I took my old Crockpot Chicken Tacos Recipe and converted it to a pressure cooker recipe for those nights that you completely forgot that you had to make dinner.

No thawing needed at all! It is so easy to make and your family is going to love it! This is the perfect weeknight meal when you need dinner in just minutes. Why This Recipe Works

This quick easy recipe will be a huge hit! Pressure cooking is so fast and the chicken is tender. You can also use chicken thighs in this taco recipe. The spices can easily be changed to what you prefer.

Serve the tacos topped with Monterey Jack Cheese, a squeeze of fresh lime juice and hot salsa for a delicious taco recipe that everyone will love.

Ingredients - Chicken breast, salsa, taco seasoning, chicken broth
  • Chicken Breasts – You can also use Skinless Chicken Thighs
  • Salsa – You can also make Homemade Salsa Recipe
  • Taco Seasoning – We use our  Homemade Taco Seasoning
  • Chicken Broth – You can add chicken stock instead of water when making this chicken if you prefer. If you prefer to make instant pot chicken tacos no salsa, I would use chicken broth to add flavor.

How to Make Chicken Tacos in the Instant Pot

Step 1 – Place chicken (frozen) in the instant pot.

Step 2 – Cover with chicken broth, salsa, and taco seasoning.

  • Step 3 – Place the lid on and make sure the knob is set to sealing position on the lid.
  • Step 4 – Click the manual button and turn it to 15 minutes (20 minutes if you are using frozen chicken breasts).
  • Step 5 – After the cook time, release the high pressure from the instant pot by moving the knob on the lid to the venting position from the sealing position.

Step 6 – Remove the chicken taco meat from the instant pot and shred with 2 forks.

Step 7 – Return the chicken to the instant pot and stir into the juices. Then switch the instant pot to the sauté setting and cook off the additional liquid in the instant pot.

  • Step 8 – Serve the chicken and sauce on your favorite taco shells or tortillas. Top with your favorite taco toppings. Enjoy!

Yes, to cook chicken in the instant it needs to be covered with at least ½ cup of broth or water.

How to Store Leftover Chicken

Store leftovers in an airtight container in the refrigerator. The leftovers will last about 4-5 days.
