How to Make Chicken Red Pepper Casserole in the Slow Cooker
Step 1 – Toss the chicken, seasonings and broth into the crock pot. Let it cook all day or until the chicken is cooked or cook on high for 4 to 6 hours.
Step 2 – About 20 minutes before serving, stir in the heavy cream and fresh spinach. I like to shred the chicken before adding in the cream and spinach.
Step 3 – Once the spinach is wilted just stir in the cooked pasta and top with cheese.
Step 4 – You can cover and cook a few more minutes to let the cheese melt.

Crock Pot Chicken Red Pepper Casserole Recipe
Ingredients
- 2 chicken breasts diced
- 12 oz jar roasted red peppers drained
- 2 teaspoons minced garlic
- 1 tablespoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup chicken broth
- 4 cups fresh spinach
- 2 cups heavy cream
- 16 oz rotini cooked
- 2 cups mozzarella cheese shredded
Instructions
- In a slow cooker combine the chicken, seasonings, pepper, and broth.
- Cook on low for 6 hours or until chicken is cooked through.
- 20 minutes before you are ready to eat stir in the heavy cream and fresh spinach.
- Once the spinach is wilted (about 10 minutestir in the rotini and top with the cheese.
- Cover and cook until cheese is melted.
- Serve immediately.
Made this for dinner tonight. The sauce was way too runny so I added grated Parmesan cheese and a cornstarch slurry 2 times. The spinach didnโt wilt the way it should have and it was still too runny. The flavor was good so if I make again I will cook longer after spinach is put in and probably add more grated Parmesan.
