Step 1 – Place slice squash in large bowl. Then pour the olive oil and season with the salt, pepper and garlic powder. Toss to coat the squash.
Step 2 – Place the squash on a single layer on a baking sheet. Top with the grated parmesan cheese. Bake squash, then broil on high for 3-4 minutes.

- Placing on Baking Sheet – We recommend placing the squash on a single layer. This helps to cook them evenly.
- Roasted Butternut Squash – Oven roasted vegetables do not take long to cook. Watch closely as this vegetables only take about 9 minutes to cook. If you cook to long, you could run the risk of them getting mushy.
- Serving – For best results, we recommend serving immediately after removing from the oven.

Oven Roasted Squash
Ingredients
- 1 pound Yellow Summer Squash
- 1 Tablespoon Olive Oil
- ½ teaspoon Pepper
- 1 teaspoon Salt
- ½ teaspoon Garlic Powder
- ¼ cup Grated Parmesan Cheese
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Cut the squash into ½ inch thick slices and place them in a large mixing bowl.
- Pour the olive oil on top and season with the salt, pepper and garlic powder. Gently toss to coat the squash with the oil and seasoning mixture.
- Place the squash on a single layer on a baking sheet. Top with the grated parmesan cheese.
- Bake for 9-11 minutes until the squash is just tender. Be careful not to overcook or the squash will get mushy.
- Switch the oven to the broiler setting and broil on high for 3-4 minutes until the cheese and squash starts to brown.
