Lasagna is one of our favorite meals but it can be hard to serve during the week because of all of the prep work. Now, thanks to this Slow Cooker Sausage Lasagna it is SO easy! Toss everything into the crockpot and enjoy lasagna even during weeknights.

Variations

  • Noodles – Substitute penne, elbow or even spaghetti noodles.
  • Change Meat – Feel free to use ground turkey, ground beef or ground Italian Sausage as a substitute.
  • Cheese – Use the type of cheese that is your favorite or what you have on hand. You can even add extra.
  • Sauce – Marinara sauce or spaghetti sauce can be substituted for the tomatoes
  • Cottage Cheese Substitute – Substitute cottage cheese instead of ricotta cheese.
  • Vegetables – This is a great recipe to sneak in vegetables. We like to add in spinach, kale, shredded carrots, or chopped broccoli.

How to Make Slow Cooker Sausage Lasagna

  • Step 1 – Add the sausage to a large skillet and heat over medium high heat.  Stir in the diced onions and cook until the sausage is browned, breaking up the sausage as it cooks.  Drain off any excess grease from the pan and cook sausage.  
  • Step 2 – Then add in the minced garlic and cook for 1 minute until the garlic is aromatic.  Then add in the tomato sauce, Italian Seasoning, salt and pepper.  Stir and cook for 7-8 minutes until heated through and well combined.  Then remove the pan from the heat. 
  • Step 3 – In a separate bowl, stir together the ricotta cheese, 1 ½ cups mozzarella cheese and Parmesan Cheese. 
  • Step 4 – Spray a 6 quart crock pot with non-stick cooking spray. 
  • Step 5 – Then pour a layer of sauce on the bottom of the crock pot (approximately 1-1 ½ cups). Then place a layer of the uncooked lasagna noodles on top.  It’s ok to break some of the noodles to cover the top of the sauce. 
  • Step 6 – Then layer approximately ½ cup of the cheese mixture on top followed by approximately 1 cup of the sausage mixture. 
  • Step 7 – Repeat these layers 2 more times making sure to end with the meat sauce.  Sprinkle the remaining ½ cup of the mozzarella cheese on top. 
  • Step 8 – Cover and cook the lasagna on low for 4-5 hours until the noodles are soft.  
  • Step 9 – Then turn the crock pot off and let the lasagna rest for 20-30 minutes before serving.  Then the lasagna is ready to serve and enjoy! 

Recipe Tips

  • Lasagna Noodles – Make sure to buy the noodles that are uncooked and not the already cooked noodles.
  • Prepare Slow Cooker – We recommend spraying the slow cooker with cooking spray prior to layering the ingredients. This helps to easily serve and makes cleanup a breeze.
  • Rest Lasagna – Prior to serving, allow the lasagna to rest in the slow cooker. We recommend for at least 20 minutes to ensure all the layers are soft.

Do I Need to Cook Lasagna Noodles First?

In this one pot recipe, there is no need to cook the noodles first before layering in the slow cooker. The moisture from the sauce will cook the noodles.

Why Did My Noodles Turn Mushy in the Slow Cooker?

Make sure to use uncooked noodles when making this recipe. If you cook the noodles first before laying in the slow cooker, this could cause the noodles to get mushy.

Can I Prepare Ahead of Time?

Yes, this is a great recipe to prepare the night before and then place in the fridge. We recommend preparing the lasagna no more than 12 hours of cooking it. Allow the lasagna to come to room temperature before cooking.

How to Store Leftover Sausage Lasagna

Store leftovers in an airtight container in the fridge. The leftovers will stay fresh for up to 3-4 days. Reheat the leftovers in the microwave or oven depending on how much you have left.

    I don’t recommend cooking this recipe on high. Parts of the lasagna may burn while the pasta is getting cooked through on the high setting.
