Why Make this Chicken Gyros Recipe:
We love making this simple ingredient chicken gyro recipe. The chicken is seasoned and cooked with veggies in the slow cooker.
It is then topped with a delicious sauce and placed in a flat bread for a delicious meal idea. It is a quick and easy meal that my entire family loves.
Ingredients:
- Boneless Skinless Chicken Thighs
- Red Onions, sliced
- Carrots
- Dried Oregano
- Lemon
- Dried Basil
- Minced Garlic
- Dried Thyme
- Chicken Broth
- Pita Bread
For the Tzatziki Sauce:
- Plain Greek Yogurt
- Cucumber
- Dried Dill (or Fresh Dill)
- Minced Garlic
- Salt and Pepper

Variations:
- Boneless Chicken Breast – We used chicken thighs in this recipe, but you can easily make it with boneless skinless chicken breasts.
- Seasoning – Feel free to change the seasoning that you add to the slow cooker. Fresh herbs can be added such as oregano leaves, cloves garlic, or a dill weed.
- Fresh Veggies – You can also add in diced potatoes for a variation to this recipe.
- Lemon Juice – For added flavor squeeze in fresh lemon on top of the chicken.
Step by Step Instructions:
Step 1 – Place the chicken thighs, half of the red onions, sliced carrots, lemon juice, dried oregano, dried basil, dried thyme, minced garlic and chicken broth in a crock pot.
Step 2 – Cover crock pot with lid and slow cook on low for 6 hours or on high for 3 hours until the chicken is easy to shred. Shred the chicken and stir in with chicken mixture.
Step 3 – Peel and deseed the cucumber.
Step 4 – Step 3 – Shred the cucumber into small pieces.
Step 5 – Add Tzatziki Ingredients to a bowl
Step 6 – Mix the shredded cucumber in a small bowl with the other tzatziki ingredients.
Step 7 – Serve the crock pot chicken mixture on the pita bread, topped with the tzatziki sauce and enjoy!
Expert Tips:
- Shredding Chicken – You can easily shred the chicken with two forks. Another easy way is to shred it with a kitchen mixer. It saves time and the chicken shreds perfectly.
- Serving – We like to serve our chicken gyros in a warm pita bread. But you can easily serve it over rice or on a salad. Serve Kalamata Olives on top for a delicious Slow Cooker Greek Chicken Gyros.
- Cooking Time – Cooking time will vary depending on your slow cooker and how thick your chicken is. You may need to adjust your time.
How to Make Homemade Tzatziki Sauce:
This Crock Pot Chicken Gyros is better topped with this really easy homemade tzatziki sauce. All you need is a few simple ingredients to make this homemade sauce.
The tzatziki sauce is rich and creamy and really makes this recipe taste authentic. Not only is this sauce great on this sandwich but it is also a great dipping sauce. Here is some other ideas on ways to serve it.

- Chicken Kabobs
- Salad Dressing
What to Serve with Chicken Gyros:
Serve the shredded chicken in a warmed pita and top with the homemade greek yogurt tzatziki sauce. We also like to top each gyro meat with lettuce and tomatoes cucumber and it is so delicious. You can even top with a little feta cheese.
You can add an extra drizzle of the tzatziki sauce if you love it as much as we do. Add a side of homemade French Fries or some Air Fryer Broccoli to complete year meal.
The Green seasonings are so tasty and it is a great Greek dish with a little red wine vinegar.
How to Store Leftovers:
Store you leftovers in an airtight container in the fridge. If stored properly these chicken gyros will last about 3 days.

Slow Cooker Chicken Gyros
Ingredients
For the Chicken:
- 2 lbs. boneless skinless chicken thighs
- 1 red onion sliced (divided)
- 2 large carrots peeled and sliced
- 1 lemon freshly squeezed
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon minced garlic
- 1 cup chicken broth
For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1 Cucumber
- 1 Tablespoon dried dill (or 2 tablespoons Fresh Dill)
- 1/4 teaspoon Salt
- 1/2 teaspoon minced garlic
For Serving:
- 6 pita bread
Instructions
For the Chicken:
- Place the chicken thighs, half of the red onions, sliced carrots, lemon juice, dried oregano, dried basil, dried thyme, minced garlic and chicken broth in a crock pot.
- Cover crock pot with lid and cook on low for 6 hours or on high for 3 hours until the chicken is easily shreddable.
- Shred the chicken and stir it into the ingredients in the crock pot.
For the Tzatziki:
- Peel and deseed the cucumber.
- Shred the cucumber into small pieces.
- Stir the cucumber in a small bowl with the remaining tzatziki ingredients until well combined.
For Serving:
- Serve the chicken mixture on pitas topped with the tzatziki sauce and enjoy!
