  • Vegetables – Feel free to change the veggies to what you prefer. We love the way the soup taste by adding in sweet potatoes.

How to Make Chicken Quinoa Soup

  • Step 1 – Place all the ingredients in a crock pot.

  • Step 2 – Cover and cook quinoa and chicken on low for 6 hours or on high for 3 hours. 
  • Step 3 – Remove the chicken from the crock pot.  Shred into large pieces and stir it back into the crock pot.

  • Step 4 – Remove the bay leaves from the crock pot.  
  • Step 5 – Then the soup is ready to serve and enjoy.

Recipe Tips

  • Soup Consistency – The longer the soup sits, the thicker it will be get because the quinoa will soak up more of the broth.
  • Shred Chicken – You can shred the chicken with two forks. But it saves time shredding chicken with a mixer.

How to Make on Stovetop

This soup can be made in the slow cooker or on the stovetop. Add all the ingredients to a large pot or Dutch Oven. Simmer on medium heat and until veggies are tender. I usually cook my chicken separately or this is a great recipe to use leftover chicken.

Do I need to rinse Quinoa before adding to soup?

Yes, we think it is a good idea to rinse quinoa before adding to soup. It removes any debris and bitter coating from the quinoa.
