This slow cooker pepper steak recipe is very easy to make packed with flavor. Our entire family loves this Chinese pepper steak recipe and we have put it on the family favorite rotation list. I think your family will love this easy slow cooker recipe.
Serve over a bed of rice along side a salad and dinner is done. In fact, we make our rice in the Instant pot, so this dinner was crazy easy using my two favorite appliances.

Easy Recipe for Pepper Steak:
I don’t know about you, but our weeknights are so easy during the school year. Between soccer or basketball practice, church, and the kids games or school activities there isn’t a lot of time to cook dinner.
Which is why I tend to just love using the crock pot for an easy weeknight meal. This Crockpot Pepper Steak and Rice Recipe is perfect for those busy nights when you know you won’t have time to cook.
Thanks to this easy beef recipe you don’t have an excuse to make dinner even on the busiest nights.
Ingredients:
- Beef strips (I used thinly sliced round steaks and sliced them into strips)
- Green bell pepper, sliced thick
- Red bell pepper, sliced thick
- Onion sliced thick
- Beef Broth
- Soy sauce
- Ground ginger
- Garlic powder
- Black pepper
- Brown sugar
- Cornstarch
- Cold Water
How to Make Peppered Steak in Crock Pot:
- Step 1 – Add beef, peppers and onions in crock pot – Place the beef, bell peppers and onions in a slow cooker.
Step 2 – Season – Add the seasonings, brown sugar, and soy sauce over the beef and peppers.
Step 3 – Add Broth – Pour the beef broth in the crock pot. Stir to combine.
Step 4 – Slow Cook – Cover and cook on low for 5 hours or until the steak is cooked through.
Step 5 – Cornstarch Slurry – Mix together the cornstarch and cold water in a small bowl to make a cornstarch slurry.
- Step 6 – Thicken Sauce – Stir this mixture into the crock pot. Cook on high for 30-60 minutes until the sauce thickens.
- Step 7 – Serve and enjoy – Serve over a bed of white rice.
Tips for Easy Pepper Steak Recipe:
- Steak – Thinly slice the steak in about the same size strips so that it cooks evenly.
- Peppers – I like to cut the peppers in a large strips so that it doesn’t get mushy while it is cooking.
- Combining Ingredients – While the steak and peppers are cooking, it is important to allow the ingredients to cook without stirring. I like the steak to remain in strips until it being shredded.
- Cooking Steak – I like to cook this pepper steak recipe on low so the steak cooks tender.
Can I use a Different Kind of Steak?
Yes, you can different cuts of beef. These are my recommendations:
- Flank Steak
- Beef Stew Meat
- Round Steak
- Any thinly slice steaks
Substitutions and Variations:
- Peppers – The recipes calls for green peppers and red peppers. But I have made this with just green bell peppers and it still turned out amazing.
- Onions – If you are out of fresh onions, you can add in a tablespoon or two of minced dried onions for an easy substitutions.
- Change the meats – You can easily change the meat to what you have on hand. Cut the meat into strips or leave it as a whole piece.
- Stir-Fry – Make this crock pot recipe into an easy stir-fry recipe. Cook the ingredients in some olive oil in a skillet or wok for a quick and easy recipe.
- Bouillon Cubes – We recommend using beef broth, but you can use water and toss in some bouillon cubes for added flavor.
- Mushrooms – Mushrooms can be added to this pepper steak recipe. If you prefer, you can also cook the mushrooms in a skillet and serve over the top when the recipe is finished cooking.
- Red Pepper Flakes – Add in red pepper flakes if you prefer your dish to be a bit spicy.
- Worcestershire Sauce – To add a bit of tangy and deep flavor, you can mix in a tablespoon of Worcestershire Sauce.

- Egg Noodles – Cook and prepare egg noodles as indicated on the package. Make sure you serve it with the sauce with the steak and vegetables.
- Roasted Vegetables – For a low carb option, serve the steak and peppers with a side of roasted vegetables.
- Quinoa – Quinoa is a high protein option but is an amazing side or delicious served with this crock pot steak.
- Fried Wonton Recipe – This recipe makes an easy appetizer.
How to Store Leftovers:
We love having this Pepper Steak leftover. The ingredients really marinate together overnight and it taste even better next day. Store in an air tight container for up to 4 days for a delicious lunch the next day.
This recipe is great to meal prep with for the week. Add a side of rice, roasted vegetable and the slow cooker pepper steak.
Can you Freeze Pepper Steak?
Yes, you can freeze pepper steak. Place the leftover pepper steak in a freezer container or a zip lock freezer bag. If stored properly the pepper steak will last about 3 months.
When you are ready to serve again, place in the freezer container in the refrigerator to thaw overnight. Then reheat in the microwave or stovetop until heated thoroughly. Serve with rice and your favorite vegetables.

- 1.5 lbs round steak (cut into thin strips)
- 1 green bell pepper (sliced thick)
- 1 red bell pepper (sliced thick)

- 1/4 cup soy sauce

I made this and and it was deelish! I added a few shakes of toasted sesame oil, mushrooms, peppers, and sliced water chestnuts. Next time I’ll double the sauce. I’m enjoying your site.
Either way works. This recipe is very forgiving, and the cornstarch is just to thicken the sauce.

