My mom makes a very similar cake to this easy orange angel food cake but she uses crushed pineapple and it is amazing. The cake is super moist and packed with flavor from the canned fruit.

Ingredients:
- Mandarin Oranges
- Angel food cake mix (make sure that you get the kind that only requires water)
- Cool whip – optional but so delicious.
Equipment you need:
- 9 x 13 baking pan (I love this Wilton one, or a glass one)
- potato masher or hand mixer
How to make mandarin orange angel food cake:
- First, drain the juice off the mandarin oranges and pour the mandarin oranges into a mixing bowl. Use a potato masher or your hand mixer to crush the mandarin oranges.
- Second, pour the angel food cake mix into the bowl with the crushed mandarin oranges.
- After you’ve added the cake mix, mix them until well blended on medium speed.
- Next, pour the mixture into the cake pan. DO NOT spray the pan with non stick spray first. You could also bake this angel food cake in the traditional tube pan if you wanted to. You would need to increase the baking time to about 35-40 minutes.
- Lastly, bake your orange angel food cake at 350 degrees for 20-25 minutes. Once your cake is baked, allow it to cool completely. I’ve made the mistake of not allowing it to cool, once!
- After the cake is completely cooled, cover with the optional whipped topping and enjoy! If you happen to have leftovers, be sure to store them in refrigerator in a covered dish.

Do you add the water on the angel food cake box directions? Or no water and no juice from the can?
Can these 2 ingredient cakes be cooked in a bundt or angel food cake pan. I made one in a 9×13 pan and it ran over a lot. I live in a high altitude. I wonder if that made a difference.
My cake usually sinks some in the middle as well but always tastes great! I haven’t tried this in a bundt pan yet so I’m not sure how that would work.

Yum!! Thinking to bump up the orange flavor would be to fold in some additional mandarin oranges (drained & crushed) into the coolwhip before frosting. (seems would be tastier than extract)

No, I do not add any water for this recipe and yes, if you use pineapple instead of the oranges I would use a 15 oz can. Thank you!
do you add the water listed on the cake mix? or add it dry? if using crushed pineapple, do you add 15 oz.?
I’m not sure – I have just been told not too. I think it keeps the angel food cake from overflowing the pan.
What happens if you spray the pan cwith pam?

No, I do not drain the oranges. You’ll want all those juices in the cake to help make it moist!
