I love traditional egg rolls but they really aren’t that good for you with all of the frying and such. This instant pot southwest egg roll in a bowl is a delicious solution

The pressure cooker gets dinner on the table in literally minutes! I thought at first the kids might miss the actual egg roll wrapper but no one said a word. The cabbage really helps to stretch the meat and makes this meal so frugal. Plus, you can easily use what type of meat you have in the freezer or can get on sale that week.

How to Make Instant Pot Egg Roll in a Bowl

  • Step 1 – Turn the instant pot to the sauté setting.

Step 3 – Add the minced garlic and ground ginger and cook for approximately 1 minute.

  • Preparing Veggies – One of our favorite time saving tips is to use a small food chopper or food processor to quickly and easily chop onions. If you do not have one of these, I highly recommend them. They are such a time saver and you make cooking so fast and easy.
  • Freezing Veggies – Learn and  how to freeze onions and also how to freeze peppers to save so much time in the kitchen! Lots of the recipes we cook call for onions and peppers so this is such a great time tip that we use frequently.
  • Instant Pot Recommendation – I am using an 8 quart Instant pot but you can use a 6 quart if you prefer. I use my instant pot all the time and it’s become one of my favorite kitchen appliances.

Yes, you want to set the cooking time to zero minutes.  The meal will cook as the instant pot comes to pressure. 
Instant Pot Size: This meal is best made in a 6 quart or 8 quart crock pot. 
You can easily use ground turkey, ground chicken or ground beef instead of the pork in this recipe.  If using beef, make sure to drain off any excess grease by sautéing the beef before adding the rest of the ingredients. 
Refrigerate the ingredients in an airtight container for up to 4-5 days.

    Iโ€™ve had the regular Asian style egg roll in a bowl and loved it so figured Iโ€™d try this and OMG lemme tell you, it was worth a try!! My hubby and I ate practically all of it first night it was so good lol he put it in some whole wheat tortillas and I just added sriracha on top. Yummm, def making this one again!