This came out great. I did however thickened the gravy a little more than your picture. Also I added 5-spice because I don’t always have ginger and brown sugar available. All in all, a success! Plus, it gave me a meal for another day. Using the crock-pot allows you the freedom to make other things in the meantime and it makes the meat so much more tender if you need to use a cheaper cut of meat. Thanks again, this was a keeper!
Yes, you can. If using leftover steak, I would only cook on low in the crock pot for 1-2 hours just to heat the leftover steak through and combine it with the other ingredients.

This one is really good what I did different was I rolled the stew beef in flour and browned it before I put it in the crock pot, makes the meat really tender, And instead using a broth use a brown gravy and a beef gravy packets 1 of each. And I omitted the ginger and cornstarch step.

I made this, this past Saturday for dinner. While my grands picked out the peppers, they loved it and had seconds. My two adult kids also had seconds. So, next time I’ll double the recipe. This was quick, easy, minimal hands on and delicious.

You can actually use either one.
Good recipe, but in the video you use been STOCK but in the list of ingredients you use beef BROTH- they are similar but still different, so its a tad confusing which one you’re actually supposed to use…
Such a good recipe! It’s been one of stand by recipes for a while now. Easy to fix and just let it go in the crockpot. I usually don’t put the peppers and onions in until a couple of hours before it’s finished, that way they don’t get as mushy.
My liquick was all very watery? Had to pull out all the liquid and thicken it with cornstarch!

I made this yesterday and it was delicious! I used teriyaki sauce because I did not have soy sauce. My husband is very picky and he does not like Asian food, typically, but he loved it! The teriyaki probably made it a little more sweet and a little less salty. I served it over cooked rice. It only took 4-1/2 hrs on low in my crockpot. The meat was very thinly sliced and I used have the meat ( probably about 12 oz). My husband said it’s a home run! It earned a hand written recipe card in my recipe box!

Yes, I would cook the roast with the seasoning and leave the peppers out. Cook on low for 8-10 hours or on high for 4-5 hours. Then shred the beef, stir in the peppers and cook on high for 30-60 minutes until the peppers are soft. I hope it works out for your daughter’s birthday and that everyone enjoys it!

Delicious! I didn’t measure my seasonings as I always add more than most recipes call for. Splashed a little extra soy in there as well. It was perfect! For a gravy, I melted 1.5 tbs of butter, stirred in 1/8 cup of flour and cooked on med until it made a thick paste. Then I spooned in a cup or 2 of the liquid from the crock pot. Soooo good y’all!

Thank you for sharing your recipe. I found the recipe was easy but too much liquid. I did add cornstarch with water during last hour of cooking but it did not thicken up enough. Flavor was good, vegetables very soft. I will make again but I will add bay leaf or red pepper flakes next time for more flavor and save some vegetables to add at end of cooking.

This is my new favorite dinner to make…I like things spicy so I added some crushed red pepper and instead of measuring the other spices I just sprinkled them in generously. I also added another big spoonful of brown sugar to balance it out. Made it this way a few times now and it is really good!

Heidi – Yes, you can use flour or Wondra instead of cornstarch for thickening. I would mix it with the water first so it doesn’t clump in the crock pot. Also, yes, I think that would taste great reheated. My husband loves taking some of this left over for lunch.
I am making it right now. I put some peppers in first and I will add more later like you suggested. I am also going to add mushrooms when I add the other peppers so they don’t mush either. I have 2 questions. For thickening can I use flour or Wondra instead of corn starch, and if so do I still need to mix it in with water first? I think that the steak might get tough if it’s already cooked for this recipe. If using already cooked steak, I would sauté the other ingredients in a pan on the stovetop until the peppers are cooked to your preference and add in the already cooked steak in for last the 5 minutes of the cooking time. Just got mine in the crock pot. Was a little late getting started. I’ve started on high and will lower in a couple hours. I only had red and yellow peppers but pretty much went by your recipe. I added 1/2 of everything again because I had so much meat. All I had were two very thick NY strip steaks. Can’t wait to eat it, smells good already. Will also cook Chinese noodles for hubs and white rice for me and maybe some steamed broccoli. Will review later.

I used elk steak.
Subbed red pepper with diced tomatoes.
Added a glob of diced garlic (a glob is four dabs, a dab is four smidgens, a smidgen is whatever the hell you want it to be).

Just says making it in a dutch oven on top of the stove hey, if your juices are not thinking enough use a teaspoon or a tablespoon of cornstarch mix it with water make a paste and add it to your recipe…( 5 minutes before you serve it) it will thicken

For this particular recipe they are cooked really well. Very soft, If your wanting firmer I would add a bit in the beginning for flavor then add some 1.5 hours before finished cooking,

This is not a cheap meal here. The beef, peppers and rice is expensive here. It might be good but not cheap.
Can I cook this in a normal way I mean 5 hours is too lonf and I don’t have that kind of pot.
Very easy recipe. I added broccoli in the last hour. I also gave it a dash of soy sauce and ginger. My advise is season to taste. I highly recommend this recipe.
