Ingredients 

Ingredients needed for strawberry shortcake bars - butter, sugar, eggs, baking powder, salt, flour, milk, vanilla extract, cream cheese, powdered sugar, whipped topping, strawberries

For the Cake

  • Butter (softened)
  • Granulated Sugar 
  • Large Eggs 
  • Baking Powder 
  • Salt 
  • All Purpose Flour 
  • Milk 
  • Vanilla Extract 

For the Frosting

  • Cream Cheese (softened)
  • Powdered Sugar 
  • Vanilla Extract 
  • Whipped Topping (thawed)

  • Strawberries (sliced)

Variation Ideas

  • Change Cake Flavor – You can easily change the cake flavor for this recipe. You can mix in your favorite fruit flavored jello.
  • Change the Fruit – Feel free to add different fruit toppings to this cake. Top with blueberries, mango, pineapple or rasperries.
  • Frosting – We love making the homemade cream cheese frosting. But you can frost the cake with a store bought frosting. Then top with strawberries when ready to serve.

Step by Step Instructions

  • Step 1 – Heat Oven – Preheat the oven to 350 degrees Fahrenheit. Then grease and flour a 9X13 baking pan.

Step 2 – Beat butter and sugar – In a large mixing bowl, beat together the sugar and butter. Combine with a hand held mixer or stand up mixer until creamy.

Step 3 – Add in ingredients – Add in the eggs, baking powder and salt.

Step 4 – Add in flour & milk – Then slowly add in the flour and milk. Alternating between each one, and mix until combined. Stir in the vanilla extract.

Step 5- Pour Batter – Pour the batter into the prepared pan. Then bake for 18-20 minutes until a toothpick inserted into the center comes out clean. Let the cake cool completely at room temperature.

Step 6 – Beat Frosting Ingredients – Beat together the cream cheese, powdered sugar and vanilla extract until smooth and well combined.

Step 7 – Stir in Whip Cream Topping – Gently stir in the whipped topping.

Step 8 – Spread Mixture – Spread the mixture over the cooled cake. Refrigerate for at least 30 minutes.

Step 9 – Serve and Enjoy – When serving, top with sliced strawberries.  Cut, serve and enjoy.

Recipe Tips

  • Prepare Baking Dish – Prepare the baking dish by spraying with cooking spray or adding flour. This helps with an easy cleanup and serving the cake.
  • Room Temperature Ingredients – Before mixing the ingredients together, we recommend that the butter and cream cheese is softened. This helps for everything to blend smooth and creamy.
  • Cake – The cake is done when the toothpick is inserted and comes out clean.
  • Adding strawberries – We recommend adding the strawberries right before serving. If you add the strawberries to early they could get soggy and mushy. Use fresh strawberries and instead of frozen or freeze-dried strawberries.
  • Refrigerate before serving –  Allow the cake to chill in the fridge for at least 30 minutes after you assemble it. This will allow it to set and make it easier to cut into bars.
  • Baking Sheet pan Size – This size pan results in the perfect bars. We don’t recommend using an 8×8 baking dish as the bars will be too thick.
  • Don’t overmix the bars – The shortcake layer is easy to make but should not be overmixed. Just combine until blended but don’t excessively mix.

How to Cut Shortcake Bars

Shortcake bars are best to cut when they have cooled to room temperature. The great thing about dessert bars is you can cut them any size that you prefer.

These bars are sweet and delicious so I like to cut in small size. Then place on a dessert tray to serve.

Can I Make Strawberry Shortcake in advance?

Yes, this dessert recipe can be prepared 1 to 2 days in advance. We recommend just making the shortcake then adding the frosting when ready to serve.
Make the homemade frosting and top with the strawberries right before serving.
If you need to save even more time, you can make the frosting up to 24 hours in advance and refrigerate.
Then spread on the cake the day you are serving. Top with strawberries and chill in the refrigerator.

How to Store Leftovers

Refrigerate the leftovers in an airtight container for up to 1 week. If you storing on a dessert tray make sure to cover with a plastic wrap.

How to Freeze

Yes, you can freeze the shortcake bars. If you plan on freezing the strawberry shortcake bars, do not frost all of the cake.
This shortcake can be frozen up to 3 months unfrosted. Allow to cool completely and wrap in plastic wrap and foil. Place in the freezer until ready to use.
Allow to thaw overnight in the refrigerator and then place on the counter to come to room temperature. Make the frosting as normal and garnish with fruit when serving.
