This Mexican Corn Salsa Recipe is so good. When I make it I simply can’t stop eating it. You can serve it with chips or you can serve it over some grilled chicken. Either way, this corn salsa recipe is a must at an Mexican dinner.

Variations Ideas

  • Spice Level – Feel free to adjust the spice level in this salsa recipe. You can add in seeds for the jalapeno or add in about a ¼ teaspoon of red pepper flakes.
  • Corn – We made this recipe with canned corn but you can also use fresh ears of corn. I like to use leftover grilled sweet corn on the cob for added flavor. Fresh corn kernels makes this copycat Chipotle Corn salsa recipe so flavorful.
  • Substitute – Feel free to substitute the fresh lime juice with lemon juice or other citrus flavors.
  • Additions – This salsa can be made with your favorite additions. Add in diced tomatoes, poblano peppers, black beans and bell pepper.

Step by Step Instructions

Step 1 – First, you will need to chop all of your ingredients.

Step 2 – Second, combine all ingredients in a bowl and let marinate in refrigerator for at least 30 minutes. That is all! I told you it was SO easy.

  • Step 3 – Finally, just serve and enjoy.

Recipe Tips

  • Prepare Veggies – You are going to do a lot of chopping so I highly recommend you get this stainless steel chopper. I have one and I love it. It is a life saver when you have a ton of chopping to do. I use mine almost every single day.
  • Lime Juice – I also have a lime juicer and it is nice because it catches the seeds and gets every last bit of juice. Just another little gadget that helps make life easier.
  • Refrigerate – After combining ingredients, make sure to allow the copycat recipe to marinate together for the best flavor.

Serving Suggestions

We love to enjoy this as a snack or with Mexican Monday. Serve with tortilla chips and enjoy. It is also amazing with grilled chicken, salads, burrito bowls or shrimp. I even made it as a Taco Salad Side Dish.

    Sorry for the confusion. It’s a copycat for the restaurant, Chipotle’s, corn salsa.

    Can I ask how this is chipotle, when there is no chipotles or chipotle powder included in the recipe? Or am I missing something? With the Jalapeรฑos in it, it’s just regular corn salsa.
