I love using cream soups but I don’t always have it in the pantry.  It all started when I needed cream of chicken soup for a recipe and whipped up this homemade cream of chicken soup.  It was such a success that I started making all sorts of things.

Ingredients

  • Butter – We used unsalted butter
  • All-Purpose Flour – Feel free to use a gluten free flour
  • Chicken Stock – Use chicken broth or vegetable broth
  • Milk – You can also use Half and Half
  • Garlic Powder – If you are out, see The Best Garlic Powder Substitute
  • Onion PowderBest Onion Powder Substitutes – if you are out
  • Celery – Clean, chopped and Sauteed

How to Make Cream of Celery Soup Recipe

  • Step 1 – Melt butter in a medium saucepan.
  • Step 2 – Add the flour and whisk everything together until all the clumps are gone. You want everything to be well combined.
  • Step 3 – Pour the chicken stock and milk into the flour mixture. Keep whisking until the mixture is smooth. Learn how to make chicken stock and save money from the store bought version.
  • Step 4 – Add the seasonings- salt, pepper, garlic powder and onion powder.

  • Step 5 – Bring everything to a simmer until the soup begins to thicken. This usually takes only a few minutes so don’t step away from the stove. You definitely need to keep a close eye on this.
  • Step 6 – Add the celery as the last step. This is optional but you can also add finely diced onion with the celery to the mixture.

  • Step 7 – Remove from heat and that  is it!  I told you it was simple!

Expert Tips

  • Making Roux – You want to make sure to whisk the flour and melted butter together until it is completely combined. Then continue to whisk until the milk is completely mixed.
  • Add Seasoning – After adding in the seasoning allow the mixture to thicken by turning down the temperature.
  • Prepare Celery – Prepare the celery ahead of time by chopping into small pieces, removing celery leaves and washing. Then you will sauté celery in a saucepan with melted butter before adding to the soup mixture.

How to Store Homemade Cream of Celery Soup

Store in airtight container in refrigerator. My favorite is a mason jar. They are easy to reuse, inexpensive and I normally always have several on hand.

Feel free to use the container of your choice as long as it is air tight. I just prefer to use a mason jar.

Instructions

  • In a medium saucepan melt butter over a medium-low heat
  • Add in flour and whisk together until well combined
  • Add chicken stock and milk, whisk until smooth, about 1-2 minutes
  • Season with salt, pepper, garlic powder and onion powder
  • Bring to a simmer and cook until it begins to thicken, about 3-5 minutes
  • Add in celery
  • Remove from heat and allow to cool completely
  • Store in airtight container in refrigerator

    Each batch of the soup is a bit different so it’s difficult to put an exact size on a serving. 1 serving is approximately 1/6 of the entire amount. If using in a recipe instead of a canned soup, I recommend using the same amount of ounces as listed on a can (generally approximately 10.5 ounces).
