Ingredients

  • All Purpose Flour – Make sure to measure flour with a meauring cup
  • Granulated Sugar – You can mix together ½ cup of sugar and ½ of light brown sugar for rich flavors
  • Dutch-Processed Cocoa Powder – Gives the bread the best chocolate flavor
  • Baking Soda and Baking powder – See The Best Baking Soda Substitutes if you are out
  • Butter – We used unsalted butter. You can even substitute with vegetable oil
  • Shredded Zucchini – Shred the zucchini with a cheese grater, food processor or box grater
  • Semi-Sweet Chocolate Chips – Use chocolate chips of your choice

Making homemade bread allows you to customize how you prefer. These addition change the flavor and texture of the bread for a delicious variation.

  • Coffee – Add ½ tsp of Instant Coffee or Espresso Powder to intensify the chocolate flavor
  • Chocolate Chips – We used regular chocolate chip in this recipe but you can also use mini chocolate chips. You can even use dairy free chocolate chips if you prefer.
  • Chopped Nuts – Chopped nuts is a great addition to this bread recipe.

How to Make Chocolate Zucchini Bread 

  • Step 1 – Preheat the oven to 350 degrees F and spray a 9 X 5-inch loaf pan with a non-stick cooking spray.

Step 1 – In a medium size bowl, whisk together the flour, cocoa powder, salt, baking soda and baking powder. Set aside. In a separate large bowl, whisk together the large eggs, butter, sugar and vanilla extract. Slowly add flour mixture to the large bowl and stir until just combined.  Be careful not to over mix.

Step 3 – Pour the batter into your greased loaf pan and sprinkle the remaining chocolate chips on top of the batter.

Step 4 – Bake for 50-60 minutes until a toothpick inserted into the middle of the bread comes out clean (try not to insert the toothpick into a melted chocolate chip to check for doneness).  

  • Step 5 – Let cool on a wire rack for 10 minutes. 
  • Step 6 – Carefully remove the bread from the pan and cool for an additional 15 minutes on the wire rack. 
  • Step 7 – Then the bread is ready to slice, serve and enjoy! 

Recipe Tips

  • Prepare Baking Pan – Spray the baking pan with cooking spray before pouring in the batter. We also like to line the baking pan with parchment paper to easily remove the bread from the pan for slicing.
  • Baking the Bread – Baking bread will vary depending on your oven or the size of pan that you are using. When the top looks firm and the toothpick inserted comes out clean, then the bread is done baking.
  • Rest Bread – Allow the bread to cool before slicing, so you get clean slices.
  • Zucchini – Make sure to squeeze out excess moisture after shredding the zucchini.

Why is My Chocolate Zucchini Bread Dry?

The reason that your bread is dry is not measuring the flour correctly, overmixing the batter or overbaking the bread. Make sure to combine the ingredients until the mixed together and watch the cooking time.

Do You Leave the Skin on Zucchini When Making Bread?

I do not peel the zucchini before shredding for this recipe and I shred using a traditional box shredded or cheese grated.

Can I Use Frozen Shredded Zucchini?

You can use pre-shredded frozen zucchini for this recipe.  Make sure to thaw it out completely and bloat it dry before mixing into the batter.   

Storage and Freezing Tips

  • Storing – Store any leftover bread at room temperature in an airtight container for up to 1 week.
  • Freezing – Freeze room temperature bread in a freezer safe container. We like to wrap in plastic wrap then foil and it will stay fresh for up to 3 months. This is the perfect bread to make ahead of time.
  • Thawing – Thaw the bread in the fridge overnight or set out the bread on the counter to thaw when ready to serve.
