I’m excited today to show you how to make this hamburger casserole. My kids devoured this easy dinner idea. It is the best beef casserole we have made and I think you will agree.

This hamburger potato casserole is easy to make and tastes great. You can easily assemble this ahead of time and then place in the oven when you are ready to eat.

Ingredients

Hamburger Casserole ingredients - potatoes, ground beef, cream of mushroom soup, milk, cheese
  • Small Russet Potatoes
  • Lean Ground Beef, browned
  • Cream of Mushroom Soup
  • Milk
  • Shredded Cheddar Cheese (we used a colby jack mix, but cheddar would be great too)

Variations Ideas

  • Cheese – Feel free to change the cheese to what you prefer. Monterey Jack, sharp cheddar cheese, mozzarella cheese, or pepper jack cheese.
  • Meat – Ground beef works great in this recipe. But you can also use ground turkey, ground chicken or Italian Sausage.
  • Creamy Soup – Instead of cream of mushroom soup use cream of chicken soup.
  • Toppings – This ground beef casserole is delicious with your favorite toppings. Top with sour cream, diced avocado or salsa.

Step by Step Instructions

  • Step 1 – Preheat oven to 350 degrees.

Step 2 – Brown your ground beef, drain and set aside in a large skillet.

Step 3 – Peel and slice potatoes and set aside. We use this easy mandoline slicer to cut our potatoes quickly.

Step 4 – In a mixing bowl, combine cream of mushroom soup, milk, salt and pepper to taste. Mix well. Set aside.

Step 5 – Spray a 9×13 baking dish with non stick spray. Layer in the pan, potatoes, beef, soup, and cheese. Then repeat. Top with remaining cheese.

Step 6 – Cover with ground beef mixture aluminum foil and bake for 1 hour in the preheated oven.

Step 7 – Remover foil and bake another 30 minutes until potatoes are fork tender.

  • Step 8 – Allow it to sit for 10 minutes, then cut and serve.

Recipe Tips

  • Prepare Ingredients – When slicing the potatoes, try to make them about the same size so that it cooks evenly.
  • Baking Dish – Prepare the baking dish by spraying with cooking spray to help with cleanup and serving the potato casserole.
  • Cooking Time – Cooking time will vary based on your oven and the potatoes. You will know the casserole is done when the potatoes are fork tender.

Serving Suggestions

I personally like to serve it with a side salad because that makes dinner done with no extra work. However,  steamed broccoli (see how to steam broccoli in the microwave easily) would also be amazing without any extra work.

Green beans also taste great and make a simple side dish as well. This meal is also good with asparagus.

How to Freeze Casserole

Now this is an easy freezer meal. However, raw potatoes don’t freeze that great, so I suggest you replace the potatoes with a package of frozen hash browns. Layer just like you would with the hash browns. Cover with foil and freeze.
Then allow it to thaw in your refrigerator overnight and cook according to directions above. If it is still frozen in the middle cook with it covered for 1 ½ hours and then 30 minutes uncovered.

How to Store Leftovers

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheat the leftovers in the microwave or in the oven depending on how much you have leftover.

    This recipe is awesome. I make freezer meals for my elderly mom and this is a winner. It cooked up very well in the exact amount of time the recipe called for. I did add cooked fresh green beans to the recipe because she needs to eat more veggies and it worked perfect in this recipe. Also added some onion powder and garlic powder to the soup mixture.     My husband loved this easy casserole! I made it for the second time last night, but since I had leftover Italian sausage, I subbed that for the ground beef. I seasoned with garlic and onion powders and salt and pepper. It was quite good, but we preferred the ground beef. This will be in my meal rotation for sure. I may experiment adding a frozen veg to the soup mixture, like corn, green beans or peas and carrots.

    I cubed my potatoes because I find slices stick together making it difficult to get the sauce distributed. I made my own cream of mushroom soup adding a tbsp of Better than Bouillon chicken and fried my potatoes before adding. This allowed me to season them and bake for 35 minutes which works out much better for me. May sound like a lot of changes but the character of the recipe remains the same. Good recipe and I’ll be making frequently.

    Love this recipie but Iam on a GLUTEN FREE diet so I use the gf soup available at Walmart in the gf section. They have cream of mushroom and a cream of chicken. I do like to half the milk with heavy cream for a thicker sauce. This is an easy recipie and left overs are great

    I added 1/2 c. diced onion to the ground beef as it was cooking. I used my Madelyn to slice 2 carrots at the same thickness as the potatoes and omitted 1 potato. Followed the original recipe but substituted original Almondmilk for the regular milk and used shredded vegan cheese for the cheddar. I didn’t read the instructions too well and only had about an hour to get my meal on the table, SO, I placed my casserole with a glass lid in the microwave for 7 minutes, then transfer it covered with aluminum foil to my oven preheated to 375 degrees. Cooked it for 45 minutes, removed the foil and baked for 10 minutes. Let it set for 10 minutes before serving. Love casseroles that taste like you had worked on it for hours. YUMMY!!!

    What a delicious casserole! I used 1 can mushroom soup and 1 can mushroom with roasted garlic soup. I made a beef casserole and a vegetarian casserole (with morning star griller crumbles). Both were delicious. This recipe is a must-try!

    Delicious and now one of our favorite meals. I used ground Turkey as this was what I had on hand and added diced onion and green bell pepper and tsp minced garlic to the meat while browning. I also added diced carrots and celery that I boiled in chicken broth to soften. Followed the rest of recipe. Turned out great!!

    Rachel, if you had used sliced potatoes in the crockpot you wouldn’t have had that problem, the frozen hash browns arent meant to cook that long!

    I have made this several times and family loves it! The only thing I do differently is add a small finely chopped onion & 1 clove of minced garlic. I also use frozen shredded hash browns instead of sliced potatoes. I do not recommend putting it in a crockpot. I tried it today since I live in southeast Alabama & didnโ€™t want to heat up the house more using the oven. I layered everything & cooked on low for 5 hours. It turned out mushy & was not good at all. I thought Iโ€™d share the experience since some wondered about using a crockpot. Definitely stick with using the oven & itโ€™ll turn out delicious every time.

    Patrice – If you still use a 9X13 pan than I would cut the time in half as well. If you are using a smaller pan, than I would keep the time the same since the casserole will be thicker.

    I just put this in the oven. I did substitute 1/2 pound of hamburger with pork, only because I had it in the freezer and needed to use up the pork. I also added 1/2 a large onion to the meat while it was cooking. And, substituted cream of chicken – again, because I had it in the pantry. I am anxious for it to finish cooking.     I make this same casserole with ground beef or any leftover meat I have but I do add onions. I have also added frozen sweet peas with carrots which my family likes. This is even good meatless.

    This was so yummy thank you! I needed some comfort food and this good old fashioned casserole did the trick. I used cream of potato cause I’m not a fan of mushrooms but otherwise followed your recipe and I wouldn’t change a thing. The hubs loved it too and he can be picky!
