Expert Tips
- Type of Rice – It’s best to use day-old rice if possible. It prevents the dish from becoming mushy and helps achieve that signature hibachi texture.
- Cooking Hibachi Fried Rice – Use high heat and keep the ingredients moving in the wok or large skillet for authentic hibachi style flavor.
- Prepare Vegetables – We like to prepare the veggies ahead of time by chopping with a vegetable chopper and freezing them. We like using a vegetable chopper so the veggies are about the same size which helps to cook them evenly. See Can you Freeze Onions for tips on how to freeze veggies.
