The combination of mashed bananas and fresh blueberries makes the bread delicious and the perfect amount of sweetness. This homemade bread bakes with the soft texture and amazing flavor.

This has become my go-to banana bread recipe because it can be served for any occasion. The ingredients are simple and takes minutes to prep.

Ingredients 

Ingredients - Flour, baking soda, baking powder, salt, sugar, butter, bananas, egg, vanilla extract, fresh blueberries
  • All Purpose Flour – You can also use almond flour or whole wheat flour
  • Butter – Use softened unsalted butter
  • Ripe Bananas – We love using ugly brown bananas for the extra sweetness
  • Large Egg – Use room temperature eggs

How to Make Blueberry Banana Bread 

  • Step 1 – Preheat the oven to 350 degrees Fahrenheit. Spray a 9X5 inch loaf pan with a non-stick cooking spray.
  • Step 2 – In a large bowl, whisk together the flour, baking soda, baking powder and salt.  Set aside.

Step 3 – In a small bowl with a stand up mixer or hand held mixer, beat together the butter and sugar until the mixer is light and fluffy.

Step 4 – Add in the eggs, one at a time, until combined. Then mix in the vanilla extract.

Step 5 – Mash up the ripe bananas and add the mashed bananas to the mixture.

Step 6 – Slowly add the flour mixture into the wet ingredients until just combined.  Be careful not to over mix the batter.

Step 7 – Fold the blueberries in 1 tablespoon of flour and then gently stir the blueberries into the batter.

Step 8 – Pour the batter in the prepared loaf pan.  Bake for 50-60 minutes until a toothpick inserted into the center of the bread comes out clean.

  • Step 9 – Let the bread cool in the pan for 10 minutes and then turn the bread out onto a wire rack to cool completely.  
  • Step 10 – Once the bread has cooled, it’s ready to slice, serve and enjoy!  

Expert Tips

  • Blueberries – Before mixing the blueberries into the batter coat with flour. This helps to prevent the blueberries from dropping to the bottom of the pan.
  • Combining Ingredients – Combine the ingredients but try to not to overmix the batter. You can combine the ingredients with a hand mixer or a stand mixer.
  • Loaf Pan – For best results, spray the loaf pan with cooking spray and line with parchment paper. This helps to remove the bread from the pan and makes cleanup a breeze.

  • 1 teaspoon Baking Soda
