Vegetable Beef Soup is a delicious soup that can be made in a variety of ways. It is a great soup to sneak in veggies or change the meat. It is hearty, delicious and easy to make.

  • Ground Beef – You can also use ground turkey, chuck roast or shredded chicken
  • Onion – See Best Onion Substitute if you are out
  • Potatoes – We used russet potatoes but you can also use Yukon Gold Potatoes or Red potatoes
  • Frozen Mixed Vegetables with Green Beans – Add in other veggies such as shredded carrot, celery and corn
  • Diced Tomatoes – You can also use a can of Rotel
  • Beef Broth – We used low sodium beef broth or you can also use water

Additions and Seasoning Variations

Feel free to change the spices to what you prefer. You can even add in other ingredients. Here are some delicious variations.

How to Make Slow Cooker Vegetable Soup

  • Step 1 – If using ground beef or turkey, cook meat and onions until golden brown.
  • Step 2 – Add to slow cooker along with all other ingredients.
  • Step 3 – Cover and Cook on low for 4 hours. You can also add Italian seasoning if you prefer.
  • Step 4 – Serve hot and enjoy! Salt and pepper to taste.

  • Slow Cooker Recommendation – We like to use this programmable crock pot  for when I am am not at home all day. I love coming home to a nice meal ready and waiting
  • Slow Cooker Liners – I also like to use crock pot liners to make clean up a breeze. These are worth every penny and save a ton of time.
  • Preparing Vegetables – We keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.   • Brown Ground Beef – Make sure to cook the ground beef in a skillet and drain the grease before pouring into the slow cooker.

This soup is delicious with a simple side salad. We also love to serve it with some type of bread to dip into all of that delicious broth. The kids like to enjoy the soup with grilled cheese.

    This soup is delicious! I normally cook it on the stove if I’m short on time. I often add chili powder to make it a Mexican soup. Sometimes I add both pasta AND potatoes! I love adding fresh parsley or cilantro. Also great with cheese dumplings! Yum!

    Made this with Ground Turkey meat as this was what I had on hand. I only made half recipe since its only me. I added more spices to give more flavor and added minced garlic, and dash or 2 of Worcestershire sauce. Made it the crockpot and having Garlic toast with a bowl full tonight.     Could you please explain how Crockpot Vegetable Soup is different than Hamburger Soup?

    Vegetable stew is made with stew meat or chuck roast cut into small cube-shaped pieces. Don’t get me wrong they are both good.

    I generally followed the recipe but made a few alterations. I started by browning some onions, and also added an extra can of diced tomatoes instead of the water. I also added turnip instead of green beans. And for a richer, thicker soup, I used condensed tomato instead of a tomato cocktail. The flavors were hearty, and between the cajun seasonings and a thick red-chili-cumin curry paste I added built a little heat. Awesome!

    I love this soup! So easy and so delicious! My grandson asks for this every time he visits and his 2 year old brother gobbles it up! I always feel good when serving this because it has so many good things in it. I sometimes add kidney or white beans or black eyed peas (frozen) to the pot.

    I make something so similar to this we just call it hamburger soup. One ingredient we use each time is canned tomatoes/corn/okra..it absolutely pops with flavor, the okra really brings it out. With each bowl served up I put a pad of butter in. Perfection!! We serve it with hot fresh baked yeast rolls.

    I Love vegetable soup. The only thing I don’t like is the Lima beans and either does the family so I would just leave the beans out. Definitely will have to try to make this real soon as we have like 2 ft of snow here in the Catskills New York and more coming this weekend. Looks good!

    This soup is super easy to put together and makes an excellent lunch throughout the week. I opted to use fat-free chicken stock in place of the vegetable stock just for personal taste and I used petite gold potatoes and kept the skin on. I chopped all my veggies the day before (including the potatoes. Just put them in an air-tight container and cover with water and store in the fridge). Then in the morning I dumped everything into the slow cooker and cooked on high for 4 – 4 1/2 hours. By lunch time it was ready! I stored in single serving sized containers in the fridge to reheat for a healthy & delicious lunch!

    I also wondered what seasonings to use as it shows them being put in but not listed on ingreds and it does need seasonings. I looked up on another recipe and it said salt, pepper and a bay leaf. It is flat without seasonings..
