better). I will try this again as I like the concept.

  197. Carrie says:

I haven’t tried it but I think it might work. I would only use 1 TBSP of coconut flour and add a small amount of water to the recipe as well. Let us know how it turns out!

Thank you for sharing, I made this morning and it was great toasted. I entered in the ingredients into my fitness pal and came up with a much higher calorie count, 309 to be exact. 205. Kristen Gilliam-Coomber says:

These are absolutely amazing!!!! I am a pastry chef and the ideology of microwaving a baked good let alone bread substitute makes me cringe. The quality of this bun in terms of crumb texture, moisture and flavour blows my mind. I added some fresh, chopped basil, parsley, garlic, olive oil and parmesan cheese and used it as a mini pizza base. I also made one with half the salt, added 2 tsp. swerve ‘0 calorie’ sweetener, cinnamon, 1 tbsp. chopped pecans and topped with Swerve icing sugar glace, omg it tasted in between a coffee cake and muffin. These were all for my diabetic husband I am a high carb, low fat girl but this actually had me thinking I wish I wasn’t, honestly an amazing recipe!!!!! I am testing another version of this recipe to make a chocolate cake, using some coconut flour and cocoa powder, coconut oil and sugar free chocolate chips. The possibilities with this recipe is endless;)

  206. Brenda says:

Made this today it was easy pest but a little dry, I use olive oil not butter.
Must be a way to make it moist. Came out just like the picture, but smelt like egg I will try it again but less egg or more almond flour to one egg.

  207. Carrie says:

Sounds delicious – Thanks for sharing!

  208. Jennifer says:

Agreed on salt..reduced. But if you’re hydrating a lot on keto, it suggests that you do add salt to your foods so it wasn’t an extreme reduction.
I added the 1 tbl butter to the mixture before microwaving. Nice butter taste.
Consistency when it came out of the bowl was spongey. Didn’t like it, so I fried it in a pan with more butter and a smidge of olive oil. It browned it and dried it out to a more crispy, crunchy “bread”.
I love avocado and since keto recommends it as a healthy source of fat, I spread it over the bread.
Result was that I honestly felt like I was cheating on my keto carb plan.

    Meaning, it was stinking delicious.

Easy, no guilt and this will be a nice addition to my meal plans.

  209. CC says:

I doubled everything (except only used 1 egg), spread+ in a 5 x 7 casserole dish (you might have to microwave 30-60+ sec. longer); then toasted in the toaster oven, and finally melted a little mayo and cheese on top — YUM! Can also add garlic, minced onions, etc. for different flavors before microwaving. Now a go-to fav — thanks!!

  210. Mary says:

Made this today. After reading some different reviews I just cut the salt to 1/8 instead of 1/4. Some have omitted….you canโ€™t do that and expect good results in my personal opinion. I agree with another reviewer that said it was eggy like. But the taste was amazing. I cut it in half. Toasted it on stove top. Put a little butter on with some sriracha and hard cooked egg. Handed it to my husband and he ate it super fast. He liked it a lot. So now itโ€™s in my Arsenal of recipes. Loved it. Will make again. Maybe putting herbs and other things with mix. Itโ€™s fun.

I honestly was skeptical of this recipe,..but I can tell you I will make often. It reminds me of corn bread. I toasted it lightly in a skillet in a paper-thin slice of butter. Canโ€™t wait to make it again!!

  214. Dex says:

Thanks for getting back to me Carrie. I will make some more tests with other egg substitutes, once I restock.

It worked. I couldn’t believe how fast it was and how much it looked like real bread once I cut it in half. Unfortunately I didn’t like the taste and the smell much (too eggy). After the first one I thought I’d give some egg substitutes a try and they all failed miserably. Is there a way to do this without using an egg?

This was so easy and tasty. After reading many comments about salt, I left it out since I used salted butter. Delish!

  221. Murel Milhone says:

Made this receipe as instructed the first time way to salty. Left out salt completely the next time still to salty. Substituted butter (that has salt in it) with olive oil. Still a little to much of a salt taste buying salt free baking soda because regular has 95mg of salt for 1/8 tsp. Going to try till I get the taste I want because the texture is perfect.

  222. Carrie says:

Only 1 egg is needed in this recipe. The egg yolk break slightly making it look like 2 in the video but it’s just 1. Thanks!

LOVED the bread, especially with your tip of adding two tablespoons of cheese. That gave it just the kick I needed. But a quarter teaspoon salt is way way too much! An eighth of a teaspoon would be plenty.

For anyone craving muffins, I played with the recipe a bit and came up with something that let me have my favorite – cranberry muffin – while still staying keto. I increased the almond flour to 4 tablespoons, added 1 tablespoon of monkfruit sweetener, and chopped about 1/8th cup of cranberries. Used the same method, and voila! A (large), and delicious cranberry muffin!

