This homemade lemon bread is bursting with lemon flavor and the additions of the blueberries makes it so beautiful and tasty.

Ingredients

Ingredients - flour, baking powder, salt, sugar, lemon, butter, greek yogurt, eggs, vanilla extract, blueberries, powdered sugar, milk
  • All Purpose Flour – Make sure to properly measure to ensure the best texture. You can also use Gluten Free Flour
  • Butter – Melted and cooled butter. We used Unsalted Butter
  • Plain Greek Yogurt – This adds moisture to the bread
  • Eggs – Start this recipe with room temperature eggs
  • Vanilla Extract – Use Pure Vanilla Extract for the best flavor
  • Fresh Lemon Juice – We prefer fresh lemon to enhance the lemon flavor
  • Fresh Blueberries – We think fresh is best. Make sure to toss in flour before mixing in the batter

How to Make Lemon Blueberry Bread 

  • Step 1 – Preheat the oven to 350 degrees Fahrenheit. Spray a 9X5 inch loaf pan with a non-stick cooking spray.

Step 2 – In a large bowl, stir together the flour, baking powder and salt.  Set aside.

Step 3 – In a separate mixing bowl, stir together the sugar with lemon zest with a fork until well combined.

Step 4 – Mix in the butter and yogurt into the sugar mixture with a hand held mixer or stand mixer until light and fluffy.

Step 5 – Add in the eggs, one at a time, until combined. Then mix in the vanilla extract and lemon juice.

Step 6 – Slowly add the dry ingredients into the wet ingredients until just combined.  Be careful not to over mix the batter.

Step 7 – Toss the blueberries in 1 tablespoon of flour and then gently stir the blueberries into the batter.

Step 8 – Pour the batter in the prepared loaf pan.  Bake for 40-50 minutes until a toothpick inserted into the center of the bread comes out clean.

Step 9 – Let the bread cool completely in the pan and then turn the bread out onto a wire rack to cool completely.

  • Step 10 – When ready to serve, whisk the lemon glaze ingredients together in a small bowl.  
  • Step 11 – Drizzle the glaze over the bread.  Allow the glaze to set.  
  • Step 12 – Then it’s ready to slice, serve and enjoy!

Expert Tips 

  • Blueberries – Toss the blueberries with the flour before mixing them into the batter ensures that they don’t sink when added to the baking pan.  
  • Combining Ingredients – When combining the ingredients make sure to not overmix the batter. This will create a dense bread if the batter is overmixed.
  • Adding Glaze – If you are adding the homemade glaze to the bread, make sure to allow the bread to cool for best results.
  • Baking Dish – Before pouring the batter into the loaf pan, make sure to spray with cooking spray. We also recommend lining the pan with parchment paper to easily remove the bread from the pan for serving. This also helps make cleanup a breeze.
