We love Homemade Lasagna at our house but do not like the time it takes to prepare it. That is why I love this Lasagna Soup recipe. We get all the flavors of the classic lasagna without all the work.
This recipe is loaded with all the meat, veggies and italian spices that we all love in a traditional Lasagna Soup. But we have added in Gluten Free noodles and I am almost sure that your family will not even notice.
This soup is perfect anytime of the week. The crock pot does all the work for you and you will come home to a complete meal. All you have to do is stir in your uncooked pasta and in about 30 minutes you are serving dinner.
Can you make this in the Instant Pot?

If you trying to remove gluten from your diet, this is the perfect recipe for you. Since all the ingredients are gluten free, all you have to do is use Gluten Free pasta.
Gluten Free pasta is very easy to find now at your local grocery store. This recipe is easy to prepare without a lot of work.
Ingredients for Gluten Free Lasagna Soup:
- Ground Beef
- Onion
- Red Bell Pepper
- Petite Diced Tomatoes
- Crushed Tomatoes
- Minced Garlic
- Italian Seasoning
- Beef Broth – You can use Chicken Broth instead if you prefer.
- Gluten Free Rotini Pasta
- Ricotta Cheese
- Mozzarella Cheese
- Parmesan Cheese
How to make Gluten Free Lasagna Soup:
- Brown the ground beef in a large sauce pan and drain off in excess grease. This Instant Pot Aura Crock Pot allows you to cook your meat right in the slow cooker if you would prefer. Add in some olive oil if you would prefer.
- Place the ground beef, onion, red bell pepper, diced tomatoes, crushed tomatoes, garlic, Italian seasoning and beef broth in a 6 quart crock pot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in the uncooked gluten free pasta. Cover and switch the crock pot to the medium high heat setting. Cook for 20-40 minutes until the noodles are cooked through and cooked to the tenderness that you prefer.
- Each crock pot cooks differently so adjust the cooking time based on how your crock pot cooks. You may need to reduce the heat.
- Spoon into bowls. Top with a tablespoon of ricotta cheese, and a handful of mozzarella and parmesan cheese.

Do I cook noodles before adding to crock pot?
No, it is not necessary to cook them. That is why I love this recipe. Everything is cooked right in the crock pot so you only have one pot to clean.
The Gluten Free pasta will cook perfectly in the sauce that was prepared and cooked all day.
What to serve with Lasagna Soup?
We love serving this Lasagna Soup with a simple side. Since this recipe is already a hearty, complete meal we like to keep it very simple.
- A side green salad serves perfectly with this soup.
- Look for Gluten Free Bread at your local grocery store. If your family wants regular a bread make this Crusty Artisan Bread.
- I like to serve steamed broccoli with this meal to get in more vegetables.
Can I freeze this soup?
Yes! My suggestion would be to keep the soup and noodles separately. You would freeze the soup in a freezer safe container. When you are ready to reheat soup, bring to a simmer. Then add your noodles.
This keeps the noodles getting mushy from being frozen.
Tips for the best Lasagna Soup:
- If you like Italian Sausage you can use it instead of ground beef. What I usually do is do half Italian sausage and half ground beef.
- You make this lasagna soup dairy free by using dairy free cheese.
- This is a great soup to sneak in those veggies. Mix in some Kale or Spinach for some extra vegetables. Your kids will never know.
- You can change the pasta if you prefer. You can Gluten Free Lasagna Noodles instead of the rotini pasta.
- This soup is great in the stock pot or dutch oven instead of the crock pot if you would prefer cooking on the stove top.
How to store leftovers:
We love this Lasagna soup leftover. We think it actually taste better the next day. I like to put it individual containers so that it is easy for my husband to grab as he heads out the door for lunches at work.
The leftovers are great refrigerated in an air tight container for up to 5-7 days. Skip the drive-through and enjoy a warm meal with these leftovers.

I have made this soup so many times!!! It is my absolute favorite, once it gets cold enough outside to enjoy soup again. I substitute ground pork for beef, just our preference. This soup is absolutely delicious and is so very easy to make!!!
