Expert Tips

  • Crock Pot Recommendation – I really like this crockpot.  I use this all the time and it’s great. My favorite feature is that you can lock the lid down. This is awesome for when you need to take the crockpot somewhere.
  • Chopped Veggies – This recipe like many calls for diced onions. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.
  • Chicken – We cook the chicken with the other ingredients in the slow cooker. There is no need to thaw the chicken before placing in the slow cooker. When you are ready to shred the chicken, you can shred with two forks or learn how to shred with a stand mixer.

Serving Suggestions

Everything you need for a great meal is in this soup. You have chicken, veggies, potatoes and more. This is the best one pot meal and you really don’t need anything else. Sometimes, I will add green beans to the soup for extra veggies.

Just serve with a biscuit on top and you are set. You can use canned biscuits or you can make Easy Homemade Biscuits Recipe. Both are great options and are delicious served with this soup.

Frequently Asked Questions

How Do I Make My Soup Thicker?

If you prefer a thicker soup, you can add in a cornstarch slurry into the slow cooker for the last 30 minutes of cooking time. Mix together 2 tablespoons of cornstarch and 2 tablespoons of water then pour into the pot pie mixture. After about 30 minutes the consistency will be thicker and will be a creamy chicken pot pie soup.

How to Store Leftover Soup

Store the leftovers in an airtight container in the refrigerator for up to 3-4 days. We think the soup taste even better the next day as the ingredients marinate together overnight.

How to Reheat Leftover Soup

You can reheat the leftovers on the stovetop or in the microwave. I like to reheat on the stovetop which prevents an hot spots in the soup.

Good soup. It was a little bland for my liking so I added some Italian seasoning, fresh basil and cayenne. It was perfect for our cold day that we had.
