I have been so intrigued with ice cream bread so decided to try it. The kids are so glad that I did and declared this Ice Cream Bread Recipe amazing. Ice Cream bread is perfect when you want dessert but don’t have many ingredients.

You can whip this easy ice cream desserts together with only 2 ingredients and have the best bread. Plus, it is so pretty with the sprinkles! This is one of my favorite desserts to make. You may also love to top it with Peanut Butter Ice Cream Topping.

I bet you already have what you need to make this. With only 2 simple ingredients, it is so easy to make. You can even leave off the sprinkles if you do not have them. They are totally optional.

We love this sweetness of this recipe when we want a treat but don’t have many ingredients. It is also perfect when you just don’t have a lot of time but want something sweet or an afternoon snack.

I was quickly won over and now I can’t wait to make this bread again. It is that good!

  • Change Ice Cream Flavors – You can use your favorite flavor of ice cream such as strawberry, chocolate and anything you like.
  • Butter Pecan Ice Cream – Use butter pecan ice cream and top the bread with chopped pecans.
  • Chocolate Ice Cream Bread – Use Chocolate ice cream and top with chocolate chips.
  • Strawberry – Use Strawberry Ice Cream and top with white chocolate chips
  • Mix-Ins – Use different sprinkles. Sugar sprinkles are fun or try different colors of the rainbow sprinkles.

How to Make Ice Cream Bread

Step 1 – Set the ice cream out and allow it to melt slightly.

Step 2 – Mix the melted ice cream and 1 ½ cups of self-rising flour in a large mixing bowl.  Mix by hand until the ingredients are well combined with a rubber spatula.  The batter will be slightly lumpy.

Step 3 – Spray a 9X5 loaf pan with a non-stick cooking spray. Pour the mixture into the pan and add sprinkles if you prefer. Bake until a toothpick inserted in the center comes out clean.

Step 4 – Cool loaf of bread on a wire rack for several minutes then flip it out of the pan and allow it to cool completely on the rack. Slice, serve and enjoy.

Expert Tips

  • Combining Ingredients – Combine ingredients with a spatula or wooden spoon. Mix the ingredients until there is no lumps. But make sure to not overmix the batter.
  • Prepared Pan – Before adding the ice cream mixture make sure to spray the pan with cooking spray to prevent the bread from sticking. You can even line with parchment paper to easily remove the bread from the pan to easily slice.
  • Mini Muffin Pan – This two-ingredient ice cream bread can easily be prepared in mini muffin pan. This would be a great quick bread to hand out as gifts.

How Long to Bake Ice Cream Bread

Baking time will vary depending on the pan that you use. But we baked out bread for about 45 minutes. We used a toothpick to make sure the center was baked all the way through.

If the toothpick comes out clean, then the bread is finished baking.

No, you need to use self rising flour for this bread recipe. You can make your own self-rising flour by mixing 1 ½ all purpose flour with 2 ¼ teaspoons of baking powder and ¼ teaspoon salt.

No, you want to use full fat ice cream. The recipe needs the fat to get the desired results while baking.

  • Preheat the oven to 350 degrees F.
  • Set the ice cream out and allow it to melt slightly.
  • Mix the melted ice cream and flour in a large mixing bowl. Mix by hand until the ingredients are well combined. The batter will be slightly lumpy.
