My favorite way to eat granola is with Greek yogurt. This is a delicious topping with yogurt and such a tasty snack or breakfast. My kids like to eat it straight out of the bowl. It is that good!

This recipe will make 3 cups, so I highly recommend you doubling and even tripling the batch so you have extras to last you all week long. It is so delicious and you will want extras to enjoy all week.

The pumpkin granola does not take anymore time to make extra because you already have all the ingredients and supplies out. Our house smelled amazing as this cooked. Cooking this pumpkin spice granola will make everything smell like Fall.

Ingredients

Ingredients - Rolled oats, maple syrup, pumpkin puree, oil, pumpkin pie spice, salt, pecans, almonds, pumpkin seeds
  • Rolled Oats – Use Rolled Oats only for the best results
  • Maple Syrup – For the best sweetness taste use Pure Maple Syrup. You can also substitute with honey
  • Pumpkin Puree – Canned pumpkin puree is best. If you have leftovers see 33 of the Best Pumpkin recipes. You can also make Homemade Pumpkin Puree
  • Vegetable Oil – Coconut oil can also be used. Egg Whites can be also added for an extra crunch mixture

How to Make Pumpkin Granola

  • Step 1 – Preheat your oven to 350 degrees.
  • Step 2 – Mix together the oats, maple syrup, pumpkin, oil, spice and salt with a wooden spoon.

  • Step 3 – Spread mixture out on a non-stick baking surface in a thin layer. Bake for 15 minutes.

  • Step 5 – Once cooled, stir in the nuts and pumpkin seeds. Store in an air tight container and enjoy!

Expert Tips

  • Baking Sheet – I highly recommend using a baking mat on your cookie sheet. It will make baking almost anything so much easier. It prevents any of your food from sticking to the pan, which really helps the clean up. You can also line with parchment paper.
  • Clusters – Break up big clusters after baking the oat mixture. This allows for the granola to easily be served.

Homemade granola is great by the handful but we also love to use to top my oatmeal or a smoothie bowl. We even love to layer Fruit and Yogurt Parfait with this granola for a tasty treat.

Why is My Homemade Granola Not Crunchy?

We recommend cooking the granola at 350 degrees for 15 minutes which will create a crunchy granola. If you cook faster with a higher temperature it could cause the granola to burn and not get crunchy. Make sure to also toss in the oil to create a texture around the oats.

How to Store Leftover Granola

Store leftovers in an airtight container or mason jar. The leftovers will last about 2-3 weeks at room temperature. The perfect pumpkin dessert to enjoy all fall season long.

What is the Best Type of Oats do you Use?

For granola, we recommend using Rolled Oats. We do not recommend using steel-cut oats and quick oats.
