My family loves soup especially in the Fall and Winter when it’s chilly outside and I love making them in the crock pot because they’re easy to make. This cheeseburger soup is one of our favorites because it is hearty, filling and so delicious.

The cream cheese in this soup thickens the soup (you don’t have to add flour) and it adds a delicious cheesy flavor that will want you craving more! This soup recipe is a family favorite and I hope you love it too.

Ingredients 

Ingredients to Make Crock Pot Cheeseburger Soup: Ground Beef, Potatoes, Onions, Shredded Carrots, Beef Broth, Cream of Mushroom Soup, Italian Seasoning, Minced Garlic, Salt, Pepper, Cheese Cheese and Cream Cheese
  • Ground Beef – You can also use ground turkey or ground chicken
  • Potatoes – Dice into bite size pieces
  • White Onion – See Best Onion Substitute if you are out
  • Shredded Carrots – You can also add in celery, bell peppers or mushrooms
  • Beef Broth – Substitute with Chicken Broth
  • Cream of Mushroom Soup – Make Homemade Cream of Mushroom Soup Recipe
  • Italian Seasoning – Learn How to Make Italian Seasoning Recipe
  • Minced Garlic – Learn How to Mince Garlic Cloves
  • Cheddar Cheese – You can also use Velveeta cheese or sharp cheddar cheese
  • Cream Cheese – We recommend it to be softened and cut into small pieces

How to Make Crockpot Cheeseburger Soup

  • Step 1 – First brown the ground beef in a large skillet and drain off any excess grease.
  • Step 2 – Then place the browned beef, potatoes, onions, carrots, seasoning, beef broth and cream of mushroom soup in the crock pot.  Gently stir to combine all the ingredients.

  • Step 3 – Cover the crock pot with the lid and cook on low for 5-6 hours or high for 2.5-3 hours until the potatoes are tender.
  • Step 4 – Then approximately 30 minutes before serving, dice up the cream cheese. Stir in the shredded cheese and the cream cheese into the crock pot.
  • Step 5 – Cover and cook for about 30 minutes until the cheese is melted and incorporated into the soup.
  • Step 6 – Serve warm with your favorite toppings and enjoy!

Expert Tips

  • Slow Cooker Recommendation – I love the programmable crock pot  for when you are not at home. You can set it for the amount you need and leave the house for the day. I also love my Instant Pot Aura Multi-Cooker. This slow cooker allows you to brown the ground beef directly in the slow cooker.
  • Slow Cooker Liners – I highly suggest using crock pot liners to make cleaning the crock pot a breeze.
  • Veggies – When dicing the vegetables, make sure to dice about the same size so they cook evenly in the slow cooker.
  • Cream Cheese – When it is time to add in the cream cheese, we recommend dicing up into small pieces so that it melts easily.

Topping Ideas

Top this soup with your favorite cheeseburger toppings.  I topped mine with green onions, tomatoes, croutons and some more cheese (I can never have too much) and it was delicious.

However, this soup would be delicious topped with lettuce, pickles, sour cream and bacon as well to make a delicious bacon cheeseburger soup.  Yum!

We like using russet potatoes in this cheeseburger soup recipe. But you can also use red potatoes or Yukon Gold Potatoes.

Can I Make on the Stove Top?

Yes, this soup can easily be cooked in a large pot or in a Dutch Oven. Follow the recipe as written and cook over medium-high heat to potatoes are tender and the soup has thicken.

How to Store Leftover Cheeseburger Soup

I love leftovers and the leftovers of this soup heats up great.  Place the leftovers in an airtight container for up to 5 days in the refrigerator.
The potatoes will soak up some of the broth when it’s stored, so I recommend adding some beef broth to the leftovers when heating up the leftovers to thin out the soup.
Watch the soup closely when reheating up the soap so that the potatoes don’t get too soft while being reheated.

Instructions

  • Brown ground beef in large skillet over high heat. Drain any excess grease.

  • Pour the beef broth and the cream of mushroom soup over the vegetables.
  • Add seasonings and stir.

    I loved this recipe. It was so easy. I did add turmeric because I like mustard on my burgers. I used Kraft meltables. Next time I won’t add salt as the cheese was salty enough for my taste. I would also remember to garnish with green onions and bacon! ?

    This has to be my favorite by far of all the ones I have tried. I used to be in the LDCC and so I tried this one ages ago, I love all the flavors of a cheeseburger but in a soup that I can eat more than once during the week. It freezes well.

    Carrie, I plan on browning the hamburger meat and setting it aside until I need to add. I have a Ninja and I love, love, love it. I don’t use a slow cooker liner and nothing ever sticks. Clean up is a breeze. It is my go-to slow cooker. This recipe looks delicious. I also plan to use it for the Chicken Taco Soup (the only two recipes I have looked at so far).
