Step 6 – In a medium saucepan or deep fryer, heat 2-3 inches of vegetable oil to 350°F. Carefully place the coated egg whites into the hot oil and fry for 1-2 minutes, or until golden brown. Remove the fried egg whites with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

  • Step 7 – Spoon or use a piping bag the yolk mixture into the cavity of each fried egg white.
  • Step 8 – Garnish eggs with a sprinkle of paprika or parmesan cheese and serve immediately.

Expert Tips

  • Coating Egg – Make sure the entire surface is covered to prevent the egg from leaking out during frying.
  • Don’t over fry the eggs – They only need a few minutes to turn golden brown and crispy. Overcooking can make the filling too hot and ruin the texture.
  • Hot Oil – Make sure to properly heat oil to ensure that your egg whites turn out with a crispy texture.
  • Fried Egg Whites – Once you have fried the egg whites, place on a paper towels to ensure the excessive oil drains. You want to slightly cool the egg whites before adding the egg yolk mixture.
