Why We Love This Recipe
The whole family loved the addition of chunks of chicken to our classic potato soup recipe. This soup was filling and serving with Olive Garden Breadsticks Recipe made sure we got every last drop.

Variations Ideas
- Creamier Texture – Cream cheese is also good mixed in for something different and it is so creamy. You can also use chicken thighs instead of chicken breasts.
- Seasoning – Feel free to use different types of seasoning. I have used Homemade Ranch Seasoning Mix, garlic powder, onion powder or Oregano.
- Vegetables – This should would be perfect for additional vegetables added such as spinach, kale, or bell peppers.
How to Make Crock Pot Chicken Potato Soup
Step 1 – Add the potatoes, garlic, onion, chicken, carrots, celery, seasonings and chicken broth to the crock pot.
Step 2 – Add lid to the crock pot, and cook on low for 6-7 hours. Remove chicken and then with a whisk, mix up the remaining ingredients in the crock pot. You want to break up the potatoes and thicken the broth.
Step 3 – Shred the chicken and add back to the crock pot.
Step 4 – Add the heavy whipping cream and Xanthan Gum to the crock pot and cover. Serve and Enjoy this creamy soup with shredded cheese and bacon.

- Prepare Veggies – We keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.
- Crock Pot Recommendation – There are some really good ones on sale right now. If you work all day, you may want to invest in a programmable crockpot.
- Liners – Another time saving tip is to use Crockpot liners. They make clean up a breeze. Instead of scrubbing and washing the pot, you can just toss the liner. It is practically no clean up.

We like to serve with crumbled bacon and cheese on top. Green onions are also good and sometimes I add a little bit of sour cream.

Frequently Asked Questions
We usually use Russet Potatoes to make this recipe. But you can also use Yellow Potatoes or Red Potatoes. You may need to adjust your cooking time as other potatoes may cook faster.
We usually peel the potatoes before dicing and placing in the slow cooker. But if you prefer to leave it own, it will not change the flavor of the soup.
In this recipe we used Xanthan Gum to thicken the soup. But you can also make a cornstarch slurry that consists of 2 tablespoons of cornstarch and 2 tablespoons of water.
Store leftover potato soup in an airtight container in the refrigerator. The leftovers will last about 3-4 days. It makes a great lunch the next day.
We like to reheat the leftovers on the stovetop in a saucepan, but you can also reheat in the microwave in a microwave safe bowl in 1 minute increments.

Slow Cooker Creamy Chicken Potato Soup
Ingredients
- 5 potatoes peeled and diced
- 1/2 onion chopped
- 1 Tbsp Minced Garlic
- 3 Chicken Breasts
- 3 carrot sticks chopped
- 3 celery sticks chopped
- 1 tsp dried thyme
- 1 tsp salt
- 1 tsp pepper
- 4 cups chicken broth
- 1 cup heavy whipping cream
- 1 Tbsp Xanthan Gum
- 6 slices of bacon cooked and chopped (topping)
- 1 cup shredded cheese topping
Instructions
- Add the potatoes, garlic, onion, chicken, carrots, celery, seasonings and chicken broth to the crock pot.
- Add lid to the crock pot, and cook on low for 6-7 hours.
- Remove chicken and then with a whisk mix up the remaining ingredients in the crockpot to break up the potatoes and thicken the broth.
- Shred the chicken and add back to the crock pot.
- Add the heavy whipping cream and Xanthan Gum to the crock pot and cover.
- Cook for additional 30 minutes to allow the soup to thicken.
- Serve and top each serving with a small amount of cheddar cheese and bacon. Enjoy!
