  • Peppers – I like to cut the peppers in a large strips so that it doesn’t get mushy while it is cooking.

Can I use a Different Kind of Steak?

Yes, you can different cuts of beef. These are my recommendations:

  • Flank Steak
  • Beef Stew Meat
  • Round Steak
  • Any thinly slice steaks

Substitutions and Variations:

  • Peppers – The recipes calls for green peppers and red peppers. But I have made this with just green bell peppers and it still turned out amazing.
  • Onions – If you are out of fresh onions, you can add in a tablespoon or two of minced dried onions for an easy substitutions.
  • Change the meats – You can easily change the meat to what you have on hand. Cut the meat into strips or leave it as a whole piece.
  • Stir-Fry – Make this crock pot recipe into an easy stir-fry recipe. Cook the ingredients in some olive oil in a skillet or wok for a quick and easy recipe.
  • Bouillon Cubes – We recommend using beef broth, but you can use water and toss in some bouillon cubes for added flavor.
  • Mushrooms – Mushrooms can be added to this pepper steak recipe. If you prefer, you can also cook the mushrooms in a skillet and serve over the top when the recipe is finished cooking.
  • Red Pepper Flakes – Add in red pepper flakes if you prefer your dish to be a bit spicy.
  • Worcestershire Sauce – To add a bit of tangy and deep flavor, you can mix in a tablespoon of Worcestershire Sauce.

  1. Carrie Barnard says:

Thank you so much Vicky! I’m so glad you’re enjoying our recipes!

  2. Vicky says:

I made this and and it was deelish! I added a few shakes of toasted sesame oil, mushrooms, peppers, and sliced water chestnuts. Next time I’ll double the sauce. I’m enjoying your site.

  3. Carrie Barnard says:

Either way works. This recipe is very forgiving, and the cornstarch is just to thicken the sauce.

  4. Diana says:

Want to make tomororw! But confused, AFTER we are done cooking it, then we add the corn starch and cook it another 30 mins OR is it the last 30 mins of crock pot time?

  5. Alan Brown says:

    5 stars
This came out great. I did however thickened the gravy a little more than your picture. Also I added 5-spice because I don’t always have ginger and brown sugar available. All in all, a success! Plus, it gave me a meal for another day. Using the crock-pot allows you the freedom to make other things in the meantime and it makes the meat so much more tender if you need to use a cheaper cut of meat. Thanks again, this was a keeper!

  6. Carrie Barnard says:

Yes, you can. If using leftover steak, I would only cook on low in the crock pot for 1-2 hours just to heat the leftover steak through and combine it with the other ingredients.

  7. Melissa FRIZELL says:

Can I use left over steak for this?

This one is really good what I did different was I rolled the stew beef in flour and browned it before I put it in the crock pot, makes the meat really tender, And instead using a broth use a brown gravy and a beef gravy packets 1 of each. And I omitted the ginger and cornstarch step.

  12. Anthony Bartolo says:

I made this, this past Saturday for dinner. While my grands picked out the peppers, they loved it and had seconds. My two adult kids also had seconds. So, next time I’ll double the recipe. This was quick, easy, minimal hands on and delicious.

  16. Donna says:

Just made the pepper steak recipe. Delicious!

  17. Carrie Barnard says:

You can mix 2 tablespoons of cornstarch with 1/4 cup water or broth. Stir together and then stir into the crock pot. Cook on high for about 30 minutes uncovered or until thickened.

  18. Len Blackledge says:

I’m making your pepper steak recipe. How can I make the broth a little thicker?

  19. Carrie Barnard says:

You can actually use either one.

  20. Kat says:

Good recipe, but in the video you use been STOCK but in the list of ingredients you use beef BROTH- they are similar but still different, so its a tad confusing which one you’re actually supposed to use…

  21. Patty says:

    5 stars
Such a good recipe! It’s been one of stand by recipes for a while now. Easy to fix and just let it go in the crockpot. I usually don’t put the peppers and onions in until a couple of hours before it’s finished, that way they don’t get as mushy.

  22. Jean Sutton says:

My liquick was all very watery? Had to pull out all the liquid and thicken it with cornstarch!

  23. Rog says:

    5 stars
Thank you so much for your recipes. I really enjoy them. Most of the recipes are easy and don’t require a lot of ingredients. I’m a diehard crockpot user. Keep up the great work!!

