Can I make it spicy?

Notes – you can top with shredded cheese and avocados!

How to make it less spicy:

  • The can of Rotel that is added can be a little spicy. Make sure you are using the original flavor.
  • Instead of Rotel, you can use a jar of mild salsa.
  • Add in additional diced tomatoes instead of the Rotel.

Can I make this low fat?

  • You can leave out the cream cheese.
  • Top the soup with fat-free or low fat sour cream.
  • Carb free tortillas are a good options as well as serving as a salad.

Tip to shred chicken for Crock Pot Fiesta Lime Chicken:

I use a hand mixer to shred the chicken faster. It is so easy and one of my best time saving kitchen tips!

If you are not shredding your chicken this way, you are missing out. It can be done in a fraction of the time by doing it by hand.

Easy dinners like this are always a hit.

This recipe is SO GOOD. I made it last night with some cilantro lime rice and it doesn’t need anything else.

  2. Tammie says:

I made this, totally missed the taco seasoning, oops. It was really good anyway. I will definitely make a again and use the taco seasoning. Lol! I did only use 4oz of cream cheese and 4 oz of quesadilla cheese from Walmart. Served over rice it was a hit with the adults.

  3. Mary ellen says:

Chicken broth appears in the i gradients but it doesnt mention it again, as to when or how much to use I recipe

  4. Carol Murphy says:

I made this recipe about a month ago for the first time and have made it four times since. It is absolutely delicious! You can use tortillas, bread, crackers, plain or many many other things. It also makes a big pan so it will last for two or three days depending on the size of your family.pGreat recipe!

  5. Marlene ONeal says:

    5 stars
This is great for many different applications! I’ve even turned it in to a dip! So yummy! This is a keeper recipe!

  6. Carrie says:

Frozen corn works great – You would not need to add any extra liquid.

  7. Vickie Knudson says:

Would it work with frozen corn or would I need to add some liquid?

  8. Carrie says:

You’re welcome! I’m so glad you enjoy it!

  9. Ester says:

I make this recipe at least twice a month. It’s one of my family’s favorite dish! So easy to make and so delicious. My husband uses lime tortilla chips with it or rolls it up in a soft tortilla. I like it with some white rice. Soooo tasty!!
    Thank you for the recipe!!!

  10. Brittni says:

    5 stars
Another big favorite in our house! My kids love to do burrito bowls with it. We do rice, ranch dressing, add avocado and eat with chips! So good!!!

  11. Carrie says:

Yes, I think that would be fine or you can double it and just use 1 can of black beans and it’ll still be delicious!

  12. Jennifer says:

I only have one can of black beans I intend to double the recipe, can I add the second can later on?

  13. Carrie says:

Yes, I think it’ll still be great.

  14. BrianaCRandle says:

Well it still turn out the same if I use the ranch seasoning instead of the ranch dip seasoning pack

  15. Melinda Loftus says:

    5 stars
I’ve made this and I love it, it usually makes at least 2 meals at my house. Usually serve it over rice the first time and then reheat for homemade nachos.

  16. Carrie says:

I hope you try this recipe – it’s so yummy!

  17. Kathy says:

I haven’t tried this recipe yet but I have bought the hidden valley fiesta ranch dressing on amazon. I use it in a dip that is always a hit.

  18. Carrie says:

Yay! I’m glad you loved it!

  19. LauraLaLa Thomson says:

    5 stars
This is soooooo good and sooooo easy to make! Oh my golly gosh! My family loved it! Thank you so so so much!

  20. Carrie says:

I mix 1/2 a packet of taco seasoning with a 1/2 a packet of the Ranch seasoning packet and that is a good substitute if you can’t find the fiesta packet in your area. Let me know how it turns out!

  21. Julie says:

Would love that copy cat recipe for the fiesta ranch dip as well. All the stores I have checked are all out. (Covid? Everything else has been hoarded- Lol) The sticker is there with the price but nothing on the shelf. Purchased a regular ranch dip but am wondering what other spices to add to give it that kick. Thank you.

  22. Carrie says:

I don’t yet- but I’ll look into seeing how to make it.

  23. Stephanie says:

Do you have a copy cat recipe for the Fiesta Ranch mix? I haven’t been able to find it anywhere :/

  24. Vicki says:

Is that cilantro sprinkled over the top?

  25. Teresa says:

Can I make it without a crockpot. Boil the chicken and then add the in the ingredients? Do you think it would work. I am gone daily longer than 6 hrs and don’t want to put in in the crock pot on low for 9 to 10 hrs. Afraid it will dry out.

  26. Carrie says:

Yes! That sounds delicious. Thank you.

  27. Gretchen says:

Can you mix in cheddar cheese when you add the cream cheese giving it a cheese flavor?

  28. Carrie says:

Nathan – Sorry about that confusion! I mix the cream cheese into the recipe after the cook time and the chicken as been shredded. Then I cook it until it’s completely melted. I will update the recipe and the post. Thank you!

