Brisket is so delicious and actually very simple to make. If you haven’t tried cooking it in the crock pot, it really makes it so tender and very easy. The flavor is intense from being slow cooked all day and gets infused into each bite. It’s our favorite way to cook this beef recipe.

I used to think this type of meal was meant for Sunday dinner or special occasions. Now that I know how easy the crock pot makes the brisket, it’s simple enough for busy weeknights.

It is even perfect to serve for a crowd or for you Christmas dinner.

How to Make Slow Cooker Red Wine Beef Brisket

Step 1 – Heat a large skillet over medium heat until the pan is hot.  Add in the olive oil. Brown the brisket on both sides cook for approximately 3-5 minutes.

Step 2 – Add the brisket, carrots and onions to the crock pot.

Step 3 – Top with the salt, pepper, thyme and minced garlic.  Then pour the tomato sauce, beef broth and wine on top. Cover and cook on low for 10 hours or on high for 5 hours.

Step 4 – Remove 2 cups of the liquid from the crock pot and place in a sauce pan. Whisk in the water and cornstarch mixture in with the beef juice. Bring to a boil, then Drizzle the gravy over the brisket, carrot and onions.

Expert Tips

  • Searing Brisket – We sear the brisket for a few minutes in a skillet. But you can also brown the brisket in your crock pot if you have a sauté setting on your crock pot.
  • Shredding Brisket – We usually shred the brisket with two forks, but you can also learn how to shred with a mixer.
  • Thickening Sauce – The cornstarch slurry helps to thicken the sauce to make a gravy to pour over the top of the brisket. This add flavor and keeps the brisket so juicy.

Can you Overcook Brisket in a Slow Cooker?

Yes, it is possible to overcook a brisket in the crockpot results in dry meat. We recommend keeping the slow cooker on low and cooking for about 8-10 hours. You should be able to shred the meat with a fork.

    This turned out lovely. I didnโ€™t have red onions or carrots so I put some shallots instead. Also put chopped tomatoes and used a hand blender to make the sauce smooth at the end. Served with mash potato and peas. Yummy! Thank you for the recipe.
