Cornbread Mix Recipe
Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/2 cup white sugar
- 1 teaspoon salt
- 3 teaspoons baking powder
Instructions
- Place all the ingredients in a bag. I will make 5 to 10 at a time. Make sure you write “Cornbread Mix” on the bags. Then store in your pantry.
- To bake your cornbread:
- Add 1 egg, 1 cup milk, and ⅓ cup vegetable oil to your mix.
- Bake in 400 degree oven for 20 to 25 minutes.
I used less sugar and added pickled jalapeños and cheese. It was excellent. I’ll never buy packaged cornmeal again!

The sugar helps make it moist and adds flavor, so if this was omitted then that is why it didn’t turn out well. This is a sweet cornbread recipe.
I followed the steps minus the sugar. We don’t eat sweet cornbread. What did I do wrong? It is a little dense and no flavor. Cornbread should have flavor plan too.
Love how easy this is to put together and love it with chili. I have added bacon and red peppers to the mix and they are very good too.
Hey Robin – You can use any milk alternative in this recipe and use the same quantity as in the recipe. I would try oat milk first and see if you like that but you can also use almond milk or soy milk in this recipe as well.

I made this today and it is absolutely delicious! But it is WAY too much batter to equal a box of Jiffy corn muffin mix. I made it in a 9 inch cake pan. It was light and moist and as sweet as we like it. I made several bags for the pantry. Will still need to find a good recipe to equal the 8.5 oz. Jiffy for some recipes I make.
Corn flour would not work in this recipe. Ground polenta would work great if you have that available in your area.
I live in England and I cant get yellow cornmeal, will cornflour taste the same or, is there anything else I can use?

Thank you for sharing this great recipe. It is the best I have found thus far! I use half the sugar for normal cornbread and only a teaspoon of sugar if I want a savoury cornbread. I have added dried fruits for a fruit bread, zucchini and/or mushrooms or sundried tomatoes and basil for savoury breads and it all works out perfectly. Just make sure the extra ingredients are as dry as possible or else use less milk. As long as the batter has approximately the same consistency every time you can’t go wrong! I am in the UK and cornbread is in and out of fashion here but not in my house! We love it!
Yes, this is for one batch. It is a lot of sugar, but we like our cornbread sweet. We have cut the sugar in half and it still tasted great.
