Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions. Serving Suggestions
This soup is delicious with a simple side salad. We also love to serve it with some type of bread to dip into all of that delicious broth. The kids like to enjoy the soup with grilled cheese.
If you have a few extra minutes, this Easy Homemade Dinner Rolls Recipe is great with the soup. You can also pick up some breadsticks or French bread at the bakery if you don’t have time to bake any.
We also like homemade Hawaiian rolls or some homemade cornbread . I know the recipe is super simple but I think you will be surprised how packed with flavor it really is.

- Storing Leftovers – Store leftovers in an airtight container in the refrigerator for up to 4-5 days.

Oh I love that idea! Thank you for commenting.
I loved the soup. I used pieces of beef instead of ground beef and only 1 can of diced tomatoes.
Yes, you can – I hope you enjoy this recipe!
I would put the entire can with the sauce in the crock pot.
I would like to use stewed tomatoes. Would I drain them first or just dump the whole can in there?
I was wondering if you can use vegetable broth instead of beef broth. Looks yummy!! ???
This soup is delicious! I normally cook it on the stove if I’m short on time. I often add chili powder to make it a Mexican soup. Sometimes I add both pasta AND potatoes! I love adding fresh parsley or cilantro. Also great with cheese dumplings! Yum!
Yes, you can use tomato sauce and use the same amount instead of the tomatoes in this recipe.
The soup was delicious! Everyone in my family loved this soup. I loved how easy it was to put in my crockpot. I did not have potatoes, so I used elbow macaroni. It is definitely on my repeat soup list.
Easy and delicious recipe!
Can I use something else besides chunk tomatoes like tomato paste and if so how much
Easiest and most delicious soup I have ever made! I didn’t have any potatoes and didn’t feel like going out to get them. So, I used 1 cup of shell noodles (it’s what was in my pantry!)
I’m so glad you enjoy it – Thank you for sharing!
This was absolutely delicious! It will definitely be in the normal rotation of food. So simple to make and such a comfort food! Excited for fall so we can have this more!
Yes, crushed tomatoes will work instead of the diced tomatoes and yes, use the same amount.
Very hardy soup.. My husband said, “It’s a keeper.”
I cut the veggies a little bigger, so it took longer in the crockpot.
Is there an alternative to the diced tomatoes that would maintain the flavor? Like…would crushed tomatoes work? and would you use the same amount?
Looks yummy
I made the soup a little thicker with corn starch and it was way better when the soup stuck to the veggies.. ? delicious though!
Took closer to 5 hours on high to be cooked, and needed extra salt and seasoning, but overall a good recipe. Leftovers for days!
Absolutely delicious!! Even the kids liked it!
Made this with Ground Turkey meat as this was what I had on hand. I only made half recipe since its only me. I added more spices to give more flavor and added minced garlic, and dash or 2 of Worcestershire sauce. Made it the crockpot and having Garlic toast with a bowl full tonight. Thanks for sharing a easy to put together recipe!!!
Could you please explain how Crockpot Vegetable Soup is different than Hamburger Soup?
Vegetable stew is made with stew meat or chuck roast cut into small cube-shaped pieces. Don’t get me wrong they are both good.
How is this different than Hamburger Soup?
Yes you want the ground beef to be browned first.
Cooked on high for the recommended max 3 hours and meat was not cooked through when timer went off…was I suppose to cook meat first?
Made this today. My husband loved it. And it was so easy and quick to make.
We like macaroni in our soup – can you add that and when would you add it?
So glad you liked it.
This soup is delicious! And so easy. Just add a pan of cornbread and ur done!
Yes this will still do good all day. If you have a crock pot that automatically goes to warm, even better.
So I want to use my crock pot I need an all day cook. People who work cannot have 4-6 hours. Need more like 9 hours. Can I cook it that long?
I made this soup last night in my crockpot. I added shredded cabbage to it. This was the best soup recipe. It was even better warned up for supper this evening.
Made a large pot of this Vegetable Beef Soup for lunch for my husband and I. I served it with a crusty bread. It was incredible! I frozen the remaining soup for future lunches!
Yes, this recipe would be great with canned vegetables as well!
I have a whole pantry full of canned veggies and was wondering if I could use them.
This looks delicious. How much Italian seasoning? Thank you
Sound delicious! Thanks for sharing 🙂
I generally followed the recipe but made a few alterations. I started by browning some onions, and also added an extra can of diced tomatoes instead of the water. I also added turnip instead of green beans. And for a richer, thicker soup, I used condensed tomato instead of a tomato cocktail. The flavors were hearty, and between the cajun seasonings and a thick red-chili-cumin curry paste I added built a little heat. Awesome!
I have made this soup numerous times and it is so good to come home to after a long day at work on a cold day!
That sounds delicious! Thank you for sharing!
This was great and healthy!
I love this soup! So easy and so delicious! My grandson asks for this every time he visits and his 2 year old brother gobbles it up! I always feel good when serving this because it has so many good things in it. I sometimes add kidney or white beans or black eyed peas (frozen) to the pot.
I like to make this when grocery money is low, when I need to make a pantry challenge, or when comfort food is calling my name!
I just throw the ingredients in and let “him” do all of the work. No stress!
“He” feeds me and smells good!
Thank you for sharing and keep the recipes coming, especially on all of these snow days!
Ciao!
was a big hit at our house!
I make something so similar to this we just call it hamburger soup. One ingredient we use each time is canned tomatoes/corn/okra..it absolutely pops with flavor, the okra really brings it out. With each bowl served up I put a pad of butter in. Perfection!! We serve it with hot fresh baked yeast rolls.
Love this soup and ny uncle of 885 do also the flavors really come together to complement o one another. Thanks for such a satisfying meal.