  29. Carrie says:

The full recipe serves 6 so 1 serving would be 1/6 of the entire recipe. Thank you.

  30. Carrie says:

Yes, this would work as a freezer prep meal. Thank you.

  31. Carrie says:

David – I would use 2 tablespoons of lime juice to substitute for the fresh lime juice. Thank you.

  32. Carrie says:

Yes, the full 8 oz. I love cream cheese and it adds a delicious flavor to the recipe. Thank you.

  33. Carrie says:

David – Yes, you can use lime juice instead of the fresh squeezed limes. I would use approximately 2 tablespoons. Thank you.

  34. Carrie says:

Dana – I squeeze the lime into the mixture at the end of the cook time and after I shred the chicken. Thank you.

  35. Nathan says:

Do you add the cream chees towards the end of the cooking time or add it at the very beginning? Your video shows it at the end but the written instructions says all ingredients at the beginning?

  36. Jerilee Hendrich says:

Sounds delicious!! 8 oz. cream cheese????

  37. Sarah Lewis says:

How large is a serving? Recipe doesn’t say.

  38. David says:

Could you substitute lime juice for fresh squeezed limes and if so, how much should you add? Looks like a great recipe. Can’t wait to try it!

  39. Krystle Davidson says:

Would this work well as a freezer prep meal?

  40. David says:

Could you use bottled lime juice instead of fresh squeezed limes, and if so how much juice? Would be easier for me to fix without planning ahead if I could use juice.

    Looks delicious!

  41. Carrie says:

They are in the seasoning section at the grocery store.

  42. Carrie says:

Yes, that would freeze great. Thank you.

  43. Ruth says:

Could you put this on top of the rice and then freeze it. I make TV dinners and would like it already to microwave then eat.

  44. Abbey Hartman says:

Where did you find the ranch packet?

  45. Dana says:

Do you put the limes in the crock pot for the time it cooks? Or do you leave them out and squeeze them into the mixture at the end?

  46. Carrie says:

I love cream cheese so I haven’t made it without the cream cheese before, but I think it would still taste good. If you try it, please let me know how it turns out. Thank you!

  47. Paula says:

I have made this twice, it was a big hit with the family. Some didn’t like the creamy taste of it however. Your pic of the chicken does not look like it has a creamy consistency, like mine. Ever made it without the cream cheese or with a substitute for it?

  48. Carrie says:

I would cook it on low for approximately 2 hours with rotisserie chicken. Thank you!

  49. Carrie says:

I remove the chicken only from the crock pot and shred it away from the other ingredients. I usually put it in a separate bowl and use a hand mixer to shred the chicken. Then I stir the shredded chicken back in with the other ingredients in the crock pot. Thank you.

  50. Kitty says:

This looks delicious! I’m a little confused about shredding the chicken with other ingredients mixed in—do the corn and beans get mashed in the process? Can’t wait to try this one! Thank you!

  51. Carole says:

How long would it need to cook if I use rotisserie chicken?

  52. Tracey says:

    5 stars
This recipe is delicious!! I made it for my baby gender reveal party and it was a hit! It was hassle free, frugal and the best part is my crockpot did all the work so I had time to decorate! Mine turned out runny as well but after making it twice I believe it’s based on the chicken you’re using. The chicken I purchased both times was pumped up so much of water?.. who knows what. I believe that’s what’s affecting the extra liquid. Just had to drain some toward the end. Still tastes amazing!!

  53. Carrie says:

I haven’t tried it with a crock pot liner. I usually don’t need them in my ninja crock pot. I would probably move the chicken to a mixing bowl so you don’t tear the crock pot liner into your recipe. Thank you .

  54. Kathrine austin says:

Do you still use the hand mixer to shred your chicken, when when you use a crock pot liner?

  55. Carrie says:

I usually do not but you can if you prefer them that way. Thank you!

  56. Imogene says:

Do you drain and rinse the black beans?

  57. Carrie says:

Yes, I usually use frozen chicken and it works out great.

  58. Samantha says:

Can you do the same thing but use frozen chicken?

  59. Carrie says:

Liz – I do but you don’t have to. Thanks!

  60. Carrie says:

Stephanie – Yes, I would cook it for 30 minutes on the pressure cooking setting and then use the quick release option once it’s ready. I hope you enjoy it 🙂

  61. Liz says:

Do you drain the corn and black beans first?

  62. Stephanie says:

    5 stars
How long would I cook it for if I put it into my instant pot? And what settings?

  63. Carrie says:

Ashley – Each batch will vary as the chicken will provide some liquid to it as well and this amount will vary depending on your chicken size, type etc. If it’s too runny, I mix some cornstarch with cold water and then add that to the crockpot for the last 30 minutes on high. This will help thicken the entire recipe. I hope you enjoy it! This is one of my go to favorites 🙂

  64. Ashley D. says:

Hi, all the pictures that people who tried the recipe posted show that their finished product is really runny. The picture doesn’t look runny at all, it almost looks like there is no creaminess or liquid at all. How can I make sure my finished product looks like your pictures? Thank you!
