Variations Ideas

  • Dairy Free Milk – Feel free to use different types of milk to make this recipe. You can use almond milk, skim milk, or whole milk.
  • Veggies – This recipe is great with added vegetables. You can add in diced green chiles, peppers and onions, garlic, potatoes, or bell peppers.
  • Change Meat – If you prefer to not use Mexican chorizo, you can also substitute it with ground beef or sausage.
  • Cheese – This egg casserole is made with Mexican Cheese but you can also use Monterey Jack cheese, cheddar cheese or pepper jack cheese.
  • Seasoning – Feel free to change the seasoning to what you prefer. You can add in chili powder.

Step by Step Instructions 

  • Preheat the oven to 350 degrees Fahrenheit and spray a 9X13 baking dish with non-stick cooking spray.

Step 1 – Brown the chorizo in a large skillet over medium high heat, breaking it up as it browns.  

Combine ingredients in a bowl and mix in chorizo in a wooden spoon

Step 3 – In a large mixing bowl, whisk together the eggs, milk, taco seasoning, salt and pepper.  Stir in the shredded hash browns and salsa.  Add in chorizo to the egg mixture.

Step 4 – Gently stir in 1 cup of the shredded cheese and pour the egg mixture into the prepared baking dish.

Step 5 – Bake for 35-45 minutes until the center of the casserole is set (no longer jiggly).  Top with the remaining shredded cheese and bake for 5 minutes to melt the cheese on top.  

  • Step 6 – Remove the casserole from the oven.  Let it rest for 10-15 minutes to cool slightly. 
  • Step 7 – Then it’s ready to serve warm and enjoy. 

Recipe Tips

  • Baked Casserole – Cooking time will vary but the casserole will bake in about 40 minutes. Casserole will be done when the top is golden brown.
  • Rest Casserole – Allow the casserole to rest before serving at least 10 minutes. This allows for the mixture to set and serves easily.
  • Prepare Baking Dish – Make sure to spray the casserole dish with cooking spray before placing the egg mixture in.

Instructions
