Ingredients to make Crock Pot Lasagna Soup

Ingredients for slow cooker lasagna soup:

  • Ground beef (you can also use ground turkey)
  • Onion, diced
  • Red bell pepper, diced
  • Diced tomatoes
  • Crushed tomatoes (you can also use a combination of marinara sauce and tomato sauce)
  • Minced Garlic
  • Italian Seasoning
  • Beef Broth
  • Lasagna Noodles
  • Ricotta Cheese
  • Mozzarella Cheese
  • Parmesan Cheese

How to make crock pot lasagna soup:

  • First, brown the ground beef over medium high heat.
  • Second place the ground beef in a 6 quart crock pot.
  • Add in diced onion and red bell pepper. Pour in the crushed tomatoes and the diced tomatoes.
  • Add in seasonings.
  • Third, pour in the beef broth.
  • Then cover and cook on low for 5-6 hours.
  • Remove the lid. Break the lasagna into bite size pieces and stir in.

  • Cover and cook on high for about 30 minutes until the noodles are soft.
  • Spoon into bowls. Top with a tablespoon of ricotta cheese, and a handful of mozzarella and parmesan cheese. I also like to sprinkle with fresh basil.

Instructions

  • First brown the ground beef in a large skillet over medium high heat and drain off the excess grease.
  • Then place the ground beef into a 6 quart crock pot.
  • Add in the diced onion and red bell pepper. Pour in the crushed tomatoes and the diced tomatoes.
  • Add in seasonings.
  • Pour in the beef broth.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Remove the lid. Break the lasagna noodles into bite size pieces and stir them in. I break them in over the crock pot so all the small pieces will fall directly into the crock pot.
  • Cover and cook on high for 30-45 minutes until the noodles are cooked through.
  • Spoon into bowls. Top with a tablespoon of ricotta cheese, and a handful of mozzarella and the shredded parmesan cheese.

    Great recipe, I tweaked it just a bit.
    Doubled the recipe but used 1lb hot Italian sausage instead of 2lb ground beef.
    I hate soggy noodles so I cook them separately & add into the bowls when ready. Also for freezing leftovers it’s better (imho) to add fresh cooked noodles when you are heating it up.
    Instead of broken lasagne noodles, I use Garafalo mafalda corta pasta (mini lasagne noodles)

    Next time remove the lid in the last 30 minutes of cooking time to remove some of the liquid.

    Super watery, I wonder about blending up all of the veggies for more of a sauce? Yummy flavors though.

    Add all the items added to the crock pot in steps 1-5 to a large stock pot or dutch oven. Simmer over medium high heat for 20-30 minutes until all the flavors are combined. Stir in the uncooked broken up lasagna noodles and cook to al dente (8-10 minutes). Watch closely and add more broth or water as needed as more liquid will cook off as it cooks on the stove top. I hope you enjoy it!

    Flavor wise this recipe is a 5/5. However when we made this it wasn’t “soupy” at all. Noodles literally sucked up all the liquid in the pot. Still tasted amazing, but ended up more or less like a lasagna casserole or a deconstructed crockpot lasagna.
    I would only tweak it to break up and cook the noodles before adding them in, but will definitely make this again!

    Made this today. Did switch the lasagna noodles for ditalini pasta. Just seemed like that’d be easier to eat. Will absolutely be making this again. It’s a new favorite.

    Kristen – It’s hard to put an exact size on it. Generally is approximately 1 1/2 cups but each batch is different.

    This sounds so yummy and easy! We’re trying it tomorrow! I was curious since I’m in the process of losing weight. How much is 1/6 of the dish? I saw 6 servings for the entire dish. Is it 1 cup? 1.5cups? Thanks!

    It’s hard to know without see it but I’m thinking it’s likely coagulated proteins that form pockets and rise to the surface of the soup. This is normal and fine to each or you can remove them or stir them back into the soup.
