Family friendly Keto Cauliflower Rice:
Now you may be wondering but what about my kids? Even if you have kids that absolutely despise cauliflower, I bet they will like it. It doesn’t taste like white rice or brown rice, but topped with cheese, everything is better.
There is so much cheese in this decadent dish that it’s hard to even tell there is cauliflower in there too. Even my non cauliflower loving people enjoy this dish.
Whenever my family is wanting mac and cheese, I fix this delicious recipe and it is always a hit. My family loves to eat rice.

Is Keto Cauliflower Rice Low Carb?
Yes, this recipe is keto friendly and a low carb rice side dish. Each serving is about 3 grams of net carbs. Make sure to shred your own cheese. Pre-shredded cheese contains other ingredients that are not low carb.
You will not find a better or more simpler recipe. This is such an amazing side dish to enjoy on the Keto diet and your weight loss journey. Another low carb rice alternative is shirataki rice or miracle rice.
Cauliflower Rice Keto Recipes
We like to save time and usse frozen cauliflower rice. But you can also make Homemade Cauliflower Rice if I have time. It’s very easy to do.
You will just need a head of cauliflower. You can use food processor like this, or you can even use an inexpensive food chopper. In a matter of minutes your fresh cauliflower is chopped up into a “rice”.
It does not take long at all to do this if you want to make your own cauliflower rice.
Make Low Carb Mashed Cauliflower Casserole:
The cream cheese makes it so rich and creamy. It is a little bit of comfort food in every single bite. Another idea is to use mashed cauliflower and make it more of a casserole. Either way it is so tasty.
Just put it all in a casserole dish and you are set for the perfect side dish. This would even be great for potlucks.
I try to always take one or more low carb recipes so I will have something to eat at parties and such. Top with a few green onions, extra cheese and maybe some bacon. The options are endless.
How to Store and Reheat Cauliflower Rice:
If you have leftovers, store them in an airtight container in the refrigerator. The cauliflower rice will stay good for about 4 -5 days.
To reheat, place in a microwave safe dish and reheat. Start by heating at 1 minute intervals and until hot.
Keto Cheesy Cauliflower is a family favorite:
Our entire family loves this side dish and that includes the kids. It truly is a hit with everyone which sure makes dinner time easier around here for me.
If you are not following the Keto diet or maybe want to do this for the kids, throw a topping on this recipe. It would be great with ritz crackers with butter all crumbled up. We like to mix it with our stir fry.
But seriously this recipe is so good that even the kids do not need all that extra topping. The cheese sauce is so creamy with the cheddar and cream cheese.

Tried this tonight and it was amazing. Really elevated rice cauliflower.
I’ve enjoyed cheesy cauliflower rice in some frozen meals, but this was my first attempt at making it myself. Delicious! I used a frozen cauliflower rice medley that included chopped carrots and peas and substituted pepper jack cheese for cheddar. It gave it a nice kick. I read one of the comments that suggested using the leftovers for breakfast with an over easy egg and now I can’t wait for the morning! Yum!
Delicious! I hate cauliflower, but my husband is pre-diabetic so we’re making better choices. I added a ton of fresh cracked pepper and chopped up crispy bacon!
This was so good and so easy!east!! Will definitely be making again. I used heavy cream instead of milk. I threw it under the broiler for a few minutes to brown the top.
This was amazing! I am not a cauliflower person AT ALL. I am not a fan of most recipes that use it but I keep trying new recipes hoping for one that I will like and I definitely found one here! This was delicious. If I wasn’t the one who made it I wouldn’t have even known that this was made with cauliflower. Thank you so much for this recipe!
Love this recipe….looks and tastes great and so good for us!!!
Okay this recipe is awesome! I was looking for a good way to flavor up cauliflower rice and so glad I found this. Will be making again!
I make this fairly often. We really like it. Tonight I decided to try something different and I riced some broccoli and made the dish with half cauliflower and half broccoli. Really good! Puts a new spin on it.
I’m so glad you enjoyed it Jennifer – Thanks for sharing!
New favorite keto comfort food and so fast and easy! Used almond milk because that’s what I had, came out great!
I’m so glad you enjoyed it!
I made this with the frozen, added some leftover broccoli (chopped it), then followed the recipe. We loved it! Thank you ?
I’m trying to find a good alternative to mac and cheese and I found it here! I made it with fresh bagged cauliflower rice – will try it with frozen next time given the great reviews here.
I would sauté it in the pan at the beginning of the recipe instead of the fresh cauliflower, but it will take just half of the time as frozen always cooks faster for me, then follow the remaining recipe from there. Thank you!
How would I use frozen riced cauliflower with this instead of fresh please?
I just season it with the salt once it’s cooked. I’ll update the recipe to clarify!
I see salt listed twice at the end of the recipe but no mention of any salt in the directions? Am I missing something? Can’t wait to try this!
I’m so glad you loved it!
Made tonight it was the BEST Cauliflower recipe I have found! It was to die for!! Just excellet
Thank you so much!!!
Awesome! I’m glad your family loved it!
Even my veggie haters ate seconds and thirds! i made the recipe exactly as written and will definitely make again. Just like with mac and cheese, there are many add ins that I will try such as tomatoes with green chilis, broccoli, and bacon! Thank you for this recipe.
I usually reheat it and it works great. Thanks.
How well does this reheat for leftovers?
Made this with hwc so good. Leftover for breakfast with egg overeasy. Reminds me of Cracker Barrel hash brown dish.
Good idea!
I’m glad you loved it!

Quick, easy and delicious recipe. I skipped the butter, cooked about 4 strips of bacon and then cooked the cauliflower in the bacon grease. I’ll definitely be adding green onions next time!

What a delicious recipe!! Made this tonight, for my wife and I. It was a fantastic dinner and this Easy Cheesy Cauliflower Rice was very rich and filling side. The flavor reminded me of a twice baked potato. I will definitely be making this again and again!

This was so awesome! I used heavy whipping cream bc I was out if milk and I added a pouch of tuna and it was amazing. It tasted like the cheesy tuna helper!! Thanks!
Yes, I think heavy whipping cream will taste great in this. I haven’t tried that yet, so let me know how it turns out.
Will this work as well with heavy cream instead of milk? It looks amazing!! Just worried about the extra sugar!!
Yum! I love the idea of adding broccoli. Thanks for sharing!
Made this and added some broccoli as well!! Not identical, but reminded me of cheese, rice, and broccoli casserole! Yum! Thanks for sharing!!!
Melissa- It’s hard to put an exact measurement on it as each batch is different. The entire recipe is for 6 servings. Mine are generally about 2/3-3/4 of a cup. I hope you enjoy it!
Awesome – I’m glad you liked it Brittany!
I used frozen riced cauliflower that I microwaved and then sauteed as directed. It was sooo good. Definitely a cross between cheesy grits or mac n cheese. Sprinkled crumbled bacon on top! Yum. A smoky cheese would be an amazing addition, too.
What amount is a serving size? 1/2 cup?
So delicious! Craving shrimp and grits since i started low carb – this will serve as my “grits” for sure!
Wow, this was yummy!! I don’t generally have a lot of luck with mashed cauliflower, so this recipe (mostly because of its simplicity) caught my eye. Made it to go with keto meatloaf and it was a huge hit! Thanks for a fabulous go-to side dish!
