Expert Tips

  • Slow Cooker Recommendation – We like to use this programmable crock pot  for when I am am not at home all day. I love coming home to a nice meal ready and waiting
  • Slow Cooker Liners – I also like to use crock pot liners to make clean up a breeze. These are worth every penny and save a ton of time.
  • Preparing Vegetables – We keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions. Learn and  how to freeze onions and also how to freeze peppers to save so much time in the kitchen.
  • Brown Ground Beef – Make sure to cook the ground beef in a skillet and drain the grease before pouring into the slow cooker.

Serving Suggestions

This soup is delicious with a simple side salad. We also love to serve it with some type of bread to dip into all of that delicious broth. The kids like to enjoy the soup with grilled cheese.

If you have a few extra minutes, this Easy Homemade Dinner Rolls Recipe is great with the soup. You can also pick up some breadsticks or French bread at the bakery if you don’t have time to bake any.

We also like homemade Hawaiian rolls or some homemade cornbread . I know the recipe is super simple but I think you will be surprised how packed with flavor it really is.

Storing and Freezing Tips

  • Storing Leftovers – Store leftovers in an airtight container in the refrigerator for up to 4-5 days.
  • Freezing Leftovers – Freeze the leftovers in a freezer safe container for up to 3 months. This vegetable soup freezes great and a great soup to double the recipe. When ready to serve, thaw the leftovers in the fridge overnight. For more tips, see How to Freeze Soup.
  • Reheating Leftovers – Reheat the leftovers on the stovetop or in the microwave depending on how much you are reheating.

This soup is delicious! I normally cook it on the stove if I’m short on time. I often add chili powder to make it a Mexican soup. Sometimes I add both pasta AND potatoes! I love adding fresh parsley or cilantro. Also great with cheese dumplings! Yum!

Very hardy soup.. My husband said, “It’s a keeper.”
I cut the veggies a little bigger, so it took longer in the crockpot.
