Ingredients for crock pot tomato basil chicken:
- 5 Boneless Skinless Chicken Breasts
- 1 Can Diced Tomatoes (14 oz)
- 1 Can Tomato Sauce (8 oz)
- 2 tsp Minced Garlic
- 2 tsp Italian Seasoning
- 1 tsp Salt
- ½ tsp Black Pepper
- 1 cup Heavy Cream
- 1 Tbsp Corn Starch
- 2 Tbsp Fresh Basil, Finely Chopped
How to make slow cooker tomato basil chicken:
Add the chicken breasts, diced tomatoes, tomato sauce, garlic, Italian seasoning, salt and pepper to the crock pot.
Cover and cook on low for 4-6 hours on low or 3 hours on high.
Combine the cornstarch and heavy cream together in a small mixing bowl. Stir this mixture into the crock pot for the last 30 minutes of the cook time.
Stir in the fresh basil and serve!

Back to follow up on my freeze leftover question…….Yes I made this recipe it was GREAT and froze the leftovers for dinner 2 weeks later and it was GREAT again! I just thawed and then reheated in the oven at 350 for about 30 minutes. I am repeating this process again today so I know that I have two nights of “my turn to cook” done and done well! Truly a 5-minute recipe! I threw 5 frozen chicken breasts into the crockpot, added 1 tsp of minced garlic and 1/2 tsp black pepper, and poured half a 44-oz jar of tomato and basil spaghetti sauce over everything. After 5 hours 30 minutes of cooking, I added the cream and cornstarch. Amazing! The next day I made it again with the other half the jar of spaghetti sauce and froze each chicken breast separately for individual meals.
This freezes great in the cooked form. The cream might separate some when you freeze it but just stir it well when you reheat it back up and you should be great. I hope you love it!

I made this but i only used 3 chicken breast and it was plenty, I feel 5 would have been way too many. The flavor was great and I will be repeating this one soon.
