Now you may be wondering but what about my kids? Even if you have kids that absolutely despise cauliflower, I bet they will like it. It doesn’t taste like white rice or brown rice, but topped with cheese, everything is better.

There is so much cheese in this decadent dish that it’s hard to even tell there is cauliflower in there too. Even my non cauliflower loving people enjoy this dish.

Whenever my family is wanting mac and cheese, I fix this delicious recipe and it is always a hit. My family loves to eat rice.

Ingredients for Cheesy Cauliflower Rice:

  • Riced cauliflower (see how to make cauliflower rice here) – or buy frozen
  • Butter
  • Garlic Salt
  • Cream Cheese
  • Milk
  • Cheddar Cheese, grated
  • Salt

How to make Keto Cheesy Cauliflower recipe:

  • Prepare pan – In a large skillet stir in the riced cauliflower, and butter on medium heat until butter is melted.
  • Add in Seasoning – Add in the garlic salt.

  • Stir in Salt – Season with the salt.
  • Serve and Enjoy – Serve immediately.

Yes, this recipe is keto friendly and a low carb rice side dish. Each serving is about 3 grams of net carbs. Make sure to shred your own cheese. Pre-shredded cheese contains other ingredients that are not low carb.

You will not find a better or more simpler recipe. This is such an amazing side dish to enjoy on the Keto diet and your weight loss journey. Another low carb rice alternative is shirataki rice or miracle rice.

Cauliflower Rice Keto Recipes

We like to save time and usse frozen cauliflower rice. But you can also make Homemade Cauliflower Rice if I have time. It’s very easy to do.

You will just need a head of cauliflower. You can use food processor like this, or you can even use an inexpensive food chopper. In a matter of minutes your fresh cauliflower is chopped up into a “rice”.

It does not take long at all to do this if you want to make your own cauliflower rice.

Make Low Carb Mashed Cauliflower Casserole:

The cream cheese makes it so rich and creamy. It is a little bit of comfort food in every single bite. Another idea is to use mashed cauliflower and make it more of a casserole. Either way it is so tasty.

Just put it all in a casserole dish and you are set for the perfect side dish. This would even be great for potlucks.

I try to always take one or more low carb recipes so I will have something to eat at parties and such. Top with a few green onions, extra cheese and maybe some bacon. The options are endless.

How to Store and Reheat Cauliflower Rice:

If you have leftovers, store them in an airtight container in the refrigerator. The cauliflower rice will stay good for about 4 -5 days.

To reheat, place in a microwave safe dish and reheat. Start by heating at 1 minute intervals and until hot.

Our entire family loves this side dish and that includes the kids. It truly is a hit with everyone which sure makes dinner time easier around here for me.

If you are not following the Keto diet or maybe want to do this for the kids, throw a topping on this recipe. It would be great with ritz crackers with butter all crumbled up. We like to mix it with our stir fry.

  • In a large skillet, melt butter and stir in the riced cauliflower on medium heat.

    I’ve enjoyed cheesy cauliflower rice in some frozen meals, but this was my first attempt at making it myself. Delicious! I used a frozen cauliflower rice medley that included chopped carrots and peas and substituted pepper jack cheese for cheddar. It gave it a nice kick. I read one of the comments that suggested using the leftovers for breakfast with an over easy egg and now I can’t wait for the morning! Yum!

    I would sauté it in the pan at the beginning of the recipe instead of the fresh cauliflower, but it will take just half of the time as frozen always cooks faster for me, then follow the remaining recipe from there. Thank you!

    Melissa- It’s hard to put an exact measurement on it as each batch is different. The entire recipe is for 6 servings. Mine are generally about 2/3-3/4 of a cup. I hope you enjoy it!
