  • Ground Beef
  • Uncooked White Rice
  • Onion
  • Minced Garlic (or use garlic salt)
  • Tomatoes & green Chilies (like Rotel)
  • Tomato Paste
  • Brown Sugar
  • water or Chicken Broth
  • Salt and pepper

  • Step 1 – Mix Ingredients – This is recipe is so simple. Just mix all of the ingredients together in a large bowl.

  • Step 2 – Stuff the Peppers – Next, put the mixture in the peppers and place in the crock pot. In just a few hours you have a delicious dinner.

Do you Cook Bell Peppers before Stuffing them?

The beauty of the crock pot is that you do not need to cook the peppers before. The crockpot does all the work and results are tender peppers that are full of flavor.

What to Serve with Crockpot Stuffed Peppers:

This Crock Pot Stuffed Peppers is a complete meal. But I still like to have an easy side to serve with this delicious meal. These are some of my favorites.

  • CornbreadYou are going to love this easy homemade cornbread recipe. Making cornbread from scratch isn’t as hard as you might think. This cornbread recipe is the perfect side dish to our favorite crock pot meal.
  • Roasted Vegetables – Make a side of roasted broccoli in the oven. It cooks perfectly in the oven and a delicious side to these stuffed peppers.
  • Side Salad – Serve with a side salad and your dinner is complete. This is an easy side and simple to make.

Recipe Adaptations:

  • Add Cheese – You can also add a ½ cup cheese if you wish to the mixture. This is optional but tasty. And then add another ½ cup to the top in the last few minutes of cooking until cheese melts.
  • Stir in Beans – We have also added black beans and extra diced tomatoes to stretch the ground beef even more. The beans go really well with the rice and meat mixture.
  • Ground Turkey – Feel free to change the meat to ground turkey. You can even do half ground beef and half ground turkey.
  • Rice – We used white rice in this recipe, you can use brown rice if you prefer.
  • Tomato Sauce – If you want a creamier sauce, use tomato sauce instead of tomatoes.
  • Cauliflower Rice – Make it healthier by chopping up cauliflower and using it instead of rice – check out my easy Cauliflower rice recipe. My kids ate it with white rice last week, but I used cauliflower to get my extra veggies in. 
  • Add in other Vegetables – You can add in some chopped carrots or broccoli. You can easily chop these really small so they cook fast and soft.
  • Quinoa – For added protein, mix in quinoa. This would be a great substitute for the rice if you prefer.
  • Seasoning – Change the seasoning to what you prefer. You can easily use Italian Seasoning or a Tex-Mex flavor seasoning.

Tips for Slow Cooker Stuffed Peppers:

  • Rice – Rice needs to be slightly undercooked before it goes into the slow cooker so it doesn’t turn mushy. I like to use leftover rice that is cold.
  • Beef and Rice – The beef and rice mixture is stuffed in the peppers to cook in the slow cooker. Cook for about 2 hours or until peppers are tender.
  • Ground Beef – We like to use leftover ground beef in this recipe. If you do not have leftovers, brown the ground beef before mixing with the other ingredients.
  • Mixture – Evenly divide the beef and rice mixture into the peppers.

How to Freeze Stuffed Peppers:

Stuffed Peppers are easy to freeze. Place the leftovers in an air tight freezer container and place in the freezer. These stuffed peppers will last about 4 months.

Once you are ready to serve again, thaw in the refrigerator overnight. Heat in a baking dish in the oven. We recommend cutting the peppers so they fully cook.

Preheat the oven at 350 degrees and heat for about 10 minutes.

How to Store Leftovers:

Store you leftovers in an air tight container in the fridge. The leftovers will last about 4 days.

I like to store mine in a microwave safe dish so it is easy to reheat. We like to place in individual containers so it is easy lunch the next day. We think it taste even better the next day.

Ingredients

  • 6 Bell Peppers
  • 1 1/2 lb Ground Beef
  • 1 onion (diced)
  • 1/2 cup uncooked White Rice
  • 2 tsp Minced Garlic
  • 1 can Diced Tomatoes with Green Chilies (10 ounces)
  • 6 oz Tomato Paste
  • 1/4 cup Brown Sugar
  • 1 cup Chicken Broth
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  • Brown the ground beef in a large, deep skillet over medium high heat with the diced onions. Break up the beef has it cooks.
  • Drain off any excess grease. 
  • Stir in the rice, minced garlic, diced tomatoes with green chiles, tomato paste, brown sugar, chicken broth, salt and pepper. Remove from heat. 
  • Cut the tops off of the bell peppers and remove any of the seeds and membranes inside the peppers.  Then gently cut off the bottom of the peppers to make them level so that they can stand up right in the crock pot.
  • Carefully spoon the beef mixture evenly into the bell peppers. 
  • Place the stuffed peppers into a crock pot making sure that they are upright. 
  • Cover the crock pot and cook on low for 5-6 hours or on high for 2-3 hours until the filling is cooked through and the peppers are tender. 
  • Carefully remove the stuffed peppers from the crock pot and then they are ready to serve and enjoy!

    I mistakenly added all the ingredients except the chicken broth to the ground beef before browning . I took a leap of faith and then browned that entire mixture. It turned out great.

    I made these with a few variations. They were the best I have ever made. I didn’t brown the meat. I mixed raw ground Chuck with ready made jasmine rice. Stuffed the peppers and covered with 2 cans of (ubdiluted) tomato soup. Cooked on low for 7 1/2 hrs. Delicious

    Sorry for the confusion. I have updated the recipe. These stuffed peppers can be cooked on low for 5-6 hours or on high for 3 hours until the filling is cooked through and the peppers are tender.

    Thank you for the recipe! Made a few minor adjustments such as brown rice instead of white rice, didn’t use sugar, and added basil and oregano and it turned out great! Also, made it in the oven at 375 for about an hour. Next time I’ll cover it when cooking so the peppers soften a bit more. I only had a pound of hamburger which turned out to be fine too!

    Love this recipe and make it at least twice a month. I love the original recipe but have tried different options. I’ve tried other seasoning and like it with half a packet of taco seasoning. I do precook the rice since it was a little undercooked the first time I made it. Have also substituted brown rice.

    I love this recipe. It’s super easy. Here are a few things that I have found out about this recipe. Brown your ground meat/turkey before mixing. I use uncooked rice and it comes out perfectly. I did find it a little bland at first, so the next time I cooked this I seasoned my meat before cooking. I use “Slap Ya Mama” seasoning but you can use whatever you like. I would also recommend using broth instead of water. Also, not stated in the recipe is the heat on which to cook this, it’s 3 hours on high. Seriously, I cook these almost every other week.

    Yes, you can fully cook these, allow them to cool, wrap them with plastic wrap and freeze them. When you want to serve them, take them out and thaw/reheat them in the microwave (about 6 or 7 minutes on high for one). They will taste the same as the would have if eaten right out of the crock-pot

    In your note you say the rice should be slightly undercooked before adding to the other ingredients. While the ingredients list uncooked rice, the directions don’t say to cook the rice before mixing with the other ingredients. But the rice is supposed to be cooked before adding, right? I don’t want to mess this up! Thanks.

    This recipe is mixed up. Reading though all the lines prior to the actual recipe, the suggestion is to have rice partially cooked. Also, in the same area, the suggestion is to use cold cooked rice. Let’s make up my mind about this mix up.
