My entire family loves going to Mexican Restaurants and always get their fajitas. Making Fajitas at home saves me time, money and we think they taste better. This is one of our favorite main dish ideas anytime we have a family gathering and they are always a crowd favorite.

Why We Love Fajitas
This chicken fajita recipe is completely customizable. You can change the meat, the veggie and the seasoning to make it your own. We love to make it in a cast iron skillet for the best flavor which helps to keep the meat from drying out.
You will be surprised how easy this fajita recipe is and can be part of your meal prep for the week. Add your favorite side dishes to complete your meal.
Ingredients
- Boneless Skinless Chicken Breasts – You can also use Chicken Thighs
- Onion – I like to thinly slice the onions to add flavors with the other veggies
- Olive Oil – Use oil of your choice
- Lime Wedges – We like using fresh lime juice

- Paprika – We have also used smoked paprika for a smoky flavor

Variations Ideas
- Change Meat – The fajita seasoning can also be used to make steak fajitas or shrimp fajitas.
- Marinade – We like using a dry rub to season the chicken but you can also use a Fajita Chicken Marinade to make this dish.
- Spices – You can make this fajita seasoning with a variety of seasoning. Add ¼ teaspoon of oregano for added flavors.
How to Make Fajitas
Step 1 – Mix together the fajita seasoning ingredients in a small mixing bowl.
Step 2 – Place the sliced chicken into a large bowl. Sprinkle the fajita seasoning mixture on top and toss to coat the chicken in the mixture.
Step 3 – Preheat 1 tablespoon of olive oil over medium high heat in a large skillet. Add the chicken to the pan (you may have to work in batches depending on the size of your pan) and cook for 3-5 minutes until the chicken is cooked through. Remove Chicken from Skillet and stack on aluminum foil to rest.
Step 4 – Add the remaining olive oil to the pan. Stir in the onions and sliced peppers and sauté for 4-5 minutes, stirring them frequently over medium heat.
- Step 5 – Add the sliced chicken back to the pan and stir to combine with the onions and peppers.
- Step 6 – Squeeze the lime juice on top and then the fajitas are ready to serve and enjoy!
Expert Tips
- Preparing Chicken – We used chicken breast to make this recipe. We recommend slicing chicken against the graine with a sharp knife on a cutting board in about the same size pieces. This ensures that the chicken cooks about the same time.
- Cooking Chicken – Depending on how thick you cut the chicken slices, this chicken will cook in about 3-5 minutes. To ensure that you chicken is fully cooked with an internal temperature of 165 degrees, use a meat thermometer.
- Skillet – For the best texture and juicy center, we recommend cooking the chicken in a cast iron skillet. For the best flavor and a nice brown coloring on the chicken make sure to not overcrowd the pan. Depending on the size of the pan that you use, you may need need to work in batches.
What to Serve with Fajitas?

- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon cayenne pepper
For Serving:
