Crockpot Chicken Chipotle Recipe:

Plus, did I mention how easy it is? The crock pot does all the work and you can come home to a delicious meal ready to enjoy. Yeah!

The chicken has a little bit of heat from the adobe sauce and chipotle peppers but not so much that the kids can’t enjoy it. It is the perfect meal for the entire family.

Ingredients needed - chicken breast, chipotle peppers, adobo sauce, tomato sauce, minced garlic, onion powder, dried oregano, cumin, chili powder, salt, fresh cilantro

Ingredients:

  • Boneless Skinless Chicken Breast
  • Chipotle Peppers (from a can of chipotle peppers in adobo sauce) 
  • Adobo Sauce (from a can of chipotle peppers in adobo sauce) 
  • Tomato Sauce
  • Minced Garlic – You can also use garlic powders.
  • Onion Powder 
  • Dried Oregano 
  • Cumin 
  • Chili Powder 
  • Salt 
  • Fresh Cilantro

All of the seasonings come together for such an amazing meal. The flavor is really delicious.

How to cook Chipotle Chicken in Slow Cooker:

  • Cut the chipotle peppers in half and remove the seeds from the peppers. 
  • Then add the Chipotle peppers with the adobo sauce from the can to a food processor.  Then add in the tomato sauce and minced garlic.  Blend under the mixture is smooth.  
  • Place the chicken on the bottom of a crock pot. Then pour the chipotle mixture on top and add in the seasonings (onion powder, dried oregano, cumin, chili powder and salt). 
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is shreddable. 
  • Once the chicken is done, shred the chicken and stir it back into the sauce in the crockpot.

  • Top with the chopped cilantro.  Serve as is or in tortillas or over rice.  Enjoy!

How to Serve Slow Cooker Chipotle Chicken:

  • Serve as is – You can eat this meal as is and it is delicious. This is a great way to enjoy it if you want to keep slow cooker chipotle chicken paleo. Chipotle chicken recipe paleo version is so tasty that I don’t even miss the rice.
  • White or Brown Rice – Now, my children love to eat this chicken over rice. You can also use brown rice. Learn how to cook brown rice in the microwave for a quick side. Brown rice is really tasty with slow cooker creamy chipotle chicken.
  • Cilantro Rice – We have also used this Delicious Cilantro Lime Rice Recipe. This cilantro flavor rice is perfectly paired with this chipotle chicken. I like to top with sour cream when I am ready to serve with some black beans.
  • Cooking Chicken – I like to check the chicken about the 6 hour mark. To chicken if your chicken is done, use a meat thermometer to check internal temperature. It needs to have a reading of 165 degrees.

Chicken Chipotle Variations:

  • Chicken – We used chicken breast in this recipe, but you can also use skinless boneless chicken thighs. Chicken thighs do not take as long to cook so adjust your time.
  • Tomato Sauce – If you want more of a tomato base and to help with the spicy based, you can add in tomato paste.
  • Chicken Broth – To add more liquid base to the chipotle chicken, you can pour in chicken broth or chicken stock.
  • Spices – The spices that are used in this recipe are easy pantry spices. There is no need to use fresh spices, you can use dry ground spices. You can easily add more if you prefer.
  • Sweetness – If you want to add sweetness to the mix, drizzle in some honey, maple syrup or some brown sugar. This makes the perfect honey chipotle chicken.
  • Lime Juice – For added flavor, squeeze lime juice when you are ready to serve.

How to Store Leftovers:

If you have Chipotle Chicken leftovers, they are easy to store in the refrigerator. Make sure to store in an air tight container. They will last about 3 to 4 days if stored properly.

How to Freeze:

If you like to meal prep as much as I do, you can easily freeze the leftovers or freeze it uncooked. Place uncooked ingredients or shredded chicken recipe in a freezer safe container. It will last about 3 months in the freezer.

Thaw in the refrigerator overnight to thaw. If your meal is uncooked, you can place in the slow cooker frozen.

Reheat leftovers on the stove top or in a microwave safe dish.

If you are looking for an easy chicken slow cooker recipe, this is the one I always make. It is made with easy ingredients and it is simple to make. I love meal prepping for the month and this meal is always in my freezer.

Recipe Notes

The chipotles add a smoky flavor to the meal but they do add heat as well.ย  If you are sensitive to spice, then only use 1 chipotle pepper. I freeze the remaining peppers and sauce so that Iโ€™m able to use them in a future meal or recipe.ย ย 
Refrigerate the leftovers in an airtight container for up to 5 days.

    The half a white onion. I just put it in the crockpot with the mix. It wasn’t specified in the recipe whatsoever, just listed as an ingredient. I know most tinga recipes like this put it together with the cooking ingredients so that’s what I did. But it might be confusing for others trying this recipe.

    Just wondering about the lime. In the instructions, it says to blend together all ingredients, except chicken. Then it also says to slice or squeeze lime over chicken before serving. Does the lime go into the blender, and you just meant add another lime before serving, or was that just misstated and you blend all ingredients together, except chicken and lime?