Tried this recipe tonight to have with our burgers and it was a hit. My husband really liked it. I need to find substitutes for some of my usual carbohydrates while on keto and I am so happy to have found your recipe. It tasted great! My only adjustment to the recipe was to add less salt. So easy and yummy! Thank you!

Tasted great! Used it as a substitute for my English muffin egg white sandwich. I did not use salt though. Thank you for the recipe ?

Okay, I have to admit, I was little skeptical, but I am impressed! My plan was to use these as an English muffin, but since I added some cheese/garlic powder/Italian herbs to the recipe, I just put some roasted tomatoes and Candian bacon on them. I was only going to eat one and save the other half, but I went back for seconds. Even more impressive, this will be PERFECT for the RV microwave. Thank you!

  253. Laura says:

Love the recipe. However, i’m confused on the serving size. It says 2 servings. Is the serving size for half the bread,or the whole thing?

This is great! Iโ€™ve gained weight since COVID kept us home, so now Iโ€™m trying to watch what I eat. Bread is a weakness. Mine was a little more dense than I expected, but still good. I made it with coconut flour and toasted it for peanut butter toast. Oh my goodness, itโ€™s like eating a dessert. The coconut aroma is heavenly. Thanks for sharing!

For those asking about baking in the oven, I used my toaster oven at 350 degrees for 10 minutes and they turned out just fine.

Because of the grainy texture, it’s difficult to say if longer or shorter is possible, but 1 minute less or more would probably be fine as well.

  267. Carrie says:

Glad to hear and thanks for sharing your ideas!

  268. Carrie says:

Yes, this recipe does travel well. You can toast it before hand or just heat it up in the microwave. I usually keep my leftovers in an air tight container or bag. Thanks.

I have to admit I was a little skeptical as I am new to the whole Keto world and I don’t like nuts. So I made it this morning and it didn’t come out exactly right but it was ok. So this evening I thought I would try again. I decided to add some cheese and garlic. They came out perfect. I toasted them real crisp and made them into croutons for my salad. Loved it. Next time I will use more seasoning if I am going to make croutons.

  271. Carrie says:

    Great idea!

This was so easy and I was surprised how good it is. I did use salted butter in the bread and to fry it afterward so next time I will probably omit the salt in the recipe and see how that works. Otherwise the texture and taste were great!

Love this recipe and make it all the time! Best thing I found for bread cravings since going keto (about a year now). Was wondering if I can make ahead and how would I store them? We have a lake cottage that we go to on weekends in the summer and it is quite rustic with no microwave. Wondering if I could make ahead and bring with me for the weekend. Would love to have grilled ‘english muffins’ for breakfast up there!

  279. B says:

Great, easy recipe! Made an amazing bacon, egg, and cheese breakfast sandwich yesterday. Today, ‘french toast’ bread, adding cinnamon, vanilla, dash of swerve and nutmeg.
I did leave off the salt because I use salted butter.

When I make this bread, I whip the egg in my mug before adding the other ingredients. The bread turns out thick and fluffy. I usually then slice it into 4 pieces. That means I get two English Muffins from the recipe

  298. ericka moore says:

    Hi,
this recipe was pretty good, a little dry but what can you expect for keto. I’ll definitely make it again. Question, I see the micros but what is the serving size or is that for the whole thing?

  299. Lynn says:

I just made this bread today and I have got to say that it was DELICIOUS!! I had made vegetable soup last night and this bread when good with it. I fried it but am going to toast the next time. Thank you so much for this recipe.

  300. Jeffrey says:

I made this today! I followed the recipe exactly, and used a 1250 watt microwave. Let it cool, and cut it in half. I browned it a bit on the stove with a little butter as suggested. I’ve been on the Keto diet a month, and I’m pretty excited to have bread to add to the things I can eat. The thought of a egg sandwich sounds amazing right now. Simple and easy to make, thanks!

  301. Millican Pecan says:

I am so excited about this recipe! When we buy a whole loaf of bread, even if I put it into the freezer, my husband and I tend to go thru it awfully fast, and we try to stay away from bread! With your recipe, I can make a bit at a time, and not use unhealthy ingredients!

  302. Priya Dogra says:

Thatโ€™s so easy. I mean in 90 seconds is a very less time. I am sure this bread will be tasty AF. I am definitely going to make it today. Thank God I landed on this recipe. I was really missing bread in Keto. Thank you!

  303. Barbara McCall says:

I made one with coconut flour and it didnโ€™t mix great. Others turned out great. Ate one with sugar fee syrup and made it even better.

  304. Abby Davalos says:

I made this, as a part of my egg benedict breakfast. It was perfect! The texture and fluffiness like a biscuit roll was the best part. I didnโ€™t add any salt since it was going to be smothered in sauce. Thanks for this quick bread!

