You can enjoy all that you love about fajitas in a simple to make crock pot meal. This meal is perfect to serve on days you need to be able to come home to dinner ready to enjoy.

Ingredients

  • Boneless Skinless Chicken Breasts, cut into bite size pieces
  • Taco Seasoning (We like this Homemade Taco seasoning.)
  • Onion, diced
  • Bell Peppers, diced (one red and one green)
  • Minced Garlic
  • Diced Tomatoes with Green Chilis
  • Chicken Broth or Chicken Stock
  • Penne Pasta, cooked
  • Shredded Cheddar Cheese – Also use Monterey Jack Cheese
  • Optional toppings, avocados, diced tomatoes, sour cream, tortilla strips

Variations Ideas

  • Seasoning – You can easily substitute the minced garlic for garlic powder. Use fajita seasoning instead of taco seasoning for a delicious substitutions. For a hint of spice add in a teaspoon of red pepper flakes or chili powder.
  • Chicken – We used chicken breast but you can also use chicken thighs.
  • Pasta – Use a pasta that you prefer or that you have on hand.

  • Step 1 – In a crock pot, combine everything but the pasta and the cheese.

    Yes, that would work great but I would not freeze the cooked pasta or the cheese since those are added to the crock pot towards the end of the cooking time.
