I don’t know about you but I love sheet pan recipes. No fuss or mess and everything you need for dinner in one pan.
The chicken thighs are so tender and the veggies get the best flavor from being baked with the chicken. Yum!
We made this Oven Roasted Potatoes & Sausage Sheet Pan Dinner and it was a big hit with everyone. Plus, I loved having just the one baking sheet to clean. This is so nice for busy days when you just don’t have time for anything extra.
You can still give your family an amazing meal and not a ton of work.
What should I serve with chicken thighs?
You really don’t need anything extra. The sheet pan is packed with yummy veggies and chicken.
However, sometimes I will make microwave baked potatoes. Another idea is to dice potatoes and add them to the sheet pan with the veggies.
We also like rice with this. It is really yummy mixed with the vegetables.
I have a meal prep trick for the rice that makes it really easy for busy weeknights. I actually freeze rice!

Sometimes I also like to make this Easy Homemade Dinner Rolls Recipe. We actually freeze garlic bread to use with meals like this. It takes little time and saves us a bunch of money.
You can also just pick up a loaf of bread from the bakery or grocery store. Do what works best for you!
Ingredients
- chicken thighs, skin on
- olive oil
- broccoli
- yellow squash
- red bell pepper
- large carrots
- Salt and Pepper
- Fresh parsley for garnish
Marinade
- honey
- olive oil
- soy sauce
- cloves garlic
- kosher salt
How to make sheet pan chicken thighs:
First, whisk together all the ingredients for marinade in a medium bowl. Just set this aside.
Second, sprinkle the chicken with salt and pepper. Put the chicken in a large ziplock bag.
Now, it is time to pour the marinade all over chicken. Seal the bag and use your hands to make sure all of the chicken is coated.
Pop that in the fridge to let all the flavors blend. You can do this for as little has 30 minutes but it is really amazing for several hours.
Go ahead and coat the baking sheet with cooking spray. Sometimes, I use parchment paper instead. Either way, you want to use something to help with cleanup.
Make sure you have a good sheet pan to use. There are several nice sheet pans on sale here.
Cut all of the veggies and place in a single layer on the baking sheet. Drizzle the veggies with olive oil. Salt and pepper to your preference.
Finally, take the chicken out of the marinade and put on the baking sheet to bake in the oven.
How do I make sure chicken thighs are fully cooked?
The chicken needs to have an internal temperature of 165 degrees F.
Once everything is finished cooking, let set for a few minutes before serving.
I love to garnish each plate with fresh parsley but this is optional.
Sheet pan chicken thighs are budget friendly.
This delicious marinade is great with other cuts of chicken. You can substitute chicken breasts, chicken legs or whatever you have for the chicken thighs. We have cooked both and it was so delicious.
The veggies can easily be mixed up based on what you have or can get on sale at the grocery store. Sweet potatoes are also delicious in this recipe.
It is such an easy dinner that is absolutely delicious.
Just use what you have. We often use what we have in the freezer or what is on sale that week. By shopping when things are on sale I save money on groceries and it really helps our budget.

Recipe for roasted chicken thighs:
Sheet Pan Chicken Dinner
Ingredients
- 6 chicken thighs skin on
- 1 tablespoon olive oil
- 1 medium head broccoli chopped
- 1 medium yellow squash sliced
- 1 red bell pepper cleaned and diced
- 2 large carrots cleaned and diced
- Salt and Pepper to taste
- Fresh parsley for garnish if desired
- Marinade
- ยผ cup honey
- 2 tablespoons olive oil
- 2 teaspoons chili sauce
- 1 tablespoon soy sauce
- 2 cloves garlic smashed and minced
- ยผ teaspoon kosher salt
Instructions
- In a medium bowl, whisk together all ingredients for marinade
- Season chicken with salt and pepper and add to large resealable bag
- Pour marinade over chicken
- Place in refrigerator to chill for at least 30 minutes
- Spray a large sheet with non-stick cooking spray or line with parchment paper
- Meanwhile, cut the vegetables and place on baking sheet
- Drizzle with olive oil and season with salt and pepper
- Preheat oven to 400 degrees F
- Remove chicken from marinade, discard marinade and place chicken on baking sheet
- Bake for 25-30 minutes or until chicken has internal temperature of 165 degrees F and the vegetables are tender
- Remove from oven and let set 5 minutes
- Garnish with fresh parsley and serve immediately
- Store leftovers in refrigerator

Sorry for the confusion. I think it accidentally got deleted from the article. We did use chili sauce for the marinade on this recipe and it’s delicious. I used a sweet chili sauce and it worked perfect in this recipe.