  24. Tracey Babcock says:

I made this yesterday and it was delicious! I used teriyaki sauce because I did not have soy sauce. My husband is very picky and he does not like Asian food, typically, but he loved it! The teriyaki probably made it a little more sweet and a little less salty. I served it over cooked rice. It only took 4-1/2 hrs on low in my crockpot. The meat was very thinly sliced and I used have the meat ( probably about 12 oz). My husband said it’s a home run! It earned a hand written recipe card in my recipe box!

  25. Patricia Galapon says:

    Yum

  50. Carrie says:

Yes, I would cook the roast with the seasoning and leave the peppers out. Cook on low for 8-10 hours or on high for 4-5 hours. Then shred the beef, stir in the peppers and cook on high for 30-60 minutes until the peppers are soft. I hope it works out for your daughter’s birthday and that everyone enjoys it!

  51. Alyse says:

Is there a way I could make this with a big beef roast for a party/ large mass qty! Would love to make this for my daughters bday!

  52. Carrie says:

  69. Katie says:

    5 stars
Delicious! I didn’t measure my seasonings as I always add more than most recipes call for. Splashed a little extra soy in there as well. It was perfect! For a gravy, I melted 1.5 tbs of butter, stirred in 1/8 cup of flour and cooked on med until it made a thick paste. Then I spooned in a cup or 2 of the liquid from the crock pot. Soooo good y’all!

  70. Carrie says:

    Thank you so much! 🙂

  79. Fiona says:

    5 stars
This is so tasty and incredibly easy to make.

  80. GioLynn says:

Thank you for sharing your recipe. I found the recipe was easy but too much liquid. I did add cornstarch with water during last hour of cooking but it did not thicken up enough. Flavor was good, vegetables very soft. I will make again but I will add bay leaf or red pepper flakes next time for more flavor and save some vegetables to add at end of cooking.

  81. Carrie says:

    I hope you enjoy it!

  82. Mary Jane says:

I’m going to try this. Thank you so much for the nutrition information. My husband has late stage kidney disease, and we have to carefully calculate his diet, especially his intake of sodium and potassium. This made it so much easier for me, because I didn’t have to look each ingredient up. From the sound of the recipe, I am giving it 5 stars, untried!

  83. Carrie says:

I’m so glad you loved it!

  84. Leslie says:

This is my new favorite dinner to make…I like things spicy so I added some crushed red pepper and instead of measuring the other spices I just sprinkled them in generously. I also added another big spoonful of brown sugar to balance it out. Made it this way a few times now and it is really good!

  85. Jenna says:

    5 stars
Delicious recipe Carrie, I can literally have rice with any dish. I tried your crock pepper steak recipe and it was very delicious. I had also experimented with something with the dish. Actually, I didn’t have cornstarch so in replacement of that I used arrowroot for thickening the dish and it was a good replacement. I hope it will help anyone. Thanks for sharing.

  86. Marianne says:

Was the instant pot version ever posted?

  87. Nicole says:

Is it ok if the steak strips are still a little frozen? Thanks

  88. Carrie says:

Heidi – Yes, you can use flour or Wondra instead of cornstarch for thickening. I would mix it with the water first so it doesn’t clump in the crock pot. Also, yes, I think that would taste great reheated. My husband loves taking some of this left over for lunch.

  89. Heidi says:

I am making it right now. I put some peppers in first and I will add more later like you suggested. I am also going to add mushrooms when I add the other peppers so they don’t mush either. I have 2 questions. For thickening can I use flour or Wondra instead of corn starch, and if so do I still need to mix it in with water first? We won’t be able to eat it this evening I am making it for tomorrow night. Will it still taste as good reheated tomorrow? Thanks

  90. Carrie says:

Yes, you can cook on high for 2-3 hours until it’s cooked through. Thank you.

  91. Carrie says:

Awesome to hear! Thanks for sharing.

  92. Marjun says:

    5 stars
I made this because I had an appointment for a scan today and it had to be easy for my husband. It was very good and I am sure I will make it again another time. ??

  93. Danielle St Pierre says:

Can you cook this on high ???

  94. Carrie says:

The recipe serves 6 so a serving is 1/6 of the entire recipe. Thank you!

  95. Carrie says:

I think that the steak might get tough if it’s already cooked for this recipe. If using already cooked steak, I would sauté the other ingredients in a pan on the stovetop until the peppers are cooked to your preference and add in the already cooked steak in for last the 5 minutes of the cooking time. Thank you.

  96. Peg Stewart says:

Could I slice up already cooked left-over steaks instead of raw steak in this recipe? Thank you for your response.