This is absolutely delicious! I happened to have some leftover garlic butter so used that instead of ordinary butter and it worked beautifully. I was sceptical that it would turn easily out of the ramekin without greasing but it really did. One quick question on the carb content – does the 2g of carbs it contains include the fibre, making it 1g net – or is it 2g net plus one fibre?

  311. Sherry Hanamean says:

This was actually very filling. Did not add salt and tasted a bit eggy until I toasted it. Will experiment with some herbs next time.

  313. Stacey J Rodriguez says:

Omg, I needed bread. I found this recipe for 90-seconds. Can’t beat it. I thought mine would never look like yours. I had a bowl the same size as you, measured the ingredients and off I went. I spread a little butter on it after browning on the stove and ate with WF strawberry syrup, calorie free, fat, carbs, gluten or sugars of any kind. So good.

Microwave is 1200 watts so I used 90% power. Did one in a 3-inch glass dish then one in a 5-inch glass dish. The smaller one was toasted and so good. The larger one will be used as a base for poached eggs. This is such a wonderful recipe and now no longer need to miss English Muffins. Thank you.

  320. Katheryn Duncan says:

Thank you for sharing. it is perfect for a quick biscuit!!

  321. Bonnie says:

The 1st time I made this it seemed too dry. I added 1tsp of psyllium husk & it helped. I tried again & used 2tsp of psyllium husk & only a pinch of salt since I was using salted butter, and it turned out nice & soft & delicious!! I used a 4″ Ramekin. Love it ?

  322. Christine says:

We donโ€™t use a microwave oven; do you have an oven option? Temp + time?

  323. Diane says:

    Tried your recipe this AM.
Since I never use a microwave, I poured the batter in an 8″ non-stick pan (with one pat butter) and waited for surface to bubble, turned, when browned, done!
I cut back on the salt to 1/8t. and this is a remarkable, light breakfast treat!
Thanks, I will blog about this too.

  324. Pattey says:

This is really good, I use it like I would an english muffin! Can this be made with coconut flour as well or would there need to be some adjustment to the recipe?

Best recipe I have tried and first bread I have had in 5 weeks. Outstanding taste, added a little cinnamon with sugarless syrup and it was so good. You are the best!

  328. Felicia says:

This sounds amazing and I’ll be making it for breakfast this morning, but I think the carb count is a little off. I think it’s closer to 3g of total net carbs. I could be wrong, but there are almost 3g of net carbs in the 3 tbsp of almond flour, plus add a little for the baking powder and the egg? Maybe I’m counting wrong, or maybe it’s just my almond flour that’s higher than yours…

Holy deliciousness!! I cannot live without bread, so Keto has been incredibly hard, but I just had a ham & cheese “English muffin” with this bread & it was amazing!! Thanks!

  334. Diane says:

Wanted to add to my last comment, forgot to give you the 5 stars it deserves! Don’t know why but cooking on the griddle gave a more eggy taste , like french toast and not as light.the micro gives best texture and gives the look of sliced bread. I’m a celiac who lived with a carboholic. This bread will be my new go to. Fresh bread in 2 minutes and great when it’s too hot to bake. Thank you, thank you

  335. Diane says:

Game changer! Thanks so much! Celiac with dairy issues. I used almond pulp left from making nut milk( dried a little) the brown flecks from almond skins gave the look and texture of whole wheat bread. So many gluten free things are dry, crumbly, and taste of baking powder. But these were awesome.also worked cooked on griddle.,.no more bun less burgers for me. Thanks

  345. Gigi says:

This can be made without baking powder and regular salt for those needing a low sodium option. I use a dash of no salt and Mrs. Dash garlic and herb seasoning.

  346. Felicia says:

Donโ€™t use coconut flour. Has weird taste. Didnโ€™t like it at all. Will try almond flour next time

  347. Caroline says:

I must admit that I was skeptical ?
However the texture is ridiculously good and it seriously could not be easier. I mixed up a little cinnamon/ Stevia to sprinkle on after toasting in more butter. Next time I will reduce the salt as I do find it a bit salty for me but for a savory dish it would likely be fine ? Thx for a fantastic easy recipe!

I just made this bread and itโ€™s lovely but when I work out the ingredients I used it works out a far greater fat content that yours. I used ground almonds as that is what we use for almond flour in the uk, I donโ€™t know if that makes a difference. Per serving (half the recipe) this is what I get: cal 240, fat 21.3g, net carb 2.2g, protein 9.4g. Any idea why mine is so much more?

While I do not really miss bread I do occasionally like a grilled cheese. I think this will also work well as a hamburger bun this Summer. It is a bit salty even when using unsalted butter, so I might cut that back a bit. It made a great grilled cheese though. I made mine in a small rectangular pan then cut it in half and grilled it in my cast iron pan with cheddar. Wonderful!

