Copycat Olive Garden Zuppa Toscana Soup Recipe:

Copycat Olive Garden Zuppa Toscana Recipe is so delicious and easy to make. This is our favorite soup to get at Olive Garden so I was happy that I can now make it at home as my family loves this recipe.

There is something so comforting and satisfying about eating a warm bowl of soup. The creaminess of this copycat Olive Garden Zuppa Toscana Soup recipe can’t be beat. It really is a great recipe.

This soup is rich and creamy but not so heavy that you can’t enjoy it year round. The kale helps to lighten it up and make it the perfect soup to enjoy even in the warmer months.

What is Zuppa Toscana?

Zuppa Toscana is the most popular soup at Olive Garden. Zuppa means soup and Toscana means Tuscan. This classic soup is made with kale, potatoes, and italian sausage. The combination of these ingredients make this soup taste so amazing.

We love recreating restaurant style soups. Most of the time they add ingredients that are not necessary. I love to simplify them and they always taste so much better.

We love this recipe. It is so similar to the one at Olive Garden that my kids prefer mine over theirs.

Ingredients needed for Zuppa Toscana Soup - Italian Sausage, Olive Oil, Minced Garlic, Onion, Russet Potatoes, Salt and Pepper, Chicken Broth, Kale, Heavy Whipping Cream, Parmesan Cheese

Ingredients: 

  • Ground Italian Sausage 
  • Olive Oil 
  • Minced Garlic 
  • Onion, chopped
  • Russet Potatoes, peeled and diced
  • Salt 
  • Pepper 
  • Chicken Broth – You can also use Chicken Stock
  • Kale, stems removed and cut into bite size pieces 
  • Heavy Whipping Cream 
  • Shredded Parmesan Cheese (for topping) 

How to make Zuppa Toscana Soup: 

  • Heat the olive oil in a large pot or dutch oven over medium heat.  Then add in the olive oil, ground sausage and onion.  Brown the sausage in the pot and crumble the sausage as it cooked. 
  • Drain off any excess grease from the pan from the cooked sausage. 
  • Then add in the minced garlic and cook for 1 minute until the garlic is fragrant. Make sure the onions and garlic are cooked.
  • Then add in the potatoes, salt, pepper and chicken broth.  
  • Stir occasionally to combine all the ingredients. 
  • Bring the mixture to a boil and then gently boil over medium high heat for 10 to 15 minutes until the potatoes are tender.  
  • Then stir in the heavy whipping cream and chopped kale.  Cook for approximately 5-6 minutes until the kale is slightly wilted. 
  • Serve warm and enjoy! Use a slotted spoon if you want to get just the yummy ingredients.

Variations for Zuppa Toscana Soup:

  • Add Bacon – We like to add small pieces of cooked bacon for even more flavor.
  • Similar to Potato Soup – It reminds me of potato soup but heartier thanks to the sausage. You can even try using hot Italian sausage with crushed red pepper flakes for a little more heat. Most of the time, I will do half hot and half mild sausage.

  • Thicken up the soup – If you like a thicker soup, you can add more potatoes and once they are cooked mash some of them and add it back into the soup. You can also mix about a tablespoon of cornstarch with about two tablespoons of heavy cream and stir it in when you are adding the cream.
  • Use Frozen Potatoes – Don’t want to chop or peel potatoes, you can use frozen potatoes instead

How to store and reheat?

We love leftover soup. In my opinion it is even better the next day. If you store the soup in a sealed container, it can typically last 3-4 days in the refrigerator. To reheat, place soup on the stove top over low heat until heat thoroughly.

I will to put in individual containers so it is an easy lunch for my husband to grab as he walks out the door.

Tips for making the best Zuppa Toscana Soup:

  • Do I have to use Kale? – You definitely do not have to use Kale. Even though kale isn’t everyone’s favorite it is actually delicious in this soup. But if you prefer, you could use fresh spinach instead. I have used spinach before and it turned out just as good.
  • How can I make it healthy? – My rule it is all about moderation when making food choices. If you would prefer to try and cut down on the fat, you can substitute the heavy cream with half and half. The soup won’t be as think and rich, but you it is still enjoyable.
  • Substitute for potatoes – If you prefer you can use chopped cauliflower as a substitute for potatoes.

Can I freeze Zuppa Toscana Soup?

Yes, you can. We do not often have leftovers but when we do, I love to freeze it. We have found that because this soup has dairy it does tend to separate.

So if you plan on making this ahead of time, you can make the soup but don’t add the kale and cream. Just add the kale and cream once you have thawed the soup and it will turn out perfectly.
