Ingredients

Ingredients - Graham Crackers, white sugar, butter, cream cheese, half and half, vanilla egg, peanut butter
  • Graham Crackers – You can also use Oreo Cookies to make crust..
  • Butter – We used unsalted melted butter
  • Cream Cheese – Make sure cream cheese is softened at room temperature

Variations Ideas

  • Chocolate – Top with chocolate chips or drizzling melted chocolate on top. Mini chocolate chips are also delicious on top and go great with the chocolate peanut butter combination. Chocolate sauce or chocolate ganache is also a delicious addition.
  • Reese’s Peanut Butter Cup – Top the mini cheesecake bites with mini reese’s peanut butter cup for even more flavor.
  • Make in a Muffin Tins – Instead of bars, you can use cupcake pans lined with cupcake liners and muffin cups if you prefer.

How to Make Peanut Butter Cheesecake Bites

  • Step 1 – Preheat oven to 325 and line a square baking pan with aluminum foil.

Step 2 – Use a food processor to finely crush graham crackers. Add sugar and butter and process for 10 seconds until coated well.

Step 3 – Pour into prepared pan.

Step 4 – Evenly press graham cracker crust into pan with the back of a spoon. Refrigerate.

Step 5 – Beat cream cheese in a bowl. Add sugar, half and half, vanilla, egg and ½ cup peanut butter. Beat well until smooth.

Step 6 – Remove crust from refrigerator and pour peanut butter cheesecake filling into crust. Smooth with the back of a spoon. Bake for 25-30 minutes or until center is no longer jiggly. Cool to room temperature and return, covered, to the refrigerator.

Step 7 – Cut bars into 16 squares. Microwave peanut butter then drizzle with a spoon over the cut bars.

Expert Tips

  • Preparing Crust – I use a small food processor to make the crust. If you don’t have one, I can’t recommend it enough because it’s such a time saver in the kitchen. If you don’t have one yet, you can use a ziplock bag and a rolling pin to crush the graham crackers.
  • Chill Cheesecake Bites – Refrigerate for at least 4 hours or overnight after baking cheesecake bites. This is the perfect dessert recipe to make ahead of time.
  • Prepare Baking Dish – To easily remove the cheesecake from the pan, make sure to line with aluminum foil or parchment paper. Then you can remove bars from pan by lifting up on foil and place onto a cutting board then cut cheesecake into bars.

How to Store Leftover Cheesecake Bites

Store the leftovers in an airtight container in the refrigerator. The leftovers will stay fresh for up to 4-5 days.

Can I Freeze Cheesecake Bites?

Place the cheesecake bites in a freezer safe container for up to 3 months. You can also flash freeze the cheesecake bites on a baking sheet in individual slices. Then freeze for about an hour. Once slightly frozen, then place in a zip lock bag or container. This way you can take our the amount you need. Thaw the cheesecake bites in the fridge when ready to serve.

  • 1/3 cup white sugar
  • 4 tablespoons butter (melted)
  • Ingredients for Filling:
  • 12 ounces cream cheese (softened)
  • 1/2 cup white sugar
  • 1/4 cup half and half
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 cup creamy peanut butter (plus 2 tablespoons for topping)

  • Preheat oven to 325 and line a square baking pan with aluminum foil.

Remove bars from pan by lifting up on foil and removing foil and bars in one movement. Place onto a cutting board and carefully remove foil and discard.
  • Cut bars into 16 squares.
  • Microwave 2 tablespoons of peanut butter for 60 seconds on 50% power, stirring every 15 seconds until smooth and liquidy. Drizzle with a spoon over cut bars and return to the refrigerator until peanut butter sets up.
  • Makes 16 bars.