  382. Carrie says:

2 is because I slice it in half. Thank you!

My first attempt ever at making this type of bread. Awesome recipe. Thank you for sharing. The bread turned out great. Put bread in toaster and added butter, delicious!

  391. Gail says:

Hi – what are cooking instructions (time, temp) for cooking in oven? I don’t use microwave but want to try this recipe that sounds delicious!

  392. Brandy says:

You have it listed as 2 servings. Is it 2 because you are slicing it in half? Or does the recipe make enough “batter” to use two bowls/containers?

Made this today wow! Easy, and great toasted. Only added 1/4 tsp salt, will add some garlic powder next time.

Just had it and used it as a bun for a homemade burger, don’t really eat bread, but you got to have a bun with a burger!! Was lovely, light and fluffy, toasted it a little. 5 stars

I have to say a huge thank you for this recipe for both my brother and myself. My brother is a 30-year type 2 diabetic, and a carboholic. I’m a recently diagnosed type 2 also with a severe gluten sensitivity. This bread is a lifesaver for us both. My brother loves it so much that he says he would never go back to regular bread. Thank you so much!

  396. Claudia says:

Thanks for this. itโ€™s becoming a regular part of my breakfasts. I grill it with a piece of cheese and a couple strips of bacon.

Just made my first recipe of Keto Bread using this recipe. It was very good. I was very skeptical at first. I did not taste the โ€œeggyโ€ flavor or โ€œcorn muffinโ€ flavors that I read so much about. I will definitely be making this again.

  402. Carrie says:

    Thanks Lydia!

I made this today. I did not have almond flour so I took some slivered almonds and made flour from them in my nutribullet. This turned out fabulous. Only a pinch of salt is necessary. The variations are endless! I donโ€™t do Keto but I will definitely be making this often for everything!! This is a great save if you are out of bread! Thanks so much for this recipe! It is DELISH!

Glad to hear it Marci! Thank you for sharing.

I want to say thank you. I don’t always have time to bake, and this is a life saver, of sorts. My brother is diabetic, and his doctor recommended a low-carb diet; I’m diabetic also, and gluten intolerant. This bread has the most wonderful taste and texture, and is so quick and easy, I’ve already committed the recipe to memory. Even my SO, who is neither gluten free nor diabetic, likes the taste and texture. I did cut down the salt, because like some others, I found the 1/4 teaspoon to be too salty. Other than that, raves and kudos!! We are thrilled, and planning all the different ways we’re going to use this bread. Many thanks!!

It was great topped with cream cheese frosting(cream cheese, butter ,vanilla and swerve confection .Thanks can’t wait to try pumpkin spice next time I’m craving carrot cake thanks so much!

I was looking for a quick way to test a bit of (raw) JALAPENO and came across your 90 SECOND bread. Typically, a mug version isn’t on my radar since I’ve taken up keto loaves of bread, cakes, cookies, etc., quantities of baking. BUT I am totally impressed at the texture, very English muffin, and wonderful flavor! I cut the salt to less than an 1/8th and put just a dab of butter into the mix before whisking it really well. DELICIOUS! Was very surprised to see it is a serving for 2 muffins although hubby and I split it to see about the JALAPENO spiciness (I can safely put more into the loaf I’ll be doing next). Long winded to express my thanks and appreciation for getting bread in a mug done quickly absolutely perfect!!

This is a great recipe, but the salt is too much. I had to cut it in half. I have genetic HBP and this was clearly too much salt. After the reduction, I made 3 of these and cut them in thirds. Mine were pretty fluffy, so thirds are the perfect thickness. Now I have muffins/bread for the week! Thanks!

Great recipe but Bobโ€™s changed their carb count last year so itโ€™s over 5 net carbs if using their almond flour. Just need to adjust counts based on actual products used.

Made this today and the taste isn’t so bad except I believe you need to reduce the salt to about an eighth of a teaspoon because this was so salty when I made it as directed. So I didn’t get to enjoy it as much as I would have liked. But the consistency was good. Definitely will make again, just reducing the salt amount.

I added 1 tsp of swerve and used coconut oil and it made it taste so much better. I tried it with butter, and realized my butter was salted so it came out too salty, then tried it with varying amounts of swerve – love it with 1 tsp.

Thank you so much for such a GREAT base recipe!!! It is a life saver!!!

This is the “bestest” for people following low carb/keto. I followed recipe exact, same here, too salty each time I made it including last when I reduced it by half. I’ve made this as an english muffin, garlic bread, toast and today made a salmon patty sandwich and completely left the salt out and was just perfect. Thanks so much for this recipe.

I have a question about the nutritional facts.

Recipe says makes 4 servings, correct? Then the nutritional facts say 2 carbs but doesn’t list the per serving. So I’m assuming is per 1 serving not 4, correct?
