How to Make Pasta Fagioli Soup

Step 1 – Brown the ground beef in a large pot over medium high heat and drain any excess grease.

Step 2 – Add the olive oil, onions, carrots, celery, garlic, salt and pepper.  Sauce over medium-high heat uncovered until the vegetables are tender (approximately 5-7 minutes).

Step 3 – Then add in the chicken broth, tomato sauce, diced tomatoes, canned beans, Italian seasoning and thyme.

Step 4 – Bring to a boil, then reduce heat to medium-low, cover with a lid and allow to simmer until all the veggies are soft (approximately 10-12 minutes). Stir in uncooked pasta and cook uncovered for 9-12 minutes.

    Can you boil the pasta separately to be added later? I want to make this ahead of time for camping and didn’t want the pasta to swell since it will be in there for a few days. In that case would I lower the amount of broth?

    This pasta recipe is my very favorite recipe of over 60 crock pot recipes I have! It is hearty since it includes meat, beans & pasta! ( I use Italian sausage instead of ground beef which gives more flavor.) Served with a baby greens salad with cranberries, toasted almonds, & mandarin oranges, it is the perfect main dish for guests or just for your own family. Guests have given me many compliments & asked for the recipe. The flavor is unique. Ladle in some soup in each bowl, then mozzarella cheese, & then some more soup. Since the soup is hot, the mozzarella cheese will melt making it gooey & delicious. Completing the meal with the salad & cornbread, this meal will not be forgotten!
