This chicken taquitos recipe is super easy to make. I love to get the kids to help to spread the Mexican shredded chicken onto the tortillas. We love to make these and the entire meal comes together very quickly without much effort.

- Cheese – Feel free to use any kinds of cheese that you prefer. We have used Mexican Blend Cheese, Colby Monterrey Jack Cheese and Shredded Cheddar Cheese. Make sure to shred cheese from a hunk as it taste better.
- Tortillas – We like to use flour tortillas, but you can also use corn or any type that you prefer.

How to Make Crock Pot Chicken Taquitos
- Step 1 – Get a small bowl and combine the cumin, garlic powder, chili powder, salt and pepper. Mix this together.
Step 2 – Place chicken breasts and the seasoning mixture in the crockpot. Add the water.
Step 3 – Cook on low for 4 hours. Once the chicken is finished cooking, take it out of the slow cooker and shred with 2 forks. The chicken will be so tender and very easy to shred.
Step 4 – Mix the cream cheese and part of the shredded cheese with the chicken. Keep stirring until the cheese is melted. The chicken will be warm and help the cheese to melt.
Step 5 – Finally, heat the tortillas up and spread the chicken mixture on each tortilla. Sprinkle with cheese and roll the tortilla up.

Crock Pot Chicken Taquitos
Ingredients
- 1 lb chicken breast
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup water
- 4 ounces cream cheese (cubed and softened)
- 3/4 cup shredded cheese
- flour tortillas
Instructions
- 1. In a small bowl, add cumin, garlic powder, chili powder, salt and pepper, mix well.
- Place chicken breast in the bottom of slow cooker. Pour the seasoning mixture and the water into crock.
- Cook on low for 4 hours.
- Remove chicken from slow cooker and shred with 2 forks.
- Mix with cream cheese and ¼ cup shredded cheese.
- Warm flour tortillas and spread a small amount of chicken mixture onto the tortillas.
- Sprinkle with remaining cheese Roll up.