  97. Carrie says:

I would probably start with just 1/2 of a teaspoon and then add more if you prefer it to be spicier just to be on the safe side. Thank you!

  98. Kevin says:

What is the serving size? Not specified in nutrition

  99. Andrea says:

I’m planning on making this tomorrow. I like my sauces and meats spicy but not too spicy, do you think adding a teaspoon of red pepper flakes would give it some but not much heat?

  100. Carrie says:

Yes, I think chicken would taste great in this recipe. Thank you!

  101. Sonja Peardon says:

I have made something similar to this for years. I use round steak, onions & stewed tomatoes in a can. Very good.

  102. Marsha says:

Can you do this with chicken?

  103. Carrie says:

Sounds awesome! Thank you for sharing.

  104. Pam Sisk says:

Just got mine in the crock pot. Was a little late getting started. I’ve started on high and will lower in a couple hours. I only had red and yellow peppers but pretty much went by your recipe. I added 1/2 of everything again because I had so much meat. All I had were two very thick NY strip steaks. Can’t wait to eat it, smells good already. Will also cook Chinese noodles for hubs and white rice for me and maybe some steamed broccoli. Will review later.

  105. Debra says:

    Instead
This dish was amazing !! 5 stars for me

  107. Carrie says:

    Sounds great! Thanks for sharing!

  108. Kevin says:

I’ve made this a couple times. Easy and delicious. My variations:

    I used elk steak.
Subbed red pepper with diced tomatoes.
Added a glob of diced garlic (a glob is four dabs, a dab is four smidgens, a smidgen is whatever the hell you want it to be).

Making it now and the house smells awesome!

  109. Carrie says:

I would use low sodium soy sauce and beef broth to lower the sodium count for this recipe. Thank you!

  110. Ellen says:

    5 stars
Is there a Way to lower to total sodium without compromising flavor. I have Meneiers diseases and require a low salt diet.

  111. Carrie says:

Yes, I think so. I would just brown the steak and then sauté with all the other ingredients until the steak is cooked through.

  112. Carrie says:

Thanks for sharing Karen. I’m glad everyone liked it!

  113. Karen says:

  115. Carrie says:

I would double all the ingredients if you plan on doubling the steak amount. Thank you 🙂

If I double the steak do I double the recipe plus the liquids ?
What if I wanted to make pan full for patty or get together?

  117. Carrie says:

Joni – I do not brown it. I hope you love this one. It’s one of my favorites! 🙂

  118. Joni says:

Do you brown the meat before putting it in the crockpot?

Your recipes are great , simple and yummy. They really bring in our intrest into cooking. Love them.

  120. Mary says:

I saw that someone wanted to know how to thicken it. Just says making it in a dutch oven on top of the stove hey, if your juices are not thinking enough use a teaspoon or a tablespoon of cornstarch mix it with water make a paste and add it to your recipe…( 5 minutes before you serve it) it will thicken

Can I substitute the steak with ground beef? If so do I brown beef first?

  129. Carrie says:

For this particular recipe they are cooked really well. Very soft, If your wanting firmer I would add a bit in the beginning for flavor then add some 1.5 hours before finished cooking,

  130. Annie says:

How soft will the bell pepper and onions be if I cut the bell pepper and onion about 1.5-2 inches thick? I just don’t want them mushy.

  131. Carrie says:

Yes, you definitely could ad them later if you are wanting them too be firmer. I would ad part in the beginning for flavor while cooking, then ad the rest later. thanks so much

  132. Carrie says:

Yes, I think that would work out well.

  133. Carrie says:

So Glad you enjoyed, thanks for the review

Do you brown your meat first? You don’t say in the recipe to brown it first before cooking the 5 hours but your pictures show the beef slices brown.

    Hello.

    What is “low” temperature..in Celsius?

  149. Sue says:

This is not a cheap meal here. The beef, peppers and rice is expensive here. It might be good but not cheap.

I made this the other night. It is delicious and I will be making it again, we had it with rice. I didn’t change anything in the recipe! It’s a keeper…

  161. Nic520 says:

How well do the bell peppers hold up at the end of cook time? Are they falling apart or still intact? Would it be OK to add them later during cook time? This looks so good I just want to do it right so my family enjoys it. I dont want the peppers coming out colorless and over cooked.

  162. Melissa says:

Is it possible to cook this on high to shorten the cook time? 🙂

  163. Rebecca says:

I bought the ingredients to make this today but never noticed it was suppose to be done in the crockpot. I guess I’m going to try and make it on the stovetop. Do you have any suggestions on how to cook it on the stove top?
