You are going to love having such an easy dinner without any clean up. It is so delicious. Feel free to substitute chicken tenderloin or other cuts of chicken. Just use what you have or can get on sale!
We used potatoes and green beans but you can use any veggie combination you prefer. Corn is also delicious in this foil pack. You can switch out the onions for red onions or anything you have.

Ingredients
- Potatoes – We used russet potatoes but you can use any kind
- Green Beans – Use Frozen or Canned Green Beans. You can also make with broccoli or zucchini
- Boneless Skinless Chicken Breasts – You can also use chicken thighs
- Ranch mix – We love this easy homemade ranch mix
- Shredded Cheddar Cheese – Add in Mozzarella for even more flavor
- Bacon – Top with crumble bacon or strips of bacon

How to Make Bacon Ranch Chicken Foil Packet
- Step 1 – Get 4 pieces of aluminum foil and spray them with non stick cooking spray. Another option is olive oil.
- Step 2 – Place some of the potato slices on the center of each sheet of foil.
- Step 3 – Add the green beans on top of the potatoes and then the chicken breasts. Season with salt and pepper. Add the ranch mix and butter on top.
- Step 4 – Top with shredded cheddar cheese and crumbled cooked bacon. This is going to taste amazing with the ranch dressing and it’s so quick and easy.
- Step 5 – Fold up the sides of the foil. Then fold up the other sides to make a foil pack.
- Step 6 – Place on the grill over medium high heat or an campfire.
- Step 7 – Open the foil packets carefully and enjoy dinner.

- Foil – You will want to use heavy duty foil for a foil pack so it won’t break when you are grilling. You can use regular foil but I recommend you double wrap it to avoid it breaking in the oven.
- Prepare Vegetables – To cut the potatoes in bite sized pieces, we recommend using a mandoline slicer.
How do you Fold a Foil Packet?
Place the sheets of heavy-duty foil on a flat surface. Just fold up each of the sides of foil to seal edges. You now have a foil pack ready to go.
Finally, put the foil pack on the grill or a campfire. Just be careful when you open the packets. Serve and enjoy!

Store the leftovers in an airtight container in the refrigerator. The leftovers will last about 3-4 days. Reheat in the oven or take the chicken and potatoes out of the foil and reheat in the microwave.

Bacon Ranch Chicken Foil Packet
Ingredients
- 2 Large Chicken Breasts (filleted into 4 pieces)
- 2 Potatoes (peeled and slice into 1/4" slices)
- 2 cups Frozen Green Beans
- 4 tsp Ranch Seasoning Mix
- 4 Tbsp Butter
- 1 cup Shredded Cheddar Cheese
- 4 slices Bacon (cooked and chopped)
- 1/2 tsp Pepper
- 1/2 tsp Salt
Instructions
- Coat 4 large pieces of heavy duty foil with a non-stick cooking spray.
- Place ½ a potato (peeled and sliced) in the middle of each foil.
- Top with ½ cup of frozen green beans on top of the potatoes.
- Place on chicken breast on top and season with the salt and pepper.
- Sprinkle 1 teaspoon of Ranch Seasoning Mix and place one tablespoon of butter on top for each foil packet.
- Add ¼ cup of shredded cheese and the crumbled bacon.
- Fold up the sides of the foil. Then fold up the other sides to make a foil pack.
- Place on the grill over medium high heat or an campfire.
- Open the foil packets carefully and enjoy dinner!

For those who hate the mess of frying bacon. I always cook my bacon on a microwave bacon pan I found in Bed Bath and Beyond, I think. Had it a long time. Just lay the bacon in the pan, lightly cover with several layers of paper towel. Microware for 1 minute at a time until it cooks to your liking. The pan has raised ridges that keeps the bacon from cooking in the grease. When finished it takes a couple of seconds to drain the pan and put it into the dishwasher.

Cooking this for the first time on actual fire coals. Hope it’s as good as in the oven! For you guys asking I cook it in oven at 400 for 40 min. I put the foul packets on a cookie pan. I also use real bacon bits. We had some leftover ham from Christmas. Stick that in too! Yum! And I did dump out the extra liquid I’m love this!

I used this recipe for an after school culinary arts class offered to the students at our high school. Everyone really liked it and the only reason I gave it four stars is because it did take us longer to get it baked than the recipe called for so we were really pushed for time. We had to use the oven, but I am sure that this would be even more tasty on the grill!

Can you use frozen chicken breasts?
I think that this was probably from the chicken as chicken releases a lot of water while it’s cooking. I generally have a little liquid but not much when making this recipe. You can cook it a bit look and this liquid should cook off or you can drain it after the cooking time. Thanks!
