Recipe Tips
- Prepare Baking Pan – Spray the baking pan with cooking spray before pouring in the batter. We also like to line the baking pan with parchment paper to easily remove the bread from the pan for slicing.
- Baking the Bread – Baking bread will vary depending on your oven or the size of pan that you are using. When the top looks firm and the toothpick inserted comes out clean, then the bread is done baking.
- Rest Bread – Allow the bread to cool before slicing, so you get clean slices.
- Zucchini – Make sure to squeeze out excess moisture after shredding the zucchini.
Frequently Asked Question
The reason that your bread is dry is not measuring the flour correctly, overmixing the batter or overbaking the bread. Make sure to combine the ingredients until the mixed together and watch the cooking time.
I do not peel the zucchini before shredding for this recipe and I shred using a traditional box shredded or cheese grated.
You can use pre-shredded frozen zucchini for this recipe. Make sure to thaw it out completely and bloat it dry before mixing into the batter.
Storage and Freezing Tips
- Storing – Store any leftover bread at room temperature in an airtight container for up to 1 week.
- Freezing – Freeze room temperature bread in a freezer safe container. We like to wrap in plastic wrap then foil and it will stay fresh for up to 3 months. This is the perfect bread to make ahead of time.
- Thawing – Thaw the bread in the fridge overnight or set out the bread on the counter to thaw when ready to serve.
