How to Cook Steaks on a Griddle

  • Step 1. Preheat the griddle. Use medium-high heat or about 450 degrees F. You want the griddle to be hot to get a good sear on the steaks.
  • Step 2. Pat the steaks dry with a paper towel and season. Make sure that the steaks are dry and are at room temperature. Then season the steaks with the Montreal seasonings (approximately ½ Tbsp per steak) and black pepper.

  • Step 3. Prepare the griddle with oil. Spread the oil out onto the griddle.
  • Step 4. Cook the Blackstone steaks. Once the oil is hot, place the steaks on the griddle on top of the oil. Let them cook for 2-3 minutes and do not move them to get a good sear on the steaks.
  • Step 5. Flip the steak. Then use tongs to gently lift and flip the steak on the griddle grill. If the steaks are still sticking to the griddle, this means that they need more time and they are not ready to flip yet.
  • Step 6. Continue cooking. Once you flip the steaks, cook the steaks for 2-3 more minutes to sear the opposite side of the steaks.
  • Step 7. Lower the temperature. Then reduce the temperature on the griddle to medium heat. Cook the steak until they are done to your preference. Use an instant read meat thermometer to check the steak temperature based on preference.

Tips for Griddle Steaks

  • Room temperature. Allow the steaks to sit at room temperature for 30 minutes prior to cooking.
  • Hot griddle. The griddle needs to be preheated and hot before placing the steaks to ensure a good sear.
  • Flipping the steaks. If you try to flip the steaks and they stick to the griddle, it means they are not ready to flip. Continue to cook until they no longer stick.
  • Use a meat thermometer. This is the most accurate way to ensure the steaks are cooked to your preference. We use an instant read internal meat thermometer and it is well worth the purchase.
  • Allow to rest. After cooking, let the steak rest for 5 to 10 minutes. This will lock in all those natural and flavorful juices. We even like to top the steak with a compound butter made with garlic, butter, and sea salt for even more flavor.
  • Cut across the grain. By cutting steak across the grain, it will be easier to chew and more tender.

How to Know When Steaks Are Done

The best way to test for doneness is by inserting an instant read thermometer into the thickest part of the steak. Do this through the side, not the top of the steak.
