Why We Love Lemon Truffles

Ingredients
- White Chocolate Baking Bars – Vegan White chocolate melts work great too. For a delicious twist, try melting dark chocolate instead
- Lemon – We like to add strips of fresh lemon zest instead of using grate lemon zest
- Lemon Extract – Adding lemon extract gives these lemon truffles the best flavor. Fresh lemon juice can also be used.
- Butter – We used unsalted butter

How to Make Lemon Truffles
Step 1 – Break the white chocolate into smaller pieces and place the white chocolate mixture in heat resistant bowl. Place the tbsp butter on top of the chocolate in the bowl. Set aside.
Step 2 – Place the heavy cream in a small saucepan. Heat over medium high heat (whisking occasionally) until the cream just starts to boil.
Step 3 – Remove from heat and stir in the lemon extract and lemon zest. Whisk until combined.
Step 4 – Pour this mixture over the white chocolate and butter. Stir with a large wooden spoon until the melted chocolate is smooth. Add in the drops of yellow food coloring and stir until the truffle mixture is a vibrant yellow color.
Step 5 – Cover and refrigerate until the mixture is firm (1-2 hours). Remove from the refrigerator and shape into 1 inch balls.
Step 6 – Roll the balls into the powdered sugar and place on a baking sheet lined with parchment paper. Continue this process until all the truffles are formed. Place the truffles in the refrigerator until ready to serve. Enjoy!
