How to Make Creamy Sun Dried Tomato Chicken in the Crock Pot?

  • Step 1 – Place the chicken in the bottom of a 6 quart crock pot. 
  • Step 2 – Top the chicken with the sun dried tomatoes, minced garlic, salt, pepper, Italian seasoning and paprika.

  • Step 3 – Pour the chicken broth top.

  • Step 4 – Cover and cook on low 6-8 hours or on high for 3-4 hours until the chicken is tender. 
  • Step 5 – Remove the chicken from the crock pot and set aside. 
  • Step 6 – Turn the crock pot to high and stir in the heavy cream and grated Parmesan Cheese.  Heat for 10-15 minutes until the cheese is melted and heated through.

  • Step 8 – Serve warm and enjoy!

  • Cooked Chicken – You can leave the chicken whole or you can shred the chicken with two fork or with a stand mixer.
  • Sauce Texture – If you prefer the a thicker texture make a cornstarch slurry with 2 tablespoons of cornstarch and 2 tablespoons of water.

Serving Suggestions

Sundried tomato chicken can easily serve over your favorite pasta. Angel hair pasta is a favorite around here but any type of pasta will work. Also try serving this dish with mashed potatoes instead of pasta. The sauce is delicious on the mashed potatoes.

You can even serve over Zucchini Noodles. Another keto friendly idea to try is to serve over cauliflower rice. Both of these are delicious and very good with this dish.

Instructions

  • Place the chicken in the bottom of a 6 quart crock pot.

Recipe Notes

Refrigerate the leftovers in an airtight container for up to 5 days. 
If your sauce is too thin, whisk together 2 Tablespoons Cornstarch with 2 Tablespoon water and then mix this slurry into the crock pot to thicken the sauce.
