Recipe Tips

  • Bell Peppers – If you prefer your bell peppers a little more crunchy, wait to add them until about 2 hours before dinner is ready.  Now if you are not picky about your peppers, you can add them in the morning like above. However, I like the peppers a little more firm which is why I wait to add them halfway through the cooking time.
  • Slicing Ingredients – Slice the peppers and meat about the same size so that it cooks evenly and about the same time.

This is a great recipe. I followed the recipe almost exact, except I added 2 lbs of whole chicken breast into the pot with the sliced beef and some garlic powder. I sprinkled on the two packets of McCormickโ€™s reduced sodium taco seasoning; 1 mild and 1 regular over the meat and rub it into the meat, then I poured the 2 cups of picante sauce over the meat. I cooked it all on high for 3 hours, then I added the sliced onion and the green and red bell peppers and let it all cook for another 45 minutes. I also added salt and black pepper to taste. It turned out really really good. There was a lot of sauce leftover from the picante, so Iโ€™m going to use it to make tortilla soup form tomorrow nightโ€™s dinner. The sauce is just amazing! We loved this recipe.