I Love vegetable soup. The only thing I don’t like is the Lima beans and either does the family so I would just leave the beans out. Definitely will have to try to make this real soon as we have like 2 ft of snow here in the Catskills New York and more coming this weekend. Looks good!
I grew up on hamburger stew!! Mom made it on the stove. (before slow cookers) lol. I still love it!! Thanks
I have made this recipe several times and I don’t like beans so I just leave them out. Your recipes are so accommodating to fit anybody’s needs.
This was the perfect recipe for today. As it’s one of my favorite soups. Can’t wait to start this in the crockpot so it’s ready for dinner tonight. Will make my birthday that much more special. What a great recipe. I love soup, and this easy way to make a hearty meal is terrific!
I’m so glad you like it!
I got my very first crockpot for Christmas. This was the very first thing I made in it! It was super easy and my kids LOVED it!
Great idea to make for the week! I’m so glad you enjoyed it!
Well… I did it again! I posted my comment on the WRONG RECIPE! Some days… I tell ya…
This soup is super easy to put together and makes an excellent lunch throughout the week. I opted to use fat-free chicken stock in place of the vegetable stock just for personal taste and I used petite gold potatoes and kept the skin on. I chopped all my veggies the day before (including the potatoes. Just put them in an air-tight container and cover with water and store in the fridge). Then in the morning I dumped everything into the slow cooker and cooked on high for 4 – 4 1/2 hours. By lunch time it was ready! I stored in single serving sized containers in the fridge to reheat for a healthy & delicious lunch!
Your welcome!
I also wondered what seasonings to use as it shows them being put in but not listed on ingreds and it does need seasonings. I looked up on another recipe and it said salt, pepper and a bay leaf. It is flat without seasonings..
Rhond
Karen, yes, you can use kidney beans instead if you don’t like lima beans.
I didn’t add anything additional for this recipe. Thank you.
I would love to make this but I have a question. The video shows pouring in some seasonings. What seasonings do you use? It isn’t listed in the ingredients. Thanks!
My first attempt at stew. What are the seasonings you added?
Can I use something other than lima beans in this soup?
I wish you would put what and how much seasoning you put in your recipes. They all look so good!!
Thank you!!
My wife and I are dieting, we are not obese. We love vegetable soup What is the calorie count this meal?
