Leftover Ideas
- Chicken Spaghetti – Reheat leftovers on the stove top. Stir in taco seasoning and salsa. Then serve with crushed tortilla strips on top. Similar to our Taco Spaghetti but with chicken instead of ground beef.
- White Chicken Enchiladas – These are a bit harder to turn into a second meal. However, I recommend you freeze the leftovers and then bake to reheat for an easy dinner. These freeze great and I think they taste even better leftover.
- Pot Roast – There are lots of options for pot roast. Use leftover roast to make Steak and Cheese Quesadillas, or Slow Cooker Shredded Beef Enchiladas Recipe.
- Pork Chops and Gravy – Use the leftover pork chops to make Pork Fried Rice Recipe.
- Grilled Chicken Kabobs – Chop up the leftover to make Easy Chicken Fried Rice Recipe or Cheesy Chicken and Rice Skillet.
