I love that they look so fancy but can be served at any occasion. Lemon desserts are always a crowd favorite and these White Chocolate Lemon Truffles are one of our favorites.

Ingredients

Ingredients - White Chocolate Baking Bars, heavy whipping cream, lemon, lemon extract, butter, yellow food coloring, powdered sugar
  • White Chocolate Baking Bars – Vegan White chocolate melts work great too. For a delicious twist, try melting dark chocolate instead
  • Lemon – We like to add strips of fresh lemon zest instead of using grate lemon zest
  • Lemon Extract – Adding lemon extract gives these lemon truffles the best flavor. Fresh lemon juice can also be used.
  • Butter – We used unsalted butter

How to Make Lemon Truffles

Step 1 – Break the white chocolate into smaller pieces and place the white chocolate mixture in heat resistant bowl.  Place the tbsp butter on top of the chocolate in the bowl.  Set aside.

Step 2 – Place the heavy cream in a small saucepan.  Heat over medium high heat (whisking occasionally) until the cream just starts to boil.

Step 3 – Remove from heat and stir in the lemon extract and lemon zest.  Whisk until combined.

Step 4 – Pour this mixture over the white chocolate and butter.  Stir with a large wooden spoon until the melted chocolate is smooth.  Add in the drops of yellow food coloring and stir until the truffle mixture is a vibrant yellow color.

Step 5 – Cover and refrigerate until the mixture is firm (1-2 hours). Remove from the refrigerator and shape into 1 inch balls.

Step 6 – Roll the balls into the powdered sugar and place on a baking sheet lined with parchment paper.  Continue this process until all the truffles are formed.  Place the truffles in the refrigerator until ready to serve. Enjoy!

  • Quality Chocolate – Make sure to use high quality chocolate for the best results for these lemon truffles.  
  • Combining Ingredients – Make sure that you stir the mixture with either a wooden spoon for the best results as it helps move the heat evenly throughout the mixture.  
  • Scooping Dough – To make sure the creamy truffles are about the same size, we recommend using a cookie scoop or small spoon.
  • Prepare Baking Sheet – We recommend lining the baking sheet with parchment paper to prevent the truffles from sticking and for easy cleanup.
  • Melting Chocolate – If you have problems with the chocolate not melting, you may need to put it in the microwave with a teaspoon of coconut oil. Make sure to use a microwave safe bowl.

We love rolling the lemon truffles in powdered sugar but you can also roll it other ingredients. You can easily crush the ingredients in a food processor for the best texture.

What White Chocolate Should I Use?

You can use any type of white chocolate chips, but we think the Ghirardelli Baking Wafers are the best for the creamiest chocolate and easily melts.

Do Lemon Truffles Need to be Refrigerated?

We recommend storing the leftovers in an airtight container in the refrigerator for up to 4-5 days. For serving, we do think they taste better at room temperature so set them out about 20 minutes prior to serving for best results.

Can I Freeze Lemon Truffles?

Yes, you can freeze lemon truffles in a freezer safe container for up to 3 months. This is a great recipe to double to prepare for any celebration. Thaw in the fridge when ready to serve.
